Best Butternut Squash Soup Ever

My family really enjoyed this recipe and then I had maybe a cup left and took it to work to show off my culinary skills and they went crazy over it. I'll have to say that while cooking it I was skeptical and then once it was pureed it all came together. I did add the cream at the end as suggested by someone else. Great!! Thanks for the recipe.

Artichoke Rice Salad

Good recipe, very different. Most who tried the salad did not realize it was rice in it. I added a little lemon juice, and a little more curry. Decreased the mayo by 1 cup. Everyone liked it and thought it was different. I like the amount it made, we took it to a family dinner and then had a little to eat the next day with grilled chicken. Perfect. Thanks for the recipe.

Beth's Tex Mex Dip

I used this recipe for SuperBowl, it was great. It was gone before we even started eating. The only thing I changed, I added salsa to it. I meant to use jalepeno's as suggested but didn't have any. So I went with the chile peppers and it was good. Thanks Beth.

Foolproof Rib Roast

I like most others did not expect to have a fully cooked, tender roast at the end of the 45 minutes. But I stand corrected. It was perfect and I did as another suggested and put the carrots, onions and potatoes in with the roast on the last 45 minutes. The recipe never said whether to cover the roast or not. But initially for the first time in the oven I did not cover but in the last 45 minutes I covered with aluminum foil and added a little beef broth to it. Perfect!

Hot Artichoke Spinach Dip

After I made this recipe I felt there was still some flavor that it needed. I made it by the recipe exactly. I thought with the heavy cream it would be creamy but it was not. I will continue to look for that great Artichoke spinach recipe.

Mom's Oyster Stew

My father in law has always made Oyster stew for my family on special occasions. This valentines I wanted to make something special and my 10 year old requested Papa's Oyster stew. This was the recipe I chose and it was a good one. Papa does not add the pepper but we did and enjoyed it.
