Zucchini Yogurt Multigrain Muffins

These muffins are fantastic! I made two changes: instead of 2/3 cup of honey I used 1/3 cup, and instead of 1 cup of sugar I added only 2/3 cup. You don't need all that sugar--they were perfectly sweet without it. In fact, next time I think I'll try adding some sweetened applesauce and reducing the amount of table sugar even more.

Broccoli Cheese Soup V

I'm not a big fan of velveta, so I used 1lb cubed velveta and 2 1/2 cups shredded cheddar (both 2% milk brand). I also added approx 2 tsp minced garlic to my fried chopped onion. (garlic will burn, so add after the onion has cooked for a couple of mins) I also added 4 large potatoes (cubed and with skin on)to the broccoli to cook in chicken broth until fork tender. We like our food alitte spicy, so I added some cajun seasoning and a few hot pepper flakes. Excellent recipe,I didn't miss the extra fat at all- do you really need it with all that butter? Serve with some hot rolls and you got supper!

This was a great recipe! Only thing I would recommend is a little less melted butter, but other than that it was wonderful!
