Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Dec. 22, 2009
just adding to the wonderful reviews! I actually found this recipe on another website. they suggest adding 2 tsp of cornstarch to help keep them chewy. Also, if these cookies turn golden at all, they are overcooked and will be too hard. And the other site calls for cooking at 335. I've done both and 335 kept them fatter for some reason. I cooked mine for around 12 minutes, pulling them out when they ar still whitish. I made 5x (making 113 cookies) for christmas this year, and the recipe did fine. Roll these into balls by hand, and cover the top with chocolate chips. the chips will spread out and be sitting right on top when the cookies bake up and they will be in perfect circles

Cake Balls

Reviewed: Dec. 21, 2009
It's so frustrating when you expect a recipe to turn out great and it doesn't. The rating on taste alone is a 4. I mean come on, it's your favorite cake and icing. But the instructions for making the acutal balls are misleading. I formed the balls with my pampered chef cookies scoop so they were all the same size. However, 3 ounces of bark...ha! I used half a package and didn't even finish coating my balls. I was making these for a Christmas party tomorrow so I used the white almond bark and some red sprinkles. I froze my cake balls for about 9 hours today. When I dipped them in the chocolate, they started to leave crumbs in the coating so the almond bark looked dirty and they didn't drain well, so I was left with a clumpy dirty ball that even the red sprinkles couldn't make pretty. I ended up dumping all of them and now I have to start over with something new for tomorrow's party.

Real Texas Chili

Reviewed: Dec. 20, 2009
Perhaps I'm not used to chili without onions and tomatoes, but I'd have to make up a brand new name for this concoction. It's not like any chili I've had anywhere ... including Texas. I like the flavors, but it doesn't work as a stand alone dish.

BBQ Bacon Ranch Dip

Reviewed: Dec. 18, 2009
This dip is fantastic! I had my doubts about the combination of ingredients, but it all works well together. It was quickly devoured at the party I took it to. Unfortunately when I went to make it I realized I didn't have the ranch dressing mix. So I just used one package of cream cheese blended with about 3/4 cup bottled ranch dressing. Didn't have the problem others had about scoopability since I used that. I will make the dip as written next time, there will definitely be a next time.

Cheese Straws

Reviewed: Dec. 17, 2009
This was a wonderful recipe as is. The grandkids loved it, so did the mail man. Poor guy he often gets roped into testing things at our house. Bless him he keeps coming back with a smile. It was a bit bland then I saw I had left out the cayenne. So I tweaked the second batch. I added 3 tbs. olive oil 1/2 tsp. paprika, 1/4 tsp ground cumin, and 1/4 tsp. garlic powder. I cut back on the water to about 3 tbs. till dough was just right for the cookie press. I don't like to roll out anything I'm not sure I could find my rolling pin. Also useing extra sharp cheddar helps make the cheese taste come through. Also do let your butter and cheese warm to room temp. or better yet set on stove as you pre heat it make it so much easier to blend. I also up the cooking time to 8 min making a nice crunch in the straws.

GREAT! I used 2 - 2.5 lb Pork Tenderloins. I read that this is like using T-Bone's to make hamburgers, but MAN tenderloin made great pork sandwiches! Wonderful and is enough to have food to eat for several days!

Orange Salmon with Rice

Reviewed: Dec. 12, 2009
The dish came out delicious, however I had to add a few modifications. First I increase the oj to about half a cup since I had large fillets, in addition I used perhaps 3 tablespoons of soy sauce. I also added some orange marmalade to give it extra sweetness. Aside from that my family enjoyed the salmon.

This is as close as I can come to my grandmothers recipe for what we call holiday cresents. You guessed it we shaped them into cresents (two bite size). I make one swape for the vegan in the family and use Earth Balance vegan safe spread. Works wonderfuly and no one is left out.

Chocolate Crinkles II

Reviewed: Dec. 9, 2009
These were extremely good! Perfect for my chocolate fix, though I did kind of alter that. In addition to the 1 c. cocoa, I melted 1 oz semi-sweet bakers chocolate, 1/4 c. dark chocolate chips, and 1/4 c. semi-sweet chocolate chips. Added that to the cocoa/sugar/oil mixture and then kept going with the rest of the ingredients. I also let the batter sit for a couple of hours in my warm kitchen to help the chocolate blend together. Put the batter in the freezer for 6 hours and let it sit on the counter for 30 minutes before I worked with it. I didn't have ANY problems with the dough being too sticky, and my house was pretty warm at the time. Used a #50 scoop and plopped the dough right into the powdered sugar. You HAVE to grease the sheets, otherwise these are a monster to get off the sheet! Overall, GREAT recipe.

Chewy Peanut Butter Chocolate Chip Cookies

Reviewed: Dec. 7, 2009
I really liked this cookie. My husband...not so much. I followed others' advice and cut the flour back to 2 cups and used 1 cup of peanut butter. I also made much smaller cookies. I just dropped them on the cookie sheet with a tablespoon and got 5 dozen normal size cookies. Overall, I thought the cookie was great and I will bake them again. So what if my husband doesn't like them....more for me!

Sweet and Spicy Sweet Potatoes

I made these last week with a couple of small changes: I left out the poultry seasoning because I didn't have any and also the brown sugar because I think the potatoes have enough sugar in them. I added some kosher salt as well. They were great! I'll definitely make these again and again. Thanks!
