Poppy Seed Chicken

This was such a good comfort food meal for the first cool day in Norther Arkansas. I made exactly as the recipe stated except I substituted bone in chicken thighs and boned and skinned them before sauteing in evoo and s&p. After which I shredded with forks. My picky 5 year old asked for seconds! I served with white rice, steamed green beans and canned biscuits.

Almost No Fat Banana Bread

I made this with my diabetic husband in mind. Splenda sweetened applesauce, splenda instead of sugar, and two bananas. It turned out a little chewy and not as "bready" as I wanted, not sure why, but with some butter and warmed I'm sure it will be fine. I forgot to spray the pan, so it stuck like crazy, but I plan on making another batch tomorrow (have two more bananas to use up), and will maybe add a little more baking powder to see if it rises a little more. Overall, a good recipe if you are watching your weight, fat intake, or sugar. Thanks for posting.

Crunchy Oven Fried Tilapia

I really like this recipe. I heeded the warnings about needing extra seasoning and it was perfect. The coating was a bit dry, but it was all delicious. I'll find some sauce to go over it, but I will definitely make this again!!! Thanks

Hot German Potato Salad III

This was awesome! I wanted to make a potato salad that I didn't have to chill. I followed the recipe as stated with a few shortcuts (pre diced onions and real bacon bits) with the exception of the omitting the sugar and substituting splenda. I will definitly make it again.

Authentic Enchiladas Verdes

These were very good, but lacked the spice or heat needed to make them great. That was partly due to my over discretion. My husband doesn't like overly spicy food, and I scaled the recipe up to 6 servings from 4, but only used 3 serranos. Next time (and there will be a next time) we will use the full amount of serranos. Other than that, these were great! It also gave me the perfect opportunity to visit a supermercado in the area as well as another small market around the corner.

Spicy Bean Salsa

I loved this, as did my hubby and daughter. HOWEVER, it was not a hit with the teens who attended the super bowl party at our house. It IS versatile. I served it heated with cheese over Fritos. Again I added chicken fajita strips and heated. Served with cheese, sour cream, and chips or tortillas. It makes GOBS!

Traditional Reuben Casserole

I made this tonight and it is very good. I messed up the recipe a bit. I used too much bread, but it made it more like a sandwich to be honest. I just sort of made it from memory. Guess my memory isn't that great! I skipped the sour cream and used about a half cup Thousand Island dressing squirted over the casserole. Good...and I'll have it again. Hubby liked it.

Chili Rellenos Casserole

Ultimate Roast Beef Blues Sandwich

Quick and easy. I found the basil a little overpowering for my taste. I put the rolls in the oven opened with pecans on one side and bleu cheese on other. Let the pecans gets toasty and the cheese melty. Added warmed roast beef slices and mayonnaise with basil. Good for a week night meal.

Italian Spaghetti Sauce with Meatballs

I was so disappointed because I wasn't able to make the meatballs! My daughter put the meat in the freezer! I didn't have time to thaw for meatballs. SO...I made a meat sauce with all the ingredients except the bread and egg. I had to throw in bunches more seasonings as we love our spaghetti with gobs of flavor. That was my only complaint with this recipe!

Shrimp and Avocado Cocktail

This is a family favorite but I don't use the cocktail sauce. I use tomato juice with chopped tomatoes, minced jalapeno peppers, and diced red onion, celery, and bell pepper. Sort of like a cocktail!

Was excellent, first ever cheesecake I made, too. I didn't let it sit in the oven for the suggested cooling time, just an hour and then to the fridge, turned out perfect. Will definitely make again.

Best Big, Fat, Chewy Chocolate Chip Cookie

Turned out amazingly well, and were well received by everyone who tried them. I used milk-chocolate chips instead, as I prefer them. Also, this recipe seems to make waaaaay more than expected, but these cookies are so awesome that's perfectly ok.

Cranberry Orange Oatmeal Cookies

My new favourite cookie! The dough was hard to mix near the end, it's very thick, but the cookies came out so dense and chewy, and really perfectly flavoured. On the second batch I skipped the orange zest and just used maybe an extra half-tsp of orange extract, they were equally delicious. Definitely recommended for anyone who likes cranberries. Was very well received by everyone.

Holiday Peppermint Bark

Super-excellent, just what I wanted. I used a double-boiler as I was afraid of making my chocolate dry or waxy, and I didn't add any decorative pieces to the top as I like very finely crushed peppermint, and I used about a teaspoon of mint extract per bag of chips. The candy canes were pretty hard to crush, they kept shredding through even my toughest ziplock bags, I ended up putting the broken down pieces in a clean dishcloth and going to town with a soup can. Worked out pretty well, and no powder leaked out noticeably.
