Baked Parmesan Perch

This is a good seasoning for fish, I'll continue to use it with other types in the future. I substituted corn flake crumbs in place of bread crumbs out of personal preference.

Country Apple Dumplings

I wanted to make this for my girls before school on those chilly fall mornings, but I also wanted it to be a healthy, filling breakfast. I used diet Mountain Dew and Splenda instead of sugar, used spray cooking oil in place of butter, but best of all...I put down a layer of shredded cheddar cheese on the crescent roll before placing the apple wedge to up the protein and calcium (I'm sure fat free cream cheese would work too). I'm sure it's not the same as the original recipe, but it's a school-morning variation and it was absolutely delicious! Best of all, I had the pan prepared the night before so I just popped it in the oven in the morning while they dressed.

Though I like all the flavors this has to offer it was just average for me. I'd rather make an omelet with these ingredients so the tastes are recognized better. Scrambling did nothing for this dish. Despite my review, we ate every single bite.

OREO® Chocolate Cream Cheesecake

Decadent & sinful, I love it. Anything that incorporates Oreo chocolate creams gets my vote. I layered a mixture of sour cream & sugar on top of the cheesecake & scattered almond bark shavings all over the plate. Looks fantastic.

Creamy Broccoli Casserole

I noticed how many suggested cutting back on the cream cheese but I went for it, I used the entire amount it calls for only because I was planning on using a 9x13 dish. Turned out rather well. I added a small caramelized red onion into the broccoli mixture and it also turned out great. I'll make this again but not too often as it's not the healthiest way to serve up broccoli.

Dill Pickles

Ours weren't as crunchy as we'd hoped but that's probably because we didn't use a special type of cucumber. We had a bountiful harvest this year and used the excess for this recipe. We were already opening the jars after 2 weeks and they were fabulous. We had many jars to play around with; adding onions & red pepper flakes. Good stuff. We (including our 2 year old) even ate the pickled onions & garlic straight from the jars. (BTW, the smaller your cucumbers are, the crunchier they will be.)

Last Minute Mushrooms

We topped our eggs with these this morning and they were fantastic as is. I am sure cooking them with onions and Worcestershire sauce would be great too for dinner dishes. These mushrooms can add a certain elegance to whatever you're making and the simplicity helps so much.

This was very good. I omitted the brown sugar because I wanted more savory than sweet. I used sesame oil and a drizzle of chili oil instead of peanut oil. I marinated about six hours.

Candied Apples III

Just for fun I made candied apples one year at Christmas with a candy cane instead of a stick. Start a punch hole with a small paring knife then put the non-hook end into the apple so the crook of the cane sticks out. I also crushed starlight mints candies and rolled the apples in the crushed candies, mostly just for decoration (not so much for flavor). They were really pretty!

Buffalo Chicken Dip

I cut the fat and calories on this recipe by using fat free cream cheese and Hidden Valley Ranch powder instead of the actual ranch dressing. I still got the ranch flavor in there but without the fat. If it's too thick, add some skim milk.

Garden Tomato Salsa

Forget the blender and keep it chunky because it's a lot fresher tasting and has a cleaner look. I tripled the recipe actually and I am very pleased. Though I did have to drain a lot of the tomatoes' goop because it was just way too wet.

Cream Cheese Brownies I

I baked it in a single 9" round cake pan and it baked just fine at the directed time. With mini chocolate chips sprinkled on top it looked & tasted like a thick cookie; light & chocolaty. And it went well with a home made whipped cream. The cream cheese doesn't really stand out but the whole thing in its entirety is good enough to make again. My boyfriend literally ruined his dinner because of this! ;)
