Chicken Cordon Bleu II

Reviewed: Jul. 1, 2009
I thought I would have trouble keeping the chicken together and the cheese inside, but it was really very easy! I used toothpicks because I couldn't find cooking string. Flavor was very good!

Melt - In - Your - Mouth Shortbread

Reviewed: Jun. 23, 2009
Has a good flavor, although maybe a little too much flour flavor. Kinda crumbly, too. Mine are cooling right now. The first one I tried was still warm and crumbled a bit. But they do melt in your mouth. I added almond extract for extra flavor and extra sugar too.

Streusel Rhubarb Bread

This is the best rhubarb bread recipe my family has ever tried! Two days after baking my first batch I had to bake a second double batch because it got eaten so quickly. We even tried it warm with vanilla bean ice cream and it was incredible!!

Ooey, gooey, chocolate goodness (of course with the help of a few more morsels)...Without refrigerating the dough my cookies still did not turn out flat, they were simply delicious.

No Roll Pie Crust I

I've used this several times and am just getting around to rating it. I love this recipe, it's perfect and flaky for a last minute crust. The peanut oil is a must. I'm wondering how it will work with some rolled oats in the mixture.

Pesto Tuna Salad with Sun-Dried Tomatoes

Reviewed: May 18, 2009
Super yummy! I wanted to try this recipe badly, but didn't have pesto or basil around the house. I did have a bunch of cilantro and pine nuts, so I made up a batch of cilantro pesto. I also didn't have sun-dried tomatoes in oil, so I took my dry ones and chopped them in the food processor along with the pesto and added a bit more evoo to moisten them up. Last night I made some chipotle mayo dip for tostones, so I added that in place of the regular mayo and put in a couple of fire roasted red peppers to the tuna mix. I wish I had an avocado to top with the filling, but I'm eating it with pasta this time. YUMM! This is a winner!! Will definitely make again.

Fiesta Chicken and Rice Bake

Reviewed: May 3, 2009
I liked it, but my husband didn't. He thought 1) it was too spicy and 2)it would be better as a side dish. I kind of agree with #2. Take out the chicken and you've got an awesome rice side.

Southern Peach Cobbler

Reviewed: Apr. 27, 2009
Delicious nothing like a quick simple southern dessert. The reason I gave it four starts is because the recipe as it is is lacking a little something something as the other viewers mentioned. But next time I know it will be 5 stars as I add a little vanilla and cinnamon to the peaches.

Crispy Orange Beef

Reviewed: Apr. 20, 2009
A great recipe I gave it four stars because without the orange sauce the beef was very bland since it was not marinated (like one would do when making orange chicken). Next time I will try to marinate and then dry it out to see if there is a difference.

Cinnamon Rolls III

Reviewed: Apr. 19, 2009
What could be better than soft, chewy, tasteful, cinnamon rolls made from scratch. I made these with my mixer as I don't own a bread machine and personally I couldn't taste the difference, my husband is in awe that they are better than the store bought and retail chains. I also used active rapid rising yeast, and I proofed twice (once when the dough was made and then a second time when I cut the log into the rolls)....Other than that followed the recipe to a "t". This is a must recipe to have in any box.

Real N'awlins Muffuletta

Reviewed: Apr. 8, 2009
I haven't made the sandwiches yet, we will have them for dinner. But I'm rating the olive salad. I absolutely love it! I snuck a taste after mixing the ingredients and this olive salad is as close to Central Grocery's as you can get. I used a couple of jars of mixed pitted olives (kalamata, green and prune,) I grated the carrot and diced the pepperocini's, I wasn't sure what I was supose to do with the coctail onions by the recipe, so I put them in whole just to marinate the flavors, I won't put them on the sadwiches though. I also left out the canola and added a little more olive oil. Also, since the olives I used weren't stuffed with pimento's I added some separately to the mix. I used celery salt instead of celery seed since I didn't have any on hand. It makes a lot, so I'll be giving my sister a jar to take home. I never buy the jarred varieties of olive salad, because they just don't compare to what I expect. My sister and I were just talking about how much we missed the olive salad from the Central Grocery; this is a winner!

Raspberry Sauce

Reviewed: Apr. 7, 2009
Perfect! Took out a little of the sugar because I wanted it a little more sour. (Used only about 2-3 tbl. total) and just eyeballed the OJ but this turned out amazing!! I wanted it to have more tang than sweet because I served it with Chocolate Decadence Cake II, also from this site! WHAT AN INCREDIBLE COMBINATION!! Thank you so much for posting, it was EXACTLY what I was looking for!

Chocolate Decadence Cake II

Reviewed: Apr. 7, 2009
Fantastic! I made this for one of the girls at work and it was a HUGE hit! It does only make one small cake but to be frank, it's VERY rich (as if the 4lbs of chocolate doesn't give THAT away!) so almost everyone in the office was able to snag a little piece. (I filled a pan w/ six little tulip-shapped slots and about a half a bread pan) One thing I did notice, anyone with a strong aversion to DARK chocolate gave a 'too rich' answer. To answer some questions added by a previous reviewer on instructions. When you whip (Unless you're looking for a REALLY good work out use a mixer, not a whisk!) sugar and egg the color will actually lighten a bit to a very soft yellow and it will about double in size. Basically blend the out of it and when it won't poof up anymore, you're there. :) This cake is also VERY easy to over bake which is what would make it dry! You can't do the toothpick test on this one since there is SO much chocolate, most of it won't completely solidify until it has cooled. As the instructions say use the poke test, it shouldn't be hard but as soon as there is resistance, take it out, you're done! I'm not sure about refrigerating, however, I had to because I baked it a day in advance and I didn't trust to leave it out w/ the dog all day but I FULLY Suggest warming it up when you serve it! It will be very fudge/brownie like when cold but softens right up again if you heat it up a little. I do also agree on the suggestion for using raspberries with it.

Aussie Lime Pie

Reviewed: Apr. 4, 2009
I'm not Australian, but this pie seemed like something I would love. The first time I made this pie, there wasn't a picture and I thought I messed up the crust since it bubbled and covered the top of the pies edges. My husband loved how the crust came out though. It was delicious! My husband said he thought it tasted gormet or like a specialty pie at some fancy restaurant. My husband hates coconut though, so I left out the flakes. I love coconut, so I imagine it would have made the pie even better.
