Slow Cooker Salisbury Steak

PHILLY Creamy Rice, Chicken and Spinach Dinner

I decided to try this because it sounded good to me. My husband wasn't too thrilled to try it because of all the spinach and tomatoes but absolutely loved it once he tried it. I used less spinach because it wouldn't all fit into my skillet. I also used a different dressing than called for: KRAFT tuscan italian. The commissary here didn't carry the other kind. It still came out fabulous. My husband scarfed it down and complimented it over and over. Great recipe.

Sweet Potato Pie from EAGLE BRAND®

This is always a hit at our house during the winter holidays. Instead of using orange juice however I add a dash of orange extract. Makes a great deep dish pie.

My Country Style Steak

Yummy! What I did to make my cubed steak more tender was after it browned I placed them in a foil lined baking sheet (making a tent) in a 250 degree oven for 35 minutes. After making the gravy as noted I placed the steaks back in the gravy pan and served....

Linguine with White Clam Sauce II

My husband and I eat this all the time, the only thing I do differently is in a saucepan I melt half a stick of butter and place the garlic on that cooking on low. And due to this variation I cut back on the olive oil just using a drizzle. Perfect everytime---

Tangy Shrimp and Scallops

Red Velvet Cupcakes

This southern gal loved this recipe, indeed a smaller bite size version from the Red Velvet Cake. One thing you need to make sure is to room temp the buttermilk and eggs. Other than that top these babies off with cream cheese and they are sure to be a hit.

This recipe took a bit of effort & if you're not careful the dough can come out fragile or soggy. All in all, people looooved them. I did rasberry w/ powdered sugar & others w/ apple pie filling w/ the cinnamon sugar. Yum!!!A hit at my Mexican themed dinner party!

Pineapple Upside-Down Cake V

I don't really care for pineapple upside-down cake, but a friend asked me to make one for an office party. This was very easy and it came out great. I didn't use coconut and I used cooking spray instead of the butter. I highly recommend the butter. I almost had a disaster getting the cakes to come out without tearing them up. Everyone loved the cake and commented on how moist it was.

Wonderfully delicious, especially straight from the oven. I gave it 4 stars because the next day they were hard as a rock and although in a microwave they did come back to its softness I felt that it should have remained soft with a less than 24 hour window.

Chicken Enchiladas V

I just made this less than 20 minutes ago and it was a big hit with my family. When I boiled my chicken breast I added 2 bouillon cubes, my onion, garlic and sliced bell peppers, allowed that to cook for about 45 minutes on low and than allowed it to cool off in the water before shredding everything together. I also added jack cheese to the soup mixture, and then I had some leftover meat mixture and placed that on top of the enchiladas. Once again thanks, let's keep-em coming.

Cheesy Eggplant Casserole

I made quite a few changes and with everything I changed it turned into more a dressing than an eggplant casserole. So I wasn't sure that I should even review it. But I think this is a great base recipe and that is something I'm always looking for. I added two cups of French bread cubed, 1/2 c. chicken stock, 2 green onions chopped, 1 celery stalk minced, more garlic for taste and a fistful of chopped parsley along with doubling the Italian seasoning. I really loved this and the eggplant reminded me of my Maw Maw's oyster dressing. So I will definitely be making this again with the addition of chopped oysters.

Easy Black Bean Soup

I made this as a side for chicken sandwiches for an easy dinner. It was very good. The only changes I made were that I didn't have thyme or celery salt, so used some Italian seasoning and I also used tomato sauce and used chicken stock instead of vegetable. I used fresh lime instead of lemon and added some green onion. It was just spicy enough and I served this over some leftover rice. Very yummy! Very versatile and the bowls were all empty.
