Chewy Peanut Butter Brownies

Great recipe!! I followed the advice of another user and I didn't beat the ingredients with a mixer at all. In fact I only used one bowl--mixed the PB and butter then added the sugars, followed by the eggs and vanilla (used 1 tbl), then the dry ingredients. I used a cupcake pan and made 12 cupcakes at 325 for about 20 min. Thanks for submitting!

Hot Fruit Salad

Holiday Chicken Salad

I made this for tailgating with my parents. My dad was shocked at how great it was. He said it was the best chicken salad he had ever had! I omitted the green belle pepper, added a green apple and I used Duke's mayo. I also seasoned my chicken before I baked it with garlic powder, black pepper and salt. It was great.

Chicken Cordon Bleu I

I made this last night and my boyfriend said it was the best meal he's had in a long time. I made the honey mustard from the Aussie Chicken recipe that's on this site. I drizzled it over the top of the chicken and also served some on the side. I prepared it ahead of time and when I got done with classes all I had to do was pop it in the oven. So easy and absolutely delicious!

No Bake Cookies V

These are really yummy. My mom normally brings me these cookies when she visits me at college from a local amish lady, but these cookies are so much butter. I added a little more vanilla to mine (but I love vanilla) and I only used smooth peanut butter, I don't think peanuts would be very good with these. Along with a glass of milk, these cookies are a great end to a long day=)

Broiled Tilapia Parmesan

I actually give it 4.5 stars. I added a bit more onion powder, some garlic powder, and Old Bay Seasoning. I had to bake the fish a little longer because I think I added a little too much topping and it took a little longer to brown. I also topped off with a little more parmesan. Otherwise, my husband and I loved it. He loved it so much that I ended up buying a bulk package of frozen tilapia so we can enjoy it again and again :) I served it with some white rice with basil and garlic and blanched broccoli with freshly ground black pepper. Very tasty!

Seafood Lasagna II

Have made this before with the addition of 1.5 lb of bay scallops. And I use ricotta instead of cottage cheese. I omitted the white wine (in recovery) and it didn't affect anything. This is a very tasty meal that I tied together with Neptune Salad and fresh garlic bread. I got raves and requests to make it again-so I'm making it to go with Thanksgiving dinner this year.

Grilled Salmon II

I love this recipe! I am not a big salmon eater, but I love this. I make it for my family once a week now. My son even likes it! I don't usually have green onions, so I substitute white onion for it and it works great! The longer it gets to marinate, the better! My fave is to marinate it overnight. Thanks for a great recipe!

Sweet Restaurant Slaw

The best way to get your kids to eat cabbage! The prefect amount of sweetness...my daughter's fav "salad"! We have never made it with poppy seeds and just as good! Also...we hardly ever wait 2 hours....let alone 20 minutes to eat. We toss the slaw with the dressing and it usually goes straight to the table. Just as good as the leftovers the next day. Thanks for the recipe! this is the only one I use now!

Ultimate Twice Baked Potatoes

I cooked this for my boyfriend and I and it was very delicious. I rolled the potatoes in oil and sprinkled with salt before I baked them and I also added about 4oz of softened cream cheese to my filling. It turned out great. The only thing I would change is possibly adding a little less milk.=)

Green Goddess Salad Dressing

Green Goddess was my mother's favorite salad dressing, and she got me hooked on it. After I could no longer find it in grocery stores, I thought that wonderful dressing was gone forever. I have been delighted with this dressing every time I've made it. It brings back wonderful memories of my mother, good times, and family dinners. My friends have enjoyed this dressing and when I don't make it, they ask me where it is in the selection of dressings at my house. This is most definitely worth the 5 stars I give it!

Butternut Squash Soup

I give this 5 stars, but only with how I tweaked it. To make it less labor intensive, I microwaved the squash (after piercing it with a fork) for 10 minutes, turning every couple of minutes. This softened the skin to make it easier to use a knife to peel off the skin. I could have halved it, microwaved it longer, and scooped out the insides instead since this is how I "roast" butternut squash, but I didn't think about that until I was halfway done with cutting it in chunks. I used one whole small onion and 4 small cloves of garlic (my husband loves garlic and onion), sauteed them and then I added a dash or two of each (ground): sage, ginger, nutmeg, coriander, celery seed, and cloves. Then followed the rest of the recipe. I also used only 1 package of Neufchatel. Mine turned out creamier than any other butternut squash soup I've ever tasted. I never understood why people blame the texture of their creations on the lack of fat in neufchatel since its essentially the same as full fat cream cheese. I've never had that problem (even with my award-winning cheesecake). If you want a thicker soup, reserve about a cup of the cooking liquid while you're pureeing the chunks of squash with the cream cheese. That way, you can judge how thick its going to turn out. I ended up pureeing and adding the rest of the liquid in the end. If it didn't turn out creamy enough, you need to either cook the squash longer or puree it longer. This would make a great sauce on cheese raviol
