Banana Frittata

I thought this was going to be weird, but it turned out very yummy! I used vanilla soy milk and egg substitute and skipped the oil and butter to make it a little healthier. I sprinkled some chopped pecans over it and drizzled with some light syrup... yum! Even my fiancé loved it! And the best part--it was SO easy! I will make this again and again!

Coffee Praline Muffins

Very easy to make. I liked the coffee flavor and actually could have done with a bit more. I substituted vanilla soy milk for the milk and it added a nice touch of sweetness. Next time I think I will add a little more vanilla soy milk and some cinnamon for more moisture and an extra flavor kick, but I will be making them again.

Thai Hot and Sour Soup

I have used this same recipe for two years now and it is the best. I have not used basil or coriander with it though but I will try it next time. Refreshing with the lemongrass and sinfully spicy. Great recipe!

Ashley's Chocolate Chip Cookies

I made these for the holiday celebration at work and they received rave reviews! I added chocolate covered dried cherries in place of the second cup of chocolate chips, and that gave them a nice touch of chewy tartness.
