Sweet Potato Pecan Pie

Reviewed: Nov. 27, 2009
Perfect amount of spices in this pie, and the sweet potatoes work well with the pecans. We didn't go out of our way to buy the hazelnut liqueur and it was still fantastic with just the whipped topping. I'll probably surprise my boyfriend with another one of these once Christmas arrives.

Triple-Cheese Macaroni

Reviewed: Nov. 26, 2009
This was a very good recipe! It was probably my favorite mac and cheese recipe that I've tried. I did make a couple of changes. I used gluten free macaroni because of food allergies and it worked great. I followed the same cooking instructions with the rice pasta and it worked great. I also used colby cheese instead of the mild and sharp cheddar cheeses. Neither of these changes will alter the taste much so I feel like I got a good sense for the recipe. It was very very good. I'm not a fan of the creamy processed mac & cheese recipes, I like the old fashioned kind and this is a good old fashioned recipe. Great flavor, great recipe. The only change I would make is to reduce the amount of mustard in the recipe. It gives it a great kick, but was a little too strong. Maybe a little less than a tbsp. I will definitely make this one again! I got lots of compliments!

Cheeseburger Meatloaf

Reviewed: Nov. 22, 2009
I didn't roll it and opted to split the beef mixture in half, make a well in the bottom and fill it with cheese, then add the top and seal all around. Didn't use all the cheese and added a little bit of Worcestershire sauce. I should have paid attention to the other reviews about letting it sit for a few minutes so the cheese doesn't goo right out. Can't wait to make again and experiment with different fillings.

Frosted Cranberries

Reviewed: Nov. 22, 2009
I LOVE Frosting fruits--grapes, etc. are great using this recipe, too. Just a suggestion, if you want to make it a bit more "decadent". I like to replace the water with brandy, cognac, grand marnier, chambord, etc. Make sure it's chilled first, though. It really adds an expensive taste and presentation to frosted fruits--and is especially nice with frosted grapes.

Balsamic Cole Slaw

Reviewed: Nov. 10, 2009
NOTE FROM THE SUBMITTING COOK: When I'm in a hurry but still want a tasty/something-different/fast side dish, I buy the bag of pre-chopped and washed shredded cabbage, along with a bag of matchstick carrots. I usually don't trust the pre-washed salads but since this is getting heated on the stove I'm more apt to give it a quick rinse then throw it in the skillet. Not the same as doing it by hand but it's great in a time pinch!

This was SO good! I browned chicken in skillet with olive oil first, used half sour cream and half mayo, sprinkled top with breadcrumbs and parm cheese, mosit and flavorful! Definitly going on the favorites list!

Chocolate Chip Banana Bread II

I used shortening as directed as I am none to bothered with it, I actually like what it does for recipes. I don't use it often but it seems that it's in some of the best dessert recipes from this site. I think there's something to be said for shortening. "Here, here", lol. Good bread, better the next day. I'm sure I'll make it again.

I very much like the texture and the size of the loaves this recipe yields, but I found it to be bland even after upping the honey and salt as recommended.

Cranberry Pumpkin Muffins

Reviewed: Oct. 31, 2009
I must have done something wrong so I'm not giving this a lower rating. I couldn't eat these, but my boyfriend did. The only modification I made was to split the sugar, half brown, half white. There was no flavor (other than the tart cranberries), didn't even have a muffin consistency, very dense, stuck to the paper lining, and didn't raise up at all during baking. I won't be trying this again. I'll stick to the cranberry-pumpkin cookies on this site.

Aunt Bert's White Cake

Reviewed: Oct. 27, 2009
This cake is excellent in terms of being moist and flavor full but it is an extremely dense cake with more of a sponge texture. I' not a fan of the density of the cake but I love the favor. I've made this cake as a cupcakes which it is far better as cupcakes then a cake! Today I made this cake and I completely FORGOT to add the vanilla but the cake came out delish anyways even without the vanilla!!

No Mayo Tuna Salad

Put it on a bed of spinach and eat as a "salad" (hence the name of this thing) if you have a hard time keeping the ingredients together. If you're goal is eating healthier you could skip the bread anyhow.

Mall Pretzels

Reviewed: Oct. 15, 2009
Delicious! Here's my substitutions - I didn't have bread flour, so used regular AP and just kneaded it longer in my stand mixer so it would produce more gluten, making them chewier. I use bread machine yeast, from a jar, so just use 2 tsp instead of the packet, and reduce the rise time by 1/2. Another reviewer said to use parchment paper...big mistake. I had to remove little bits of paper from the finished pretzels. The cooking spray the next time did the trick and they slid off smooth and easy. Oh, and the 2nd time I doubled the brown sugar, and liked the flavor even more. The almost-sweet & salty was irresistable. Thanks for a great recipe! Even my 14 yr old stepson wanted to help!

Mushroom Artichoke Sandwich

Reviewed: Oct. 10, 2009
This recipe is a copycat of a great sandwich I used to get at Penn Station all the time. I got SO TIRED of paying 10 dollars for a (delicious!) sandwich and decided to learn to make it myself. The Penn Station version uses melted provolone instead of parmesan, which you are welcome to do, but the parmesan adds more flavor than the provolone without the added fat! Also, feel free to add mayo as you like. I think it has plenty of goodness without!
