Insanely Easy Vegetarian Chili

Love this recipe! It can also be a delicious, quick, hearty, meatless vegetable soup! As usual, I adapted it to my taste. Left out the red bell pepper(had none), subbed olive oil for vegetable, subbed whole jarred button mushrooms (cut in half) for fresh, used diced tomatoes instead of whole, reduced cumin to 1/2 Tab. and added 1 tsp. sugar. No need for added tomato sauce/paste as some reviewers suggested. When I make this again (and I will), I will reduce the chilil powder by half (personal preference). This makes a hearty, healthy, low-cal. lunch which is what I was looking for. I found that the recipe will make a lot more than 8 average servings! Wonderful with a corn muffin/stick. Thanks, Tianne!

Low-Fat Blueberry Bran Muffins

These are excellent muffins! Can't believe they are so low in fat and yet so moist. I used All Bran cereal and subbed pureed prunes from the baby food aisle for the applesauce. My berries were still partially frozen when I mixed them into the batter, but the batter was dense enough to keep them from all sinking to the bottom. I froze most of them and will eat one every morning for breakfast. A delicious way to get that very necessary fiber into the diet! Do not hesitate to try these!!!

Hot Fruit Salad

Excellent recipe! My husband and I both LOVED it! As usual, I did have to make a few changes. Since I had no jarred applesauce,(I usually make my own), I quickly peeled, cored, and chunked 3 Granny Smiths and cooked them on low for l5 mins. with 3 Tab. white sugar & a dash of lemon juice (tender stage) and "smashed" them a little but did leave small chunks for extra flavor. This made a perfect substitute! My only canned peaches were sweetened with Splenda, and they worked fine. I did cut each slice into 3rds(fits into the mouth better). Could not locate 8 oz. can of pineapple chunks in my grocery store so used tidbits instead, and they worked fine. I had a can of "lite" apple pie filling in my pantry (impulse buy) that needed to be used so I tossed that in. The end result had a wonderful texture and taste! Next time, I will probably add a can of pear halves, drained and chunked. This would make a beautiful presentation at a holiday meal because it is so colorful! It does make a lot (almost filled up my 13x9 dish), but you can enjoy it in a variety of ways. I warmed it and served it with teacakes as dessert, ate it as a side dish, and will serve it over pound cake slices with whipped topping for dessert tonight. Also, it will be wonderful with vanilla ice cream. A delicious and versatile dish! Thanks for the recipe!

Black Magic Cake

This cake is truly awesome! My husband considers chocolate cake his favorite dessert, and he LOVES this one. First time I have ever added coffee! You do not taste the coffee, but it imparts a deep, rich flavor. (No changes were made to the recipe.) It is very moist - even 4 days later. I topped it with our favorite dark chocolate frosting which I have used for over 40 years. There is just the 2 of us at home now, and the cake is disappearring rapidly for an older couple! Thanks, Marsha, for a fabulous recipe.

World's Best Scones! From Scotland to the Savoy to the U.S.

Truly delicious scones! Only my 2nd attempt to make them (first attempt was 20 years ago and not very successful). These turned out great but were not exactly like the submitted recipe. I had recently eaten an orange cranberry scone at a Fresh Market and loved it and was trying to duplicate the flavor. These are even better! My changes included subbing orange Craisins and adding 1 1/2 tsp. orange zest, lite sour cream, fat-free evaporated milk (for richness), and omitting the egg wash. They were so soft that I dropped them - 12 - onto a parchment lined baking sheet and sprinkled them with natural sugar crystals. Fabulous! They were full of flavor, not heavy, and crunchy on the outside. My husband tasted them and has requested one with his lunch today (his first scone). Next tiime, I will make 24 smaller scones and share them with friends. This is not scone country so they will be a novelty!

Pecan Pie V

My husband and I enjoyed this version of pecan pie very much. I lowered the calorie count even more by using 3/4C brown sugar and 1/2 C Splenda, and I used heart healthy margarine instead of butter. Best eaten warm. I am a traditional cook in pecan country and was skeptical until I tried it. I had given up making pecan pies because of the high calorie and saturated fat counts so I am thrilled to have this recipe.

Actually Delicious Turkey Burgers

These are easy and delicious burgers! I had a package of 1.2 lbs. ground lean turkey breast so I had to adjust the ingredients. I used powdered garlic, a whole egg, and I grated my onion. Made 4 large burgers. Next time, I will add a little smoke flavoring and chill the meat mixture to marry flavors and to make it easier to shape the patties. We prefer not to eat a lot of beef so this fits into our diet perfectly. Thanks, Trudi, for sharing this delicious recipe.

Apple Carrot Muffins

Fabulous muffins! I ended up with 1 1/2 C chopped Granny Smith apple so I left out the carrot. To save calories, I also omitted the nuts. Result: a wonderful apple muffin! The texture is just perfect.

Banana-Oatmeal Bread

This recipe makes 17 delicious regular-sized muffins. Baked for 18 mins. at listed temperature. Wonderful split, buttered with a healthy spread, and toasted for breakfast. Freezes beautifully. Another great healthy recipe for those of us with high cholesterol.

All Day Apple Butter

I made this recipe on the top of the stove (6 qt.heavy Dutch oven) and as printed but had to adjust the spices to my personal taste. Also, I found that the 4 C of sugar made it too sweet for 5.5 lbs of Granny Smiths so I added 3 Tab. lemon juice to cut the sweetness. In the future, I will add only half the amt. of sugar and add more as needed. I also added 1 more tsp. cinnamon, 1 tsp. ground allspice, 1/8 tsp. more cloves, and 1/4 tsp. ginger. My husband and I both loved it! Wonderful on hot biscuits! Will make again and again. It took me 2 hrs. from start to finish by this method, excluding the apple peeling. Thanks, Terri!!!!

Cinnamon Raisin Bread I

Honey Wheat Sandwich Rolls

I just made these rolls, and they are excellent. Followed the recipe ingredients with one exception. Substituted molasses for honey. Since my bread machine has died, I made the dough with my Kitchen Aid mixer (kneaded 17 mins. on lowest speed). Delicious taste & texture. A winner!!!

Banana Banana Bread

Very disappointed with this bread after reading rave reviews. There is too much banana for the amount of dry ingreds. so the bottom of the loaf was a bit soggy. Tasted a little "flat" even though I added 1/2 tsp. salt since I use unsalted butter. Will not try this one again!

Zucchini Pineapple Loaf

This is my second review on this recipe. I made it again yesterday and doubled the ingredients as I did not have an 8 oz. can crushed pineapple. It turned out to be even better. Changes include using 4 oz. baby bananas for 1/2 C of the oil; used 1/2 C canola oil. Added 1 C sugar and 1 C splenda; could not tell the difference in taste/texture. Saved hundreds of calories with these 2 changes! I drained the 20 oz. can of crushed pineapple and used the juice to plump 1 C seedless raisins (drained them well on paper towels and tossed with 1 tsp. flour). I omitted the nuts, too. End result was a delicious, lower fat and sugar fruity loaf!

Apple Dumplings I

I was a little doubtful of the refridgerated biscuts working well, but I was really pleased! In fact, this is a favorite among my friends. I just reduced the water by half and followed the rest of the directions and it worked wonderfully! Will definitely make again and again...
