Candied Chicken Breasts

Reviewed: Jul. 17, 2008
I was looking for a recipe that used ingredients I already had at home so I didn't have to go to the grocery store. I found this recipe and followed it pretty exact, only left out the pineapple and I cut my chicken breasts in thirds because they were pretty big. I was very pleased with the results. The whole family loved it, even my 6 year old and 1 year old. I will definitely make this again.

Burgundy Pork Tenderloin

Reviewed: Jun. 23, 2008
This was great! I followed the recipe exactly except I omitted the celery. Next time I will add more onion, they were delicious. The pork was tender and the gravy had a great flavor. It didn't say if you cooked it covered so I covered it the first25 minutes and then uncovered for the remainder of the time. A simple, delicious way to cook a pork tenderloin!

Acapulco Chicken

Reviewed: Jun. 19, 2008
This is a great base recipe to add to to suit your tastes. I used canned diced tomatoes because I didn't have any fresh. I also added a can of black beans and a can of corn. I used a half of a cup of chicken broth to give me a little more sauce and let it all simmer for a few minutes. It was great over rice, but even better as quesadillas next day for lunch!

S'mores Crumb Bars

Reviewed: Jun. 17, 2008
I'm not sure what happened but my "crust" never did set so mine couldn't really be considered bars. I followed the directions exactly. They tasted great and filled my craving for S'mores! Next time I will try prebaking the crust before topping with the marshmallows and chocolate chips.

This is fantastic! Make sure you brown the butter like others suggest or it won't be good. I make this all the time and always get compliments.

Not a favorite but I might repeat - it's just that there's so many things to try that I often don't repeat even the ones I really liked.

Corn Casserole I

Reviewed: Nov. 23, 2007
This was probably the best side dish at my family's Thanksgiving Dinner, this year. And I'm not just saying that because I made it. It was moist, full of flavour, and impressed even the toughest of critics in my family! I wouldn't change a thing about the recipe, except that the 1.5 cups of cheese can be more if you like. The jalapenos can be optional, and I found that a black olive or two adds a little bit of colour to this dish. Very easy to make! Very delicious! I plan on making this year after year now!!!

Chicken Enchiladas I

Reviewed: Oct. 31, 2007
I can't give this recipe 5 stars because I didn't do the recipe as written. First I boiled the chicken breasts in seasoned water and shredded the meat. Cubed meat in an enchilada just didn't appeal to me. Then I took the advice of others and omitted the water, used half of the tomato sauce, and used ench sauce. I made these on a weekend and froze them, then Wednesday I thawed them and put them in the oven for an easy dinner. They were really yummy!
