Easy Meatloaf

This is the classic "Mom" recipe! I used ground Turkey alternative and my husband didn't know the difference. It was great and way less fat.

Simple Beef Flavored Gravy

Amazingly simple - great little quickly recipe! I usually make a roux and do this in order, but you don't have to. Just throw it all in and use a whisk until its thick and smooth.

Sweet Potato Bread I

Per other reviewers' suggestions, I reduced the sugar some (and used half brown) and used applesauce instead of oil. I also added 1/2 t. allspice. A winner! It makes great muffins by the way.

Country Apple Dumplings

Okay, I was VERY skeptical that this could possibly be good, but had to try it because of all the great reviews. It was incredibly easy to put together(took about 5 minutes) and it was absolutely delicious!! My family raved about how good it was! This will be a regular last minute dessert at our house from now on. I think I will sprinkle it with chopped pecans next time for a little crunch.

Pumpkin Cookies V

This recipe is worthy of 5 stars with the following changes: The icing made them too messy, so I left it off. I added 1 cup of dried cranberries to the batter for color, texture and nutrition. Before baking, I topped each cookie with a sprinkle of coarse granulated sugar (decorator style) and a pecan half. I also baked them a few minutes longer than the recipe stated. Now they are 5-star quality.

Easy Homestyle Green Beans

This is how I've made green beans for years; I learned it from my mother-in-law. They are delicious and always the first thing on the table to go. It is key with canned green beans to drain and rinse them well to get rid of that canned taste. I just add about a can of water to make up for the lost liquid.

Roast Chicken with Rosemary

I have to give this five stars because it provided the inspiration for one of the best meals I have ever made. I washed the chicken and dried it well(a necessity to get that wonderful crispy skin), salted and peppered the cavity and the chicken very liberally, stuffed the cavity with a lemon cut in half and a generous amount of garlic in addition to the onion and rosemary. I mixed some minced rosemary and garlic with softened butter and rubbed it underneath the chicken skin. I tossed some cut up red skin potatoes, baby carrots and quartered onions with olive oil, garlic and minced rosemary and put it all around the chicken. I cooked it at 400 for about an hour and 45 minutes(5 lb chicken) and it was sooooo delicious. Everyone in my family loved it and they are all begging me to make it again soon. The chicken was flavorful, juicy and delicious and the veggies were perfectly cooked and incredibly yummy as well. This is the perfect meal for a fall evening; I'll be making it often!

Tasty Buns

These are very good-tasting and good-textured buns--perfect for homemade sandwich buns. I only gave the recipe 4 stars because I had to mix in quite a bit of extra flour (1-2 cups) just to get the dough dry enough to handle. It was too sticky to shape or hold a shape when I followed the recipe as written.

Bananas 'N' Cream Bundt Cake

I thought this was very similar to banana bread and added a cream cheese glaze(3 oz cream cheese, 3 T butter, 3 T milk, 1 tsp vanilla and 2 cups powdered sugar) to make it more dessert-like. My family absolutely loved it; it disappeared in one night. I liked it too, but it's really not sweet enough on without the glaze to be considered a cake. I'll definitely be making this again.

Great Pumpkin Dessert

I love this recipe! Making this is one of our fall traditions; it's so easy my 8 year old can whip it up while I make dinner. I use pecans instead of walnuts. Really delicious with a scoop of cinnamon or vanilla bean ice cream or even with whipped cream. It's making me crave it just writing this! Yum!

I made this exactly as stated in the recipe, except I used homemade meat sauce leftover from spaghetti 2 days ago. The result: stunning! Let it rest (cool) in the pan about 20 minutes before serving and it will cut nicely into squares for an attractive presentation.

Streusel Topped Blueberry Muffins

Was looking for a recipe for blueberry almond muffins and when I couldn't find one, decided to adapt this one. It worked out great; just subbed almond extract for the vanilla and left the cinnamon out of the topping, adding sliced almonds instead. The muffins were delicious; the almond and lemon flavors really compliment each other, and the muffin itself was moist, just sweet enough and delicious!

Creamy Chicken and Wild Rice Soup

Made this on a cold rainy Saturday and it was delicious. I also added diced onions, carrot, celery, mushrooms and garlic. I used half and half instead of cream and added one chicken bouillon cube for each cup of water. I also doubled the recipe. Everyone loved it and the leftovers were yummy too. This is definitely a keeper; the best cream soup I've ever made and just as good (or better) than you'd get in a restaurant.

Taco Salad III

We loved this recipe! Didn't have avocado, so we added black beans to the meat as it was cooking - provided additional nutrition, fiber, color, texture and flavor. I put everything in bowls like a salad bar and let our family make their own salads. We will make this again and again. Thanks Melanie.

Best Big, Fat, Chewy Chocolate Chip Cookie

Not chewy, but full of flavor. Mine turned out mour crispy/chunky. I used 3 different kinds of chocolate chips: milk, semi-sweet & special dark. I also added broken pecan pieces. Taking them tomorrow to a bake sale to benefit the American Heart Association. With all that butter, should be good for job security for the cardiologists, but what a way to clog those arteries! Yum!!!

Mexican Chicken Corn Chowder

Pretty darn good on a cool rainy evening. I always use soup as an opportunity to infuse more vegetables into my family's diet, so I added diced carrots & potatoes. Instead of using green chilies and diced tomato, I used a can of Rotel which had them both already combined. Fat free half and half makes this soup more healthy and low fat cheese reduces the fat grams even more. I used a combination of creamed corn and whole kernel corn for more texture. Reheats very well and is even more delicious the second or third day!
