Louisville, Kentucky

Louisville is known for baseball bats, beautiful magnolia trees, the Kentucky Derby, and for being the hometown of Muhammad Ali. Its name pays homage to French King Louis XVI, who assisted the colonists during the American Revolution. Louisville is also the birthplace of several original dishes. Henry Bain sauce, named after its inventor, the head waiter at Louisville's Pendennis Club, is a sweet, tangy, spicy concoction best served with wild game or beef tenderloin. The Hot Brown sandwich was created by the chef of Louisville’s Brown Hotel. It’s an open-faced sandwich topped with turkey, tomato, bacon, and cheese sauce, and then broiled until the cheese sauce turns golden brown. Besides fast horses, the Kentucky Derby is also renowned for popularizing the refreshing mint julep cocktail (made with Kentucky bourbon and fresh mint leaves).

About me:
I'm the mother of two youngsters one boy and one girl, and the step-mom of two teen boys. I work full time outside the home. We love being outside. Whether it's camping, hiking, or washing the van we are always outside. On rainy weekends, to relax we all curl up on the couch with the kids watching movies. Sometimes we play our new favorite game "Mexican train" dominos.

Marshmallow Treats

Great basic recipe for krispy bars! You can add in anything you want, or change the cereal to chocolate or fruity krispies... This recipe in a 9x13 pan makes bars less than an inch thick. If you're wanting really thick bars, a 9x13 pan could easily hold a double recipe.

Albondigas Soup I

Reviewed on Aug. 16, 2008 by Erin Hooper
We were in the mood for soup and I just happened across this recipe! It is awesome! I used chorizo sausage and my meatballs came out really sticky and hard to roll, so maybe that's why. I wanted to put it in the slow cooker, so I simmered the meat balls in a pan with 2 cans beef broth, skimmed off the fat, and added it to the rest of the ingredients in the slow cooker. I let it cook around 6 hours on high and it was awesome. I added cooked rice to the bowls of soup as I was serving them, and topped it with some cheese and tortilla strips! Yummy!

Beef Barley Vegetable Soup

Reviewed on Aug. 15, 2008 by J. Marsh
Very filling and healthy, but this makes A TON! I think my hssband was eating this for lunch for well over a week. Next time I will either half the recipe or try to freeze some of it. I used stew meat instead of the roast and just dumped everything in the slow cooker at once. The only drawback is that it has to cook for a LONG time when you do this, but I started it late morning and just put it in the fridge right before going to bed and we ate it the next day. The flavor is always better the second day anyway so it worked out nicely.
