Home-Fried Potatoes

Finally the perfect fried potatoes. I have been trying to make fried "taters" and they always either come out too mushy, or not done enough. I was scanning through recipes and came across this one where you boiled the potatoes a little bit first before frying. I tried it and it worked perfectly. Have done it several times and they came out perfect every time!! I used regular potatoes and fried with a little onion..served with pinto beans and corn bread Thank you!

Ok, I don't want to rate this yet becuase evidently it is me that is the problem, not the recipe. I tried making these twice..folling the directions exactly and being careful not to over mix. The second time I tried baking at 450 for 15 min and then 350 for 15 min...each time the same thing happens. They fall in the middle and they are heavy like a paperweight. Someone please let me know what I am doing wrong.

Chicken Kabobs Mexicana

Five stars all the way from this house! Even my son who "hates everything" said this recipe was "awesome"!! The only things I changed was I added some garlic powder to the marinade as previously suggested and I not only marinated and grilled chicken breast cubes but beef cubes as well. It was wonderful!! I served with mexican rice hot tortillas and salsa on the side. I cannot rave about this recipe enough and you can be assured it will be a part of my summer bbq recipe collection! Thank you

Mom's Chicken Cacciatore

The Ultimate Pasta Salad

I am not going to rate this because it is my own. I added a few "notes" to the bottom of the recipe that I noticed did not make it to publication. 1. I don't normally measure the vinegar and oil when I make this recipe so the amounts are approx. Usually I keep adding a little oil, a little vinegar then keep tasting. 2. Nine times out of ten, the next morning the pasta will soak up the vinegar and oil mixture. You can add water if you like to moisten but I usually go in and add a little more of the olive oil and/or red wine vinegar.

Broccoli Chicken

This was good, but I made a few changes. I cut the chicken up in cubes after browning and added an extra can of soup. I also keep a bag of Birds Eye broccoli florets in my freezer and chopped some of them up and added as well. I think next time instead of adding the cheese, I am just going to get cans of broccoli cheese soup instead of plain cream of broccoli soup. I served over rice.

Easy Broccoli Quiche

YUMMMMM!!!! Served with a fresh garden salad and was a big hit! Did make a few "slight" changes though.Instead of fresh broccoli, I buy the big bags of Birdseye broccoli florets. I defrosted some and chopped them up. For the pie crust, I used the roll out and bake pie crusts you buy in the refrig section and baked for about 15 minutes before filling. I used the given amount of eggs and milk in the recipe, and used 2 regular 9 inch glass pie plates so I had enough 2 quiche's, which means "left-overs" and fine by me (smile). Also I added the egg and milk mixture to the rest of the filling and mixed together before pouring into the pie crust as recommended by others. This was my first attempt at a quiche and you can bet I will keep this in my recipe box and will make often. It was quick, easy and most of all so yummy!!

Beef Enchiladas II

YUMMM!!!! This was so quick and easy and very tasty. I went ahead and added some chili powder and garlic powder to the meat and onions while cooking (forgot to buy taco seasoning mix, and I knew I would want some more seasoning). Also used canned enchalada sauce bec that is all my store had, and used extra cheese. Also I used corn tortillas instead of flour. Served with refried beans and mexican rice. Definately a keeper and will be making again.

The Amazing Swedish Meatball

Southwest Chicken

Very Good!!! I cut the chicken breasts into bite sized pieces and took the advise of others and rubbed chicken with some chili powder, onion powder a nd garlic powder prior to browning. I also added a lot more than just a pinch of cumin. Definately a keeper and will be making again! Thank you for the recipe.

Louisiana Shrimp Creole II

A big hit in my house! I served over rice, added an additional pound of shrimp and a can of chopped tomatoes with green chilis for some added "zip". I also doubled the recipe so I had plenty left over for a second meal (I read in the reviews about how it tasted better after sitting over night, so I wanted to make sure I had enough left over to serve as another meal during the week next week.

Oatmeal Chocolate Chip Cookies I

I'm sorry, this recipe sounded so good, but the cookies didn't come out very good at all. I followed the recipe to the "t" ..the actual cookie part did not have much flavor at all and the chips were overpowering. Perhaps I will try it again some time adjusting the sugar that goes into the cookies and the amount of chips.

American Shepherd's Pie

I am not a big fan of this kind of meal, but my family is and they really liked it! Although I noticed many used different kinds of soups, I went ahead and used the veggie soup because I had it in the house. I think it might be fun to experiment with different kinds of soups and even the corn in the future..maybe next time cream of mushroom or something. I also omitted the thyme, only because we are not a big fan of the flavor of thyme. Thanx for the recipe, and I will be keeping this handy in "my recipe box" and will be making it again!

Grilled Mahi Mahi

I don't want to rate this, because I was the one who submitted it..(smile)..For some reason one ingredient was not added. Onions, and lots of them. I usually use one of those really big ones, diced and spread all over the fish before the tomatoes. I am really glad you enjoyed this, because it really is so yummy!!

Easy and Quick Swiss Steak

My mom made the same but with some "modifications". Instead of using the veggies, use the "italian style" type stewed tomatoes. It already has the bell peppers and the onions in it along with some other spices. Using these tomatoes takes either the bitterness or sweetness you get from using regular canned crushed tomatoes (they are always different). Also add some extra garlic and serve over egg noodles

Awesome Chicken and Yellow Rice Casserole

Quick and easy..A great recipe! The only thing is, I would have liked a little more "bite" to it. I think next time instead of the pimentos I will add a can of the diced tomatoes with green chili's to it. Also I used boneless and skinless chicken breasts, because that is what I had. Thanx! --------- Just an update...I tried this recipe again this time replacing the pimentos with chopped tomatoes with green chilis and it was EXCELLENT!! Will definately keep in my recipe box and will keep making. It was a hit in my house..when my "men" are happy so am I..(smile)

Best Ever Meatloaf I

My family prefers a pretty "basic" meatloaf and then topped with plain brown gravy, so after reading the reviews on this one I decided to give it a try. I have to say it was a hit!! I did make a few modifications, I added some garlic, worsterchire (spelling?) sauce and used a package of onion soup mix instead of the chopped onion and salt. I saved it in my recipe box and will for sure make it again. Thanx
