Best Brownies

What a great, basic brownie recipe! I made the batter as written, beating my eggs before adding to the rest of the ingredients and mixing everything by hand. I added a layer of chocolate chips & chopped walnuts on top and baked in a 9x9 pan for 23 minutes. I can't wait to use this base recipe to experiment with different frostings/toppings/layers/candy additions!

Jalapeno Popper Spread

This dip was a breeze to throw together and tasted fine. I used 2 diced jalapenos, mixed in some cheddar cheese, baked until heated thru and served with Fritos Scoops.

Creamy Peanut Butter Fudge

Excellent! I followed the recipe exactly and it turned out perfect. A lot of reviews give tips on fudge making. It's just not necessary with this one. When it comes to a full rolling boil, start timing for seven minutes. Stir the whole time. Before you know it, you will have the most delicious, creamy, and wonderful peanut butter fudge ever. Don't try to be a hero, just keep it simple and follow the directions. If you want to be a superstar, try making fudge without the marshmallow cream. That's where we separate the girls from the women. (I'm still a girl, by the way!)

Chicken Cordon Bleu II

I needed to use up some left over Christmas ham and this was an excellent option. I didnt have swiss cheese, so substituted cheddar. I pan fried it in an oven safe pan, added the wine/stock mixture, then as my biscuits baked at 350*F for 20 minutes, I finished cooking the chicken as well. They were pounded out fairly thin, so that amount of time worked well. I just finished off the cream sauce on the stove. Family loved it- very rich, but a great overall recipe!

Easter Meat Pie

This is a very authentic recipe. For those that say it's missing something- the only thing it's missing from my Italian Grandma's recipe is sliced hard boiled eggs. Otherwise, it's the same ingredients that are called for to make an Easter Pie(or what we've always called Pastiche) Thanks for sharing this recipe- it's a wonderful Easter tradition that brings back great memories of family on Easter Sunday.

Spinach and Potato Frittata

This was great. I threw a small, diced onion in with the potatoes, omitted the green onions and used 8 eggs instead of 6. Easy to put together and tasted great - make sure you remember to season with salt & pepper!

Blueberry Pinwheels

These were really good! I made some substitutions based on what I had on hand: 12oz evaporated milk minus 4T, bread flour, orange zest, frozen blueberries and cream cheese frosting. I made these as directed, but after cutting (with dental floss), I put the 12 pinwheels into glass baking dishes and stored them in the fridge overnight. The next morning, I pulled them out of the fridge as I was preheating the oven and baked at 375 for 23 minutes. They were a great alternative to cinnamon rolls and will be a Christmas morning tradition in our house from now on! A word of advice: make sure you roll this up super tight or else your pinwheels will be loose.
