Chicken Stir-Fry

Reviewed: Sep. 22, 2009
A great recipe. After reading reviews, I doubled soy, ginger, and garlic and added a dash of salt. I also used the veggies I had on hand (snow peas, broccoli, bell pepper, red onion, baby bella mushrooms, and water chestnuts) and served it over wild and long grain rice. My husband and I both loved it. Thanks for this recipe. I'll definitely be fixing it again soon.

Superfast Asparagus

Reviewed: Aug. 31, 2009
We love asparagus, and I was looking for a quick recipe. Read the reviews, tried this, added a tiny bit of garlic salt (Cajun seasoning has salt in it, so can't use too much), and we loved it. I've had asparagus in really expensive restaurants that did not taste as good as this. My husband raved about it. Thank you so much for this recipe. I will most definitely use this recipe often!

Yummy Pork Chops

Reviewed: Aug. 27, 2009
August: I'm always looking for new ways to cook boneless pork chops, and this one was super! I followed the recipe exactly, using a very good bottled "lite" Italian dressing and I put it on to marinate before I went to work. I did add some quartered baby portabella mushrooms a few minutes before the pork was done. Will definitely make this again. Soon. October 5th: Okay, a month later I've cooked this recipe 2 more times, and it just keeps getting better. I always use a good quality Italian dressing, quartered baby portabello mushrooms, and lite soy sauce and I wait until boneles pork chops are on special. I did not have time to marinate tonight, but fixed it anyway with Superfast Asparagus (best asparagus ever - recipe this site, but rolled in extra virgin olive oil instead of pan spray and added some garlic salt). I usually add either wild and long grain rice or mashed potatoes. Quick, easy, economical. Both pork and asparagus recipes are the "best of the best" as far as we are concerned. Thanks to the people who submitted both.

Portobello Mushroom Pasta

Reviewed: Aug. 18, 2009
I read all the reviews and followed the advice to add garlic, Italian seasonings, etc., and to pour off the excess liquid. We were pleased with the result. A very good cook and friend says on her cooking blog (Banging On Pots And Pans) that you should never change a recipe and rate the recipe based on your changes, so this rating is based on the original recipe. After the suggested changes, it becomes a 5 star.

Baked Ziti I

Reviewed: Jun. 11, 2009
I was a little nervous about this recipe due to the lack of ricotta and bc I didn't like the spaghetti sauce I bought that much. BUT, it turned out DELICIOUS! I took other reviewers advice and mixed the ziti with the meat sauce instead of layering. That worked well, I think, to keep the noodles moist.

Ground Beef Stroganoff

Made this the other day and hubby loved it. Read reviews and added garlic, salt, and black pepper and used less pasta. Great quick meal for weeknights and very economical.

Pepperoncini Beef

Reviewed: Apr. 13, 2009
This is okay, but we have a recipe that is similar, but much better. Use a jar of pepper rings with juice, 1 package of zesty dry Italian dressing mix, and 1 package of regular dry Italian dressing mix. Cook in slow cooker on low heat for at least 12 hours (I have cooked this all night and all morning to use for a weekend lunch), shred beef, and cook another 30 to 40 minutes. Meat is moist but not too juicy and flavor is great.

Impossibly Easy Breakfast Bake (Crowd Size)

Reviewed: Mar. 22, 2009
Made this for out of town company (12 people total) and it was a hit! Everyone loved it. Read reviews first, and left out green pepper. Only thing I would do differently is stir the black pepper in with the sausage mixture instead of the liquid mixture so that it doesn't tend to clump.

Chicken and Vegetable Stir-Fry

Reviewed: Feb. 9, 2009
I really hate food that is sweet unless it is dessert or sweet potatoes, corn, or green peas, so this recipe looked like a winner. I usually read the reviews before I try a new recipe, but I was in a hurry tonight, and I'm glad I didn't read them. I did find this recipe very bland, but I smelled and tasted (I cook more by smell than taste) and began to alter it mid way through. I had used minced garlic (from a jar for quickness) and I added some garlic salt and additional soy sauce. I also used frozen vegetables, a can of sliced water chestnuts, a can of bamboo shoots, and a jar of mushrooms. Since this was a lot of vegetables, I cooked a bit more chicken, too. Instead of white rice, I used wild and long grain because that's what we prefer, and I often cook it with broth instead of water to add flavor. My husband really liked this recipe. I like much spicier food than he, so I would probably have liked a bit more zing, maybe even making it hot with some minced chili or something, but it was still really good.

