Wake-Up Casserole

Absolutely 5-star recipe just the way it is, or make using the ingredients I had on hand: Flat tater-tot rounds (in place of the hashbrown patties) - prebaked in the oven for 5 minutes while I browned, crumbled & drained 1 pound breakfast sausage (substituted for the ham). I think Eggland's Best does have the best eggs and I splurged and used whole milk to give it extra richness and flavor.

Mariu's Spaghetti with Meat Sauce

We vacationed in Italy this summer, and had meat sauce that was wonderful and very different from the typical American version; much more meaty with tomato used more as a seasoning. This recipe fulfilled my hopes of being much more like a true Italian meat sauce. It was outstanding and my family loved it! Even my 2 pickiest kiddos who have flatly refused to eat spaghetti in the past gobbled it up. I doubled the recipe, seasoned the meat with some Emeril's essence, added more garlic than called for. Also added a can of tomato sauce in place of one of the cans of beef broth(3 cans beef broth, 1 can tomato sauce). This is our new spaghetti recipe; we absolutely love it! If you like a meaty sauce, you should definitely try this one.

Ginger Glazed Mahi Mahi

Really great recipe, but a tad heavy on the soy sauce/salt flavor. When I made it a second time, I reduced the soy sauce and the balsamic vinegar, but kept everything else relatively the same. It turned out AMAZING. I definitely recommend this. The only reason I don't give it five stars is because I'm not a huge seafood fan and I had to make alterations to the original recipe.

The Really Good Salad Recipe with Pieces of Fruit

A great summer salad - very light and refreshing. Even though I've made the almond/sugar pieces before this time I had some pre-made sugar coated pecans and used those. Any fruit you like can go into this salad. Loved the dried cranberries and added more of those.

Baked Parmesan-Crusted Chicken

This is one of my favorite recipes to use with chicken breast. It's very easy but tastes wonderful. I took the advice of some of the other reviews and added more parmesan cheese and bit more spices than what the recipe called for. This added much more flavor. To help keep chicken moist I poured the extra butter around the edges...all and all a wonderful, easy dish. My boyfriend, the picky eater, loves it!

Greek Pasta Salad I

This salad was well received at a recent birthday dinner I prepared it for to compliment grilled burgers & fresh fruit salad. It made a very colorful presentation and was a fresh and healthy alternative to pasta salad with a mayonnaise dressing. I used a pasta with added fiber and added some blanched broccoli for additional color, texture and flavor, but otherwise followed the recipe exactly.

Slow Cooker Cranberry Pork

This was very good and I made it exactly as the recipe stated. I cooked it on low for 8 hours then removed the meat to a serving plate & covered with foil while I thickened the sauce with cornstarch. I used a 3.5 pound pork loin and although tender, I thought the meat was dry. The flavor was delicious, so I am blaming it on the pig, not the recipe or the chef (me)! The presentation was beautiful and I served it with mashed fresh sweet potatoes and broccoli for a special welcome home supper for my oldest daughter.

Easy White Chicken Enchiladas

This is a great easy recipe. I made it for my family and they loved it. I teach a cooking class for a group of youth at my church and they loved it also and have made it for their families. I used roasted chicken from the store and went exactly by the recipe the first time. I will try different versions next time also.

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

Six ingredients: open, pour, stir & 4 hours later supper's ready. Tasted gourmet with a thick & hearty sauce we served over brown rice instead of buttered noodles. My daughter made this and served to our family. We all loved it!

Shrimp and Feta Cheese Pasta

I made this for my family last night and it was delish! We all loved it, except for my son whose not a seafood fan. I added 1/2 lb. baby scallops and only used 8 oz. pasta. I used 1 cup of wine, about 1/4 cup half n' half added at the last minute and I topped with fresh basil. Served with salad & Bruschetta I recipe on french bread rounds. Yummy! Will make this again.

Peach Cobbler Dump Cake II

I made this last evening for my family using fresh Georgia free-stone peaches I purchased while on holiday in Atlanta earlier in the week. I left the pealing on for extra flavor and fiber. I didn't have any peach gelatin, so I used what I had which was raspberry. It enhanced the flavor of the peaches and gave the dish a lovely color!

Chrissy's Sweet 'n' Sour Tomato Salad

Used fresh garden tomatoes along with a few yellow and red cherry tomatoes too. Also added chopped cilantro, minced garlic and about 1/2 cup of an english cucumber. Be sure to leave at room temperature. A great summertime recipe to use up all those 'maters!
