cooks down about 2 inches on both sides of pan but a really good meal. i served it with rice, black beans, avacodo, and tomatos. My Dad who is not the fondest of seafood in general liked it as well as my 2yr old. Empty plates and dishes all the way around

Tender Breaded Turkey Cutlets

As far as taste goes...pretty good. But so not worth the effort it takes to cook. Don't get me wrong cook time is not the issue. It is getting the breading to stay on the chicken. What a pain.

Coconut Bon Bons

Here is a very helpful hint to everyone who seems to be having problems rolling the balls. My trick is to have a glass of very hot water sitting beside the mixture and also a small bowl of confectioners sugar. I dip a spoon into the hot water then scoop the mixture with the spoon and drop into the sugar. I then coat the ball with sugar and roll into the balls. No mess at all!!

River Omelets

My husband and I grilled some shrimp shish-k-bobs on labor day and we substituted some of the left overs. Our ingredients included shrimp, bell peppers, onions, mushrooms, black olives tomatoes, colby & montery jack cheese and some hot pepper flakes. Preparation was a lot of fun and the outcome was scrumptious!!