Lazygirl's Ground Turkey Stroganoff

Reviewed: Feb. 5, 2009
Fixed this for dinner tonight. My husband recently was diagnosed with some health problems so I've been changing the way I cook, including cutting way way down on ground beef, even if it's ground steak. He loved this recipe. Asked me what was in it, and when he found out it had ground turkey instead of ground beef, he was really surprised, but said it was great anyway. I did read some of the reviews and added a little sour cream. I'm not a big fan of paprika so I didn't put as much as the recipe called for, and I used broth instead of water. I also added some garlic salt and more pepper.

Mustard Crusted Tilapia

Reviewed: Jan. 12, 2009
I'd like to give this recipe 4.75 stars. We eat a lot of tilapia, and I was looking for a new recipe. This one was really good. My husband liked it a lot. I followed the advice of other reviewers and increased my recipe since I was fixing more than 2 fillets. I was out of spicy brown mustard, so I used the Grey Poupon Country Dijon, but otherwise followed the recipe. Very good. I read the review by the person who said tilapia had a lot of cholesterol, so I looked up some information on it since I have high cholesterol and my husband has recently been told he is border-line type 2 diabetic. It seems that the amount of omega 6 and cholesterol in tilapia depends on where it was farmed and may have 68 mg per 100. My package says it has 50 mg, and that isn't nearly as bad as sole, beef, pork, or poultry. Eggs have lots more, and they have shown now that eggs do not contribute to high cholesterol levels. Remember, those people reporting these "headline" news items (be it food, politics, or whatever) have to sensationalize their reports to be sure people read them, watch them, or listen to them. Otherwise, they can't sell advertising which pays the bills for all newspapers, magazines, tv, radio, etc. THERE IS NO TRUTH IN ADVERTISING! (I ought to know...I worked in a related field for almost 30 years.)

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Dec. 30, 2008
WOW, this fudge was so easy and tasted amazing. I cooked it without using a thermometer and it still turned out fantastic. I let the chocolate boil for about 7 minutes before pouring it into the pan. Also cooking on a lower/medium temperature is very important for maintaining a smooth, creamy consitency. Made it for my German family who had never eaten fudge before. It was such a hit! I did use more darker chocolate than the lighter, and reduced the sugar just a bit. This was such a lovely recipe, I will be making it again and again :) Thanks from Freudenberg, Germany

Sirloin with Mushroom Sauce

Reviewed: Oct. 7, 2008
This has a very good flavor. Picked up sirloin from "manager's special" bin. Used the suggestion of adding corn starch to thicken sauce. Also added a little salt. My husband really liked it. Great meal that was good enough for company, but inexpensive.

Slow Cooker Pepper Steak

Reviewed: Oct. 7, 2008
Great recipe. I don't like mushy vegetables, so I didn't add the bell pepper and onion when I put in the steak and tomatoes. Since bullion cubes are so salty, I didn't add the salt either. Cooking this again today!

Basic Microwave Risotto

Reviewed: Aug. 20, 2008
Like everyone has said, this isn't real risotto. But whatever it is, it's delicious! The only thing I added to the recipe was salt & pepper and a bit of heavy cream at the end like another reviewer suggested. This recipe is super easy and very flavorful. I will definitely be making it again.

Red Velvet Cake IV

Reviewed: Jul. 8, 2008
I'm not a fan of red velvet (don't like cream cheese frosting) but I made this for my roommate who had been craving red velvet. He's WAY more talented in the kitchen then I am, so I was a bit nervous, but he LOVED it! I think he especially enjoyed the frosting as it is more than just your average cream cheese frosting. The cake (the part I like) was exactly right for red velvet - choclate, but not too chocolate. I'll definitely keep this on hand for future roommate surprises!
