Chocolate Chocolate Chip Cookies III

I followed the directions exactly and these cookies really are delicious. I made these on a whim for a friend's birthday and I was pleased at how fast and easy they were to make. I know this is common sense for most people, but really keep an eye on your first batch because they will go from done to burnt very quickly. That being said, I did have to alter the time in the oven to only 8 minutes as opposed to the 10-12 minute time mentioned in the recipe. I will be making these again at Christmas time and trying some variations... rum, mint chocolate chips, white chocolate chips, and butterscotch. Can't wait!

Apricot Pork Tenderloin

This dish was so yummy! The tenderloin was so perfectly moist and the glaze was to die for. The only thing I did different was to put a fresh sprig of rosemary under and on top of the tenderloin. You will want to make sure that you reserve enough apricot mixture to pour over the finished product!

Joey's Peanut Butter Cookies

Wow, these totally fell apart, completely! I followed the recipe to the letter, and they just did not hold together at all. Tasted okay... but no better than the traditional recipe. Update: I believe the key to these being successful would be that you'd have to allow them to cool on the pan for a long time before taking them off. Today the cookies have hardened quite nicely. The taste better today too.

Strawberry Bread

This bread is fabulous. Surprisingly, even with 2 cups of sugar it isn't too sweet. I made it exactly according to the recipe and I'll make it again and again! Awesome!

Italian Cookies II

These are pretty tasty. The icing is good, but really sweet so it overpowers the ricotta a bit. It's really optional. Try it both ways.

Navy Bean Soup I

Very savory, and easily altered to your taste preference. I don't use ham very often: if I have it, I do, if I don't, it's great w/o it. I don't think the soup needs the bay leaf. Sometimes, I think people put them in becasue they are expected in soup... this one has so many flavors and spices already, it just gets lost and almost leaves a bitter aftertaste... Maybe it is mixing poorly with another spice. I add extra cayanne.

Dark Chocolate Cake I

Wow... just wow. BAKE THIS CAKE! I screwed up by trying to make it in one pan and it had trouble baking all the way. But whatever, it is sooo good. Combined it with the cream cheese icing recipe, made with 1/2 the sugar called for. Divine.

No Bake Cookies III

For me, it is tricky to get the timing down on these to make them firm. I think you should boil them for a long time. I have boiled them more and more as I make them and am up to 5 minutes and they get at least firm enough to hold to eat, but not firm enough to stack. I do follow the recipe exactly too. I stick with it because the taste is divine! The mixture of flavors is awesome.

I needed something fast to whip up and this did the trick! The only amendments I had to the recipe were that I didn't use Djion mustard, I used Southwestern Spicy mustard. This was really easy and really good.

Sweet and Sour Meatloaf

Baked Scallops

This recipe is just okay. I have had better and I think the breadcrumbs need to be wet before they are baked. The way the recipe is written the crumbs are just sitting on the scallops and not sticking. They aren't as crispy as I prefer. If you add a bit of olive oil or melted butter to the topping, it raises the flavor of the parsley and provides a nice crispy topping.

German Red Cabbage

This is such a comfort food for me. It brings me home. I eat this on top of mashed potatoes and make it a meal when no one is home. Mmmm. I did not use the apples, added red wine vinegar and used ground cloves and ground pepper rather than whole cloves and peppercorns (just for ease). So good!

Lighter Banana Muffins

I have made these many, many times and these muffins rise amazingly...so beautiful. Per other reviews, I add one extra banana, 1/4 cup skim milk, 1/2 tsp vanilla. I also add just a very slight drizzle of oil and mini-chocolate chips to half the recipe. These muffins, however, are not as moist as other reviewers claim, especially when compared to store-bought muffins or boxed recipes. They are not dry, but they are not extremely moist either. The muffins are also heavy and filling, and as another reviewer said, get tougher once cooled. Just warm them, however, if this bothers you. All in all, these are great muffins if you want a more natural and healthy one, which is why I make them all the time. They are great for snacks and for breakfast. Plus, the kiddos love 'em!
