Microwave Caramel Popcorn

Thank you for taking the time to sit down and submit this. My daughter is on a very restrictive diet for autism, and she can eat this! She's going to go crazy!!! Thank you again, and keep submitting! SECOND NOTE: I made this recipe again today and I have to comment again. This time I cut the margarine down to only half a stick (1/4 c) to save on the fat and I used a 50/50 mix of brown sugar and Splenda (still totaling one cup) to save on calories...it was still awesome! I was afraid the caramel mixture might not turn out right since I messed with the measurements, but it was still perfect!

Tomato Sauce

I cannot find anything wrong with this. I didn't measure anything but I went by the ingredient list almost to a "t", adding dried basil & rosemary. I really like this, it's fool proof and right on the mark for a home made pizza. It's not "off the charts" but well worth it.

Russian Tomato Salad

This was not a hit in the house but I won't mind finishing the leftovers. It needs something; like a pinch of Parmesan Cheese on top of each serving. Too runny for me, needs a thicker consistency, especially when using a dilly sour cream.

Chicken and Artichoke Pizza with Fresh Tomatoes

This was dry for me but it's not going to waste. I first made this with our home grown maters and then another later the same day using our neighbors yellow beefsteak tomatoes and it was a lot tastier. The taste of the pizza itself wasn't what I expected. The basil needs help. Feta cheese perhaps.

Grilled Tomato Salsa

The taste of a broiled tomato is delicious! You're not going to be able to "chop" your tomatoes once their broiled because they basically turn to mush but don't fret, they're still yummy. If you want a chunkier salsa I suggest chopping up a couple fresh tomatoes without broiling them. As for the actual taste of this salsa, it's just "alright" for me. I am not a cilantro fan but my boyfriend & roommate are and they enjoyed it very much. Too much cilantro for me and I didn't even use the entire half cup it calls for. I also roasted up a jalapeno for more heat.

Slow Cooker Lentils and Sausage

It's going to sound crazy, but my family doesn't really love kielbasa or brats, so I just used ground sausage. I browned it in the skillet and added it to the lentils like you would add ground beef to chili. It was still awesome! Great recipe!

Awesome Slow Cooker Pot Roast

So delicious! I also add a couple tablespoons of steak seasoning mixed in my cream of mushroom soup. I put potatoes & carrots in the crockpot as well to cook along with the roast.

Bacon and Tomato Cups

I thought the filling was excellent, however, I thought the biscuit crust was too doughy. I think next time I will use phyllo dough or even a pie crust. However, they were a hit at the bridal shower that I made them for and the hubby gobbled up the leftovers.

Hummingbird Cake

I made this using a yellow cake mix and then the fruit and eggs like suggested. Followed the icing recipe as directed. This was requested by a friend for her baby shower and while it isn't my kind of dessert(I'm a chocolate girl!), it was still very good to me and got raves by everyone else.

Peanut Butter Bars I

Great recipe! My daughter has to eat gluten-free and casein-free because of autism, so I replaced the graham cracker crumbs with rice krispies (crushed) and the margarine with a milk-free version. I'm sure it wasn't the same as the original version, but still really tasty!

Gobi Aloo (Indian Style Cauliflower with Potatoes)

Holy Cow this was good! I went a bit heavier than suggested on the oil and spices and threw in about a teaspoon of crushed red pepper flakes. Make sure you cook long enough for the cauliflower to be just a hair crisper than than the potatoes. Fantastic I say. I was pressed for time, so I served with purchased pitas intstead of making a naan--brushed with olive oil and heated in the oven. Served alongside some sliced, August-fresh, local tomatoes and this dish really rocked.
