Beginning as a rowdy town of taverns, smithies, and sawmills supplying riverboats and homesteaders heading West, Knoxville survived the Civil War and the Great Depression. Founded in 1792 at the headwaters of the Tennessee River, and now all grown up, the city is a jumping-off point for campers, fishermen and tourists visiting Great Smoky Mountain National Park, Cherokee National Forest, and various “Great Lakes of the South.” It’s also famous for author James Agee, pink marble quarries, the University of Tennessee, Oak Ridge Laboratories, Tennessee Valley Authority (TVA), and the Women’s Basketball Hall of Fame. It’s where Mountain Dew was first sipped and Bush’s Baked Beans first baked. Knoxville cooks honor its Southern locale with classics such as fried chicken, hushpuppies, grits and gravy. Over 1000 restaurants, roadhouses, grills, delis, drive-ins, family cafes, chains, brewpubs, and pizza joints dish up food daily. From fine dining menus, barbecue, freshwater fish; Italian, French bistro or Mexican fare; to hawg back potatoes, burgers, steaks, and Petro’s Chili & Chips, the menu is almost unlimited.

Ground Beef Stroganoff

This recipe is similar to a standard I've eaten since my childhood, and even served to guests on special occasions in my own home. I have never added mayonnaise, and I add the sour cream at the end, just warming it to the same temperature as the stroganoff, but not to a boil. I add 2 cans of cream of mushroom soup early on as soon as the meat has been drained. If you want to add a splash of gourmet, pour in 1/2 cup of white wine. Bon Appetite!

Pumpkin Pancakes with Nutmeg Whipped Cream

These were wonderful! I made them Thanksgiving morning and they were a big hit. Everyone in the house liked them even the picky ones. I didn't make the cream topping, I am looking foward to trying it the next time I make these.

Honey Garlic BBQ Sauce II

To cut calories, I omitted the butter. I also used less water so I didn't need any cornstarch to thicken. I tweaked it with a little onion powder, but something just wasn't quite right. Then I added some liquid smoke and it was perfect! I most certainly will be making this again!
