Jerk Chicken and Pasta

Reviewed: Nov. 18, 2008
This tasted like something out of a restaurant! I made a few changes. I did not use jerk paste (couldn't find it). I used a jerk seasoning rub from the site, used a portion, and added a bit of olive oil to it to make a paste. Instead of using chicken, I broiled 4 tilapia coated with olive oil on both sides, then sprinkled with salt and the homemade jerk seasoning. For the cream, I substituted coconut cream. That "made" the recipe for me. It went over well with company and I love it.

World's Best Lasagna

Reviewed: Nov. 18, 2008
BETTER THEN STOUFFER'S! It's been about 5 years since I've had a red-sauce lasagna. I'm a current college student in born and raised in the deep south, and if I can make it... YOU SURE CAN TOO!! 4 of my friends and 2 of my roomates helped me gobble it up. I just changed a few things: Ground Turkey and Turkey sausage (I don't eat pork/red meat. Thus why I haven't had lasagna in forever!). I agree with other reviewers: FENNEL IS A MUST! Unfortunately, I didn't have any. The Italian Seasoning I used had it in it, so I doubled the spices. Oh it was incredible! I'm making this at least once a month because I know I can make 2 pans of it and it still be great. Try this recipe!!

Calico Beans

Reviewed: Nov. 10, 2008
I only gave 4 stars because I made adjustments to the recipe. I only used half the amount of brown sugar and it was still a tad sweet for my taste, but the vinegar helped to cut it. I also used red wine vinegar because I didn't have any white wine vinegar. I used ground turkey and let is simmer for 1 1/2 hours on the stove instead of putting it in the over. This created more juices so I served it over brown rice and it was a hit. Not the prettiest dish in the world, but tasty none the less. Thanks.

Honey Chicken Stir-Fry

Reviewed: Nov. 4, 2008
Perhaps a 3 1/2? Maybe I did something wrong but mine came out without a strong flavor and not too different than other stir-fry's that I've tried. Of course, I used my own broccoli mixture (broccoli, carrots, sugar snap peas, onion)...and it was the first time I've ever used cornstarch.

Apple Butter Pork Loin

This recipe is to die for. I also cooked mine in the crock pot. It only took about 6 hours for my 2 1/4 lbs of meat. Oh and I also used pork tenderloin instead of regular loin.

Delicious Ham and Potato Soup

Reviewed: Oct. 3, 2008
This soup was delicious and creamy even though I used skim milk. I usually use corn starch as a thickener, but I decided to follow the recipe and use the flour and butter instead and it worked out great...no lumps at all. The one thing I did differently was that I sauted my ham in a little butter to bring out the smokiness before I added it to the soup. Everyone went back for seconds:)

Spinach Chicken Parmesan

Reviewed: Sep. 25, 2008
This was excellent. I took another rater's advice and added 2 cloves garlic when I sauteed the (white) onion and followed her other suggestions as well including increasing the parmesan, adding (Italian) bread crumbs, sour cream, extra spinach, mushrooms, roasted red pepper and red pepper flakes. Really good!

Sourdough Starter

Reviewed: Jul. 9, 2008
This starter gives a great flavor but would have been helpful to know to feed it every day. I've baked 3 loaves in about 3 weeks. They had a great flavor but rose and fell. It could be that the bread recipe I used has too much yeast. And I used bread flour. I made a new starter today and will feed every day with 1/3 c. flour, 1/3 c. water and a pinch of sugar. In 8 days, I will make bread and give half the starter away before feeding it. All other recipes I've read have said to do this and maybe it will work with this recipe. Excellent taste.

Fruity Couscous Salad

My husband did not like the recipe, stated it was bland. However, from other couscous recipes I should have used OJ to cook the couscous. This would have added more flavor. I thought it was just pretty good.

Moroccan Salmon Cakes with Garlic Mayonnaise

Reviewed: Jul. 3, 2008
These were good. I had trouble keeping the cakes together, though I did not let them sit in the fridge as one reviewer suggested. I also did not use quite as much spinach to even out the flavors. Still a good alternative to everyday food.
