Broccoli Rice Casserole

I made this today for Thanksgiving and it was very good. The only thing I did different was to to add a garlic spice mixture (Goya's Adobo...which I pretty much add this to everything because it adds garlic, salt, pepper and some other spices)to the celery onion mixture because some of the other revies said it was bland. Per the other reviews I only used two or three stalks/ribs of celery and I don't even remember tasting it. This was a BIG casserole so if you want to feed a bunch of people use the whole thing, but cut it in half if you don't need as much. I only gave it 4 stars because I was actually looking for more of a "casserole-y" type of dish. But this was a delicious broccoli and cheese rice dish.

Best Bread Machine Bread

I rated this bread once, but had to come back to give it a different review. This bread is the best bread machine bread I have ever had. The first time it didn't turn out but that was my fault or my bread machines. Remade it today and everyone loves it. Thanks for the wonderful recipe my husband said I had to make it atleast once a week.

Flourless Peanut Butter Cookies

These cookies were alright, but i prefer the ones with flour more. But you never know till you try. They turned out good, I would make them again for kids or if I didn't have flour on hand. Super easy and fast.

Mexican Sour Cream Rice

I liked this recipe, but mine turned out a little dry even though I added more sour cream and salsa. The taste was good, and if not for the dryness, we would have liked it much better. Nice side dish for taco night.

Best Ever Blueberry Cobbler

This is a great recipe. My husband and I picked some wild blueberries while 4-wheeler riding; and I used them for this. The topping was like cake...we really liked it and will make again.

Watermelon Gazpacho

AWESOME! Fast, easy, and delicious. I substituted peach/white cranberry juice instead of orange juice, which probably made a big difference in taste, but it was still a great summer dish. Thank you!

Strawberry Limeade

Really good, but I suggest adding more ice cubes in the blender. It makes a big difference. You can also experiment with whatever you have around the house that you like: coconut milk, pineapple juice, orange juice, etc. It's all good!

Yum! Here's a tip: you can use italian salad dressing in a bottle instead of the dry mix. It works just as well. :)

Thai Cucumber Soup

This was great, but I did change the recipe so this review might not be too helpful. I had some spicy homemade vegetable stock on hand, so I used that and left out the chile peppers. I also used tangerine zest instead of lemon grass because that is so hard to find. I recommend this recipe :)

This was great! I also substituted a 1/2 cup of the heavy cream for white wine, then used 1 cup cream for the rest. Perfect, and didn't take a long time to make, either.

White Chocolate and Cranberry Cookies

Maybe this just isn't my taste, but these cookies weren't very good. I used fresh cranberries instead of dried, but I baked them first to make them soft. Anyway, the cookie dough tastes amazing, but even after adding pecans these lacked flavor. The texture was kind of bread-like.

Excellent recipe!!! I actually DID use the cottage cheese to see how it worked and it was awesome...had never tried it before. I Blended it and it gave great texture and flavor. I actually don't eat cottage cheese but it was a great filler. Next time I think I'll try half ricotta and half cottage cheese to see how it goes. Don't knock the cottage cheese unless you try it :)

Quick and Easy Tuna Casserole

I was looking for a tuna casserole recipe and was just not sure what I was looking for. I found this recipe, and used it as a "base" if you will. I made several changes, although I am sure the caserole would have been just fine if I followed the recipe to a "t". My changes were as follows: Instead of egg noodles, I used elbow noodles, only because I forgot egg noodles at the store and I had elbow noodles in my pantry. Instead of using 2 cans of cream of mushroom soup, I used one can of cream of mushroom and one can of cream of celery soup. I replaced frozen peas with frozen chopped broccoli and instead of using american processed cheese, I used shredded mild cheddar. I also added some french fried onions to the mix. I topped with a little more cheese and some more french fried onions and baked in the oven until golden. We liked the casserole and will eat it again. It was nice and quick and easy, great for when you are just coming home from work and don't really feel like cooking!

Beef Barley Vegetable Soup

I wanted to make this soup but I didn't have a chuck roast (I did have stew meat) and didn't feel like pulling out my crock pot then a soup pot, so I just made it all on the stove top instead. I also used beef broth instead of boullion cubes. I cooked the cubed beef in some beef broth on top of the stove until tender, then followed the directions for the remainder of the soup. It came out great. My whole family loved it and I will for sure make again. I think next time though for a little "kick" I will use a can of chopped tomatos with green chilis in it instead of the regular stewed tomatoes. Oh, and I also added some fresh garlic into the soup, I can't cook without garlic :) Thanx for the recipe..will be making it again!

Peanut Noodles

Delicious and easy! I recommend cutting the amount of soy sauce in half and getting white chocolate peanut butter for reduced sodium and sweeter effect.
