Thai Chicken Balls

I made these for Superbowl dinner yesterday, and they were soooooo good! I didn't have some of the seasonings so I used Bangkok Blend from Penzey's Spices and it was perfect! My super-picky family liked them too!

Salmon Fillets with Creamy Dill

I wasn't sure I would like this because -- holy cow, that's a lot of mayo! But I needed a quick recipe for salmon with dill, and made this to the recipe. It was really good and my super-picky family loved it! I will make it again!

Paul's Pumpkin Bars

Thankfully, I read the reviews prior to making this, so I changed the recipe to make more moist, dense bars. I used (2) 15 oz. cans of packed pumpkin, half the amount of baking soda and baking powder, and added 1 1/2 tsp. pumpkin pie spice. So far, everyone LOVES them. My neighbors are practically drooling over them. Lol.

This recipe has become a family favorite in my household. I've been using it for a couple years, and have changed the recipe at times, but always come back to the original. I love these cookies! I hadn't had them since I was a kid until I found this recipe. This recipe makes a huge batch! I must have a smaller iron than Ed because I ended up with 100 cookies the size of CDs.

Apricot Barbecued Chicken

I am leaving this rating only b/c I tried something different and wished I had kept to the original recipe as stated. I was trying to find a substitute for apricot chicken (apricot preserves and russian dressing) so I didn't have to go to the store. So, I prepared it as I would the other way - just mix everything together, cover and bake. Since the chicken was raw when it went in, it didn't absorb the marinade and came out bland. But, as I was mixing it smelled awesome so I want to try again actually reading the directions.. :)

Cheesy Tuna Mornay

One of the best tuna casserole dishes! My husband who doesn't like tuna casserole actually ate it! I did add salt, pepper, cayenne, and garlic powder as suggested by another reviewer. Excellent!

Spicy Turkey Burgers

This has to be one of the most flavorful (I wouldn't say spicy) turkey burgers I have ever made. Only flaw is they fall apart easily so I am going to have to work on that with bread crumbs or more yogurt or something. But they were great the ones that stayed together and the ones that crumbled turned into a topper for salad the next day! Thanks for the recipe! EXCELLENT!

Final Exam Brownies

I give it only three stars because it was too chocolately for me. In fact they were so chocolately no one ate them so I ended up throwing most of them out. I over cooked them which didn't help. I will try them again though and see if they are better a 2nd time around, but I will not use the 1 cup of choclate chips on the top. I think the marshmellows, nuts and chocolate chips inside is enough.

Hash Brown Quiche

Super Easy! A nice dish if you don't have a ton of eggs on hand. I also didn't have the shredded so I used the hash browns that are diced. I had to cook it initially about 10 minutes longer but it came out great! Even the kids ate it! Thanks for sharing!

Candied Garlic Chicken Wings

Good starter recipe, but needs some changes to be 4 or 5 star. I added 1/2 tsp. of ground ginger and 1/2 tsp. crushed red pepper flakes. I would not make these again without adding the red pepper. I will add more next time. Also, I would recommend using really meaty wings, as my small-normal sized wings shrunk significantly and nearly dried out, even after reducing the baking time by 10 minutes. I served the wings on plain white rice and tossed some steamed broccoli in the remaining sauce for a tasty, Asian-inspired meal. Hubby enjoyed it as well.

Baked French Fries I

Chocolate Cookie Cheesecake

Wow! What a great dessert! This is one of the most delicious, rich, and decadent desserts I have ever eaten!!! That said, next time I will NOT add the cinnamon. I only used half the amount the recipe called for, but it still was too obvious and clashed with the flavors of the cheesecake. Also, when adding the sour cream mixture to the top of the cheesecake, be careful not to pour it directly into the center, as I did. This results in a big gob of sour cream mixture sinking into the cheesecake. Despite this, it still turned out magnificent. The chocolate top layer covers up any imperfections, and it truly is bakery/restaurant quality.

Beer Spuds

Wow! This recipe was awesome! I was looking for something new to cook on my grill and found this recipe. I, too, cut the recipe in half and I used Cajun seasoning for the salt-free spicy seasoning. My husband, who really isn't a pepper fan, really loved it and had three helpings! I used mostly red, yellow and orange peppers with just a little green pepper for color. We had enough leftovers (for the 2 of us) for dinner tonight! I just betcha this would be tasty with smoked sausage or Keilbasa cooked in it, too! Yum! Yum! Thanks for the recipe. I'll definately be making this again!

Baby Carrots with Dill Butter

I thought these were a great side dish. I used 1/2 tbsp. of dried dill, since I didn't have fresh. I used a fresh lemon, as the recipe calls for, and I did not find the lemon flavor overpowering as others have. I thought it was just right. Also, I steamed rather than boiled them for 8-10 minutes to retain flavor and nutrients.
