I substituted Capt Morgan rum for the 1/2 the vanilla. This was SO GOOD. Serve warm.

I just love this recipe - it really tastes authentic! Just keep an eye on your ingredients & make sure that you are using equal parts of everything so that one flavor doesn't overpower another. Thanks for this unique recipe!

Mediterranean Shrimp Pasta

Reviewed: Jan. 7, 2004
This dish was simple and very sophisticated. A great entertaining dish. Colorful, flavorful - everybody loves it! I don't use as much pesto as the recipe calls for, nor do I use the capers. I put the olives on the side for folks to use as a garnish. FABULOUS RECIPE - thanks for sharing!!

Pan Seared Red Snapper

This was very very easy and delicious. I marinated my fish for about 20 minutes or so first at room temp, then popped it in the skillet. A keeper! Loved it! Thanks!

Black Bean And Corn Salad II

Reviewed: Jul. 31, 2003
I picked this out two weeks ago and have already made it twice! Easy and everybody LOVES it - had taco night just so I could make the salad! Used fresh corn blanched in boiling water for about 1 min. then cut off the cob - make sure and use the cilantro, it makes the salad. Thanks!

P.J.'s Fresh Corn Salad

Took this salad to a picnic and it was a hit! Blanched the corn for about 30 seconds in boiling water before cutting it off the ear and omitted the red pepper. Added dressing to taste. This was awesome!

Skillet Turkey and Asparagus

Don't add the asparagus as early as the recipe calls for - it will overcook. Add it during last few minutes for crisp/tender. This was quite good.

Easy Caramelized Onion Pork Chops

Reviewed: Oct. 22, 2002
Removed the pork chops and carmelized onion and added a bit of beef boullion to the water, plus some cornstarch, and brought it to a boil - thickened up nicely and made a great sauce to drizzle over the chops. Used salt & red pepper to coat chops and season onions. This one's a keeper!

Ground Beef Stroganoff

Reviewed: Aug. 8, 2002
Added add'l sour cream, lots of salt and pepper and dried parsley (to taste), which flavored the dish wonderfully without overpowering it. A great trick: since you only need 1/2 cup of beef broth, use the rest of the can in the water you boil the noodles in to add extra flavor - I ONLY USED 6 OZ EGG NOODLES - PERFECT AMOUNT!
