Blackberry Cobbler II

Oh my gosh!!! My dinner guests and I all agreed that this was the best blackberry cobbler we'd ever had. I served it with homemade whipped cream, which was a hit too. = )

Holiday Chicken Salad

This chicken salad is delicious! I taste tested a little bite on a cracker, and ended up going through half a roll of ritz crackers before finally putting the chicken salad in the fridge to chill. So much for letting the flavors meld together; it was already yummy. :o) I almost forgot to mention that I toasted the pecans under the broiler for a few minutes before putting them in the salad. Oh, and I just realized that I forgot to put in the green pepper...oh well.

Applesauce Bars

I make this recipe every week. My entire family loves them and I always have some on hand in the freezer. I have added to the health benifits by using whole wheat flour, dropping the sugar to 1/2 cup (I use raw sugar) and I don't do the frosting because the bar just doesn't need it. Even if you make the recipe as is you are only talking 2 Weight Watchers points. I do find a 9X13 creates a thinner bar so I do a square pan to make them a bit thicker. It does reduce your portions so WW folks need to factor that in.

Chicken Florentine Casserole

OMG! We tried this with some leftover turkey and wow! My husband told me that he could eat this every night - and he doesn't like spinach! This is definitely a keeper.

I used low-sodium soy sauce, but will definately use regular next time. This just isn't a good recipe to modify the sodium on. Go ahead and splurge!

Randy's Texas Tea

I love this recipe and have used it over and over for large summer parties. A couple of things. This tea is only as good as the ingredients you put in it. You must use good quality (not from concentrate) orange juice and real lemon juice, you cannot omit the salt and make sure the glasses are full of ice when you serve. You will be rewarded with a party tea worth serving again and again.

Cake Balls

Was not as great as some of the reviews state. I am not a fan of canned icing...that was all I tasted. Another recipe calls for a bag of Oreos and a block of cream cheese "mushed" together. It had a better taste than the cake idea in this recipe.

Chocolate Chip Cheese Ball

This is very sweet. It got good comments at a party. However, I was not able to form a "ball". I served it as a dip. Even after chilling, it never got firm enough to hold its shape.

Alice Chicken

I used to always get this at Outback. This was easy to make, and very good! I cut back on the fat by leaving out the bacon, and I used reduced fat cheese. This makes it much healthier, yet it's still delicious! The chicken came out very tender and juicy, partly because I marinated it overnight.

Grilled Corn on the Cob

Mmmm, I thought about soaking them in water or using a towel, but I cooked them just as the recipe says. Very juicy and tender! I'll definitely grill corn more often, it was very easy!

Fresh Ginger Cookies

Roasted Asparagus With Thyme

I love this recipe. Using fresh thyme just makes it. I like to put a squeeze of fresh lemon juice over it too and I sometimes dust with coarse grated parmesean cheese just before serving.

Christmas Cheese Cake

If you have a hard time finding lady fingers in your area, try this for your crust. 1 cup AP flour, 1/4 cup sugar, 1/2 tsp lemon juice, 1 egg yolk and 1/4 cup butter. Mix crust press into springform pan with wax paper. Bake at 450 for 6-8 minutes.

Vegan Corn Muffins

Thank you! I used the recipe but substituted the one cup of water for the 7/8 of soy milk and 1/8 of lemon juice. Please, have chili with the corn bread, it is a very good and healthy pairing.

Pumpkin Bread

Shalomleka! (peace to you!) I added about 1/2 cup of shaved, bittersweet chocolate, about 2 tablespoons of honey, about 2 cups extra flower, 2 extra eggs, and used a mix of confectioner's sugar, brown sugar and granulated sugar.
