Cha Cha's White Chicken Chili

Reviewed: Sep. 2, 2008
Good and spicy! I only used one can of beans because it was all I had and I thought it was perfect. Three cans might be too much beans for our family. I forgot to add the cheese at the end and just added a dollop of sour cream to everyone's bowls! It was a great fall chili. thanks!

Barbecue Ribs

Reviewed: Aug. 16, 2008
This is the Holy Grail of barbecue recipes! I did boil the ribs for 29 minutes, then bake for an hour at 350 instead of grilling because I didn't have access to a grill at the moment. It was superb! There are no leftovers, and even my husband who hates pork ate these up! This will definitely be my "go-to" recipe for ribs!

Waffles I

Reviewed: Aug. 16, 2008
This recipe is perfect! Waffles come out fluffy inside, crispy outside, and completely delicious. This waffle has fewer calories than some other recipes, which is why I tried it, and I'm pleased that it has all the flavor of classic waffles. It's definitely not diet food, but it's about 200 calories less than other recipes I've tried, and is within the calorie range that won't throw my diet completely off if I cut back with other meals throughout the day. I did "healthy it up" a bit by using applesauce instead of oil, and it worked well, although waffles weren't as crispy. Thanks for posting this recipe! My family begs me to make these waffles every day!

Cajun Chicken Lasagna

Awesome! Not the healthiest recipe but oh so good! I did also the make your alfredo - it took about 10 minutes for everything to melt without burning so I made a note for next time to start that earlier. Will try reducing the amount of butter in that recipe too next time. Just as good as leftovers! Thanks for sharing your recipe!

Strawberry Coffee Cake

Reviewed: Aug. 4, 2008
This was a great easy way to use up a bunch of strawberries that I had. Could be served warm for a breakfast treat or warm it up again and add some ice cream for a quick dessert! Very yummy. I did make a few small changes based on some of the reviews. I just omitted the butter in the batter and doubled the batter to have it fit in a 9x13 pan. I didn't measure the strawberries I just put a layer on the top. I also added 1t of almond extract to the batter before baking it and it turned out moist and yummy!

Whole Wheat Zucchini Bread

Reviewed: Aug. 4, 2008
Just for you people (like myself) who don't always read through the whole recipe before you start baking away - this requires a pot that can hold a minimum of 12 cups (between the flour, honey, sugar, eggs and zucchini). I ended up with a bunch of bowls that wouldn't fit the entire thing to the end. Since you are baking 3 loaves at once it gets hard to stir in the end so I used yet another bowl and threw it in my Kitchenaid. Maybe I am a weakling but then again that's what I bought that. So, can't say it never gets used :) The bread was done probably around 40-45 minutes, but I didn't take it out til the timer said at 50 - so note for next time. Also - even though there is honey and brown sugar this isn't a sweet bread. It's good just not sweet. So if you want some more sweetness in it I would replace it with regular sugar.

Best Big, Fat, Chewy Chocolate Chip Cookie

This isn't my typical cookie recipe. But I was feeling adventurous and wanted to try something different. This cookie was just that! I loved the texture of the dough and the fact that it is the best, big, fat, chewy chocolate chip cookie! I think I may have found a new recipe. Thanks for sharing!!!

Delicous! My family loved it. I added a little tiny amount of garlic and onion (as I had cut up both for a chicken recipe) and more cheese.

Mom's Macaroni and Cheese

This is the best recipe I have found yet. I did take some of the readers advice and modified it a bit. I changed up'd some of the quantities to 2 c of noodles, 2 c of shredded cheddar, 1 t of salt and 1/2 t of pepper and 1 t of ground mustard. It was excellent! Thanks!

Chicken Cordon Bleu II

I have always wanted to make this. Other recipes seemed difficult to follow but this one was easy and the results were even better. My family thought they were eating something truly gourmet when I served this up with Rice Pilaf and Green Beans. The only problem was there were no leftovers! I didn't change a thing about this recipe. It truly deserves 5 stars!

Twice-Cooked Coconut Shrimp

Reviewed: Jul. 14, 2008
The shrimp was great - but the sauce was too strong for the shrimp. I am not sure if it was the orange marmalade or what but it was bitter and had a bad after taste. Just my opinion - I wanted something sweeter to compliment the light coconut taste. So I redid it and replaced with apricot jam, omitted the hot sauce, and reduced the dijon mustard in half and it was much better.

Bird's Nest Egg Salad

Reviewed: Jul. 5, 2008
I was looking for a good egg salad recipe. I didn't do the noodle part, but the egg salad was great. I didn't add the celery because I didn't have any and added about a 1/2t of paprika and an extra 2t of mayo. Very yummy!

Lavender Chicken

Reviewed: Jul. 5, 2008
Great stuff. I have two lavender plants (one silver frost lavender and one munstead lavender) and I was trying to figure out what to use them with. I tried this recipe with the Munstead lavender. Having great respect for the power of herbs, I only used two sprigs per chicken part. Thank you for such an easy but tasty recipe :o)
