Catherine's Spicy Chicken Soup

OMG!!! There is a reason this is a five star recipe. It tastes wonderful and is healthy too! My husband and brother both said that it was awesome. I did like others and used diced tomatoes with green chiles in place of the regular diced tomatoes because we love spicy. Also because I knew that I was going to let it simmer for a long time I didn't bother sauteing the onions and garlic I just threw it all together. Another reviewer said she just boiled frozen chicken instead of thawing it out first and I did that too. Worked great and saved time. Yum yum! Try this recipe.

French Onion Soup II

I love french onion soup from restaurants. I wanted to try to make it myself because I never can get enough of it when I am out. It tasted kind of strange while it was cooking, but after I added the bread and cheese at the end it tasted good. Would have liked for it to taste a little stronger. But overall pretty good. I did have to add a little extra worchestershire as others have said and you will definately want to double it if you want big servings.

French Dip Sandwiches

Unfortunately I really did not enjoy this recipe. I think it was the rosemary or something. Just did not taste at all like a french dip sandwich to me. I followed the recipe exactly. My husband liked it so that is why I gave it three stars. I hate giving bad reviews...sorry :(

Sour Cream and Horseradish Asparagus

Really good and different way to prepare asparagus. As others have said you could use more asparagus because there was more than enough sauce. Be careful not to burn them at the end.

Individual Beef Wellingtons

Pretty good. Can't do wrong with anything using a puff pastry. I would actually reduce the time to 20 minutes next time, they were well done at 25 minutes.

Crab Crusted Grouper

Pretty good grouper. I really wanted to give this more like a 3 1/2 stars. I made it exactly as instructed. It turned out really good, just a little bland for my taste. Will probably try this again with a few more spices and maybe fresh crab.

Dee's Roast Pork for Tacos

This is a great recipe! Something different to do with pork! I made it exactly like the recipe instructed and the meat just fell apart. We put them on corn shells with all the fixings (tabasco would be good on them). Thanks!

Roast Leg of Lamb with Rosemary

I was always afraid of making lamb with it being so expensive and all. I hate to waste anything because if it's not good, these people I live with will not eat it no matter how much it cost! But this was easy and tasted great. I used the left overs to make Irish Lamb Stew which is on this site and it was great as well. Lamb will be a regular on our menu from now on.

Spinach Quiche

I made this according to the reviews and eliminated the butter. I used a bag of frozen spinach, defrosted and squeezed it do death lol. Then I sauted the onions, garlic and mushrooms in olive oil, added the spinach after a bit. This did make two pies, which I usually make my own but for this time I did buy them already made:( I would definitely bake the pie crusts for about 8 minutes before putting anything in it. My dad ate half of one pie lol!

Irish Lamb Stew

This is a great recipe! I used left over from Easter lamb. It was already seasoned, but I still cooked it in the bacon grease for more good flavor. Then I put it in a crock pot, with mushrooms and carrots and beef stock. As the day went on I added some wine and then the flour. I never even added any other seasoning because the flavor was already unbelievable. I probably could of thickened up a bit more, but we ate it over left over mashed potatoes...I'm telling you this was to die for! Great basic recipe to work with. I will be cooking a lot more lamb from now on. Oh, my daughter says that it was a gift from the gods lol!

Tangy Slow Cooker Pork Roast

I made everything just as the recipe calls for except I didn't use the slow cooker. I simply used an oven bag, first couple hours at 350 then an hour at 250. Everyone loved this one and the veggies with it were excellent.

These are great. Only need 3.5 cups of the sugar. Makes so many! But I noticed that they get stale a little quicker than I liked (and I did wrap them in candy foils).

Aunt Anne's Coffee Cake

This cake was not what I was looking for.. The top melted into the cake even though I used half brown sugar...I did put a bit more milk then it called for due to the other reviews saying it being to dry. It was very sweet a little to sweet..I will continue looking for another recipe.

Red Beans and Rice

GREAT! I have always used zatarains but never will again after trying this recipe. So easy and good! Used rotel instead of diced tomatoes and added another can of kidney beans and some hot sauce. I like them hot!!!! Thanks for the recipe.

Nut Rolls

Ok, I feel so bad about leaving such a low rating. And usually when I don't like something, I just don't rate it at all. But I am so completely disappointed with this recipe... and mostly because of the reviews! Only one negative one out of all I looked at and it referred to pecans which isn't even in this recipe! But I followed this recipe to the T. I used it because of the reviewers claiming the likeness to Kolachi. This is NOTHING like the kolachi I grew up with. Yes, the dough had a great flavor, maybe a little sweet for Kolachi, and it was easy to work with. But the recipe did not tell you the thickness to roll out the dough or what area to roll it out (ie - 12x10). So because other reviewers claimed the "perfect" kolachi recipe I rolled it as I would when making kolachi. It did not rise at all. The dough turned out tough on the outside and too doughy on the inside. And they also stuck to the pan. Like I said, I followed this recipe to the T. The recipe does not say to grease the pans so I didn't and usually wouldn't for this type of recipe. I feel this recipe just leaves out too much info or I'm very wrong in thinking that nut roll is just another word for kolachi. So I just thought I'd leave this review for those who might assume as I did. I believe the dough would make for a great Kolacky cookie however. And I just might give that a try because the dough is good, sweet and easy to work with. I also felt that the nut filling is delicious as well. Sorry f
