Brazilian Chicken with Coconut Milk

okay. When I came across this recipe, my eyes lit up with excitement. I love all the ingredients, and would even nominate myself to be president of the coconut milk fan club. That being said, when I made it, I was really disappointed! It IS incredibly spicy, which I find to be a positive, but something was just off. I used canned tomatoes, reserving the liquid just in case, and when it came time to serve, I did add some of the tomato juice for a little more tomato-ey flavor. That could have been this dishes ( and my ) downfall. I will still give it three stars for the recipe itself as I think its fabulous!

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

perfect! I made this for Valentine's Day with a simple grilled salmon over cous cous and it was awesome! I ended up having lots of leftover ingredients for this so I made it the next two nights! Its like healthy comfort food. Im completely addicted.

Soft Garlic Breadsticks

These were very good. While the bread sticks were still hot, I brushed them with butter, the sprinkled very lightly with finely ground sea salt and powdered garlic. I served them with Chicken & Gnocchi soup and a Ceasar salad. A great compliment to my soup!

Pineapple Upside-Down Cake V

Great recipe. My dad always request this for special occasions. I add extra coconut and chopped cherries on the bottom layer. (I also add about 1/2 cup of coconut in with the cake batter.) This is really a tasty and pretty cake!

Mocha Chocolate Cookies

Great cookies. I added a little extra coffee and about 1/4 cup extra flour. The cookies were crispy on the edges and chewy in the middle. Perfect!!!!

Bacon Chicken II

I grilled the chicken (basting with bbg sauce while cooking)and when the chicken was almost done, then I placed the bacon across the chicken(which I had already cooked till almost crispy, precooked bacon works well too.)Brushed on a little more bbq sauce. You can secure the bacon with toothpicks. Grill a few more minutes. This gives the bacon a nice smoke flavor. Garlic mashed potatoes is a great side.

Spinach and Cheese Stuffed Pasta Shells

I chose this recipe because it recieved 4 stars out of 43 reviews. I was suprised how it turned out. I think it was allright. It wasn't the greatest meal I have made. I have had better. I would not make this recipe again without changing it. I think I would put in sausage that was precooked in olive oil. The fennel seemed to taste "off" with the meat missing. This also adds the right amount of fat needed for a certain flavor, that I felt was missing. I also think adding mozzerella would help.

Orange Curried Chicken

I make something similar. Only I add a small bottle of bbq sauce & 1 tsp. minced garlic, along with the orange marmalade.(I omit the curry) I also cook the chicken and the sauce in the slow cooker for 6 hrs. Serve over rice.

Chicken Rotini Stovetop Casserole
