Spinach and Rice (Spanakorizo)

Fantastic! I had an excessive amount of fresh spinach that was on its last leg and this was the perfect fix. I used brown rice and added fresh crushed garlic but other than that I followed the recipe. It even reheated well...super yummy.

Tortilla Rollups IV

Brown Family's Favorite Pumpkin Pie

Outstanding! Made this for my first attempt at cooking Thanksgiving dinner and it was a total hit. Rave reviews and no leftovers! I did replace the walnuts with pecans in the streusel and added a couple extra ounces of puree. This will become my signature holiday pie.

Slow-Cooker Chicken Tortilla Soup

Perfect! I threw in 4 frozen chicken breast halves with all the ingredients and removed to shred and replaced to continue cooking. The breast were so tender they just fell apart and gave th soup a great texture. I used an extra can of broth instead of the water, used canned corn instead of frozen and just put it in when I replaced the shredded chicken. I used a medium enchilada sauce so I left out the cumin and chili powder. Husband doesn't like spicy food so I just added a little zip to mine own bowl. I used Tostitos tortillas chips instead of makin my own strips and it was yummy. Also added some sour cream, fresh cilantro and some sharp cheddar cheese. Froze the left over and it made another meal. This is a monthly at our house now!!!!

This was great! It had more of an egg flavor than I like but the texture was great. We added unsweetened applesauce and powdered sugar and it was yummy. the best part were the crispy brown pieces...can't wait to make again.

Hungry Bear Pie

Just OK. I made this over the holidays just for fun and no one was impressed. I took one slice and let everyone taste it and the rest ended up in the garbage. On the other hand this was very attractive and would be a great kid project/snack.

Banana Crumb Muffins

Fantastic! My bananas were VERY ripe and so I only used a half cups sugar and it was perfect. I did use butter instead of oil and it worked well...maybe next time I will try the oil instead. Great recipe!!!

Virginia Apple Pudding

This was good...but just. Hubby used vanilla ice cream and I did whipped cream and that was yummy. I think I will just stick to flaky, crusty pies and cobblers. Thanks for the recipe!

House Fried Rice

Great basic recipe with lots of versatility. I made my rice before so it was cold when I made the dish but it was overcooked and made the dish mushy. I am going to try it again with properly cooked brown rice and if that doesn't work I will move on to the white. It still tasted great...you can't mess it up.

Oven Roasted Red Potatoes and Asparagus

Super!!! I was looking for a recipe to use up my mismatched potatoes in my pantry and this fit the bill. This was excellent and the sliced garlic roasted in the pan and added a great flavor. I followed the cooking time and directions because I like my asparagus a soft. Will definitely be making this again!

Marinated Tuna Steak

Fantastic!!! I overcooked the steaks a bit but the flavor was super. I used garlic powder to save some time and clean up and it was fine...can't wait to use real garlic next time and will be more mindful of the cooking time and grill temp. This would be fantastic on chicken as well! Thanks!

Roasted Garlic Mashed Potatoes

I made these for Thanksgiving and they were great...I doubled the amount of garlic. This is worthy of 5 stars except that the leftovers did not reheat well...they were completely soupy to the point of being edible by spoon alone. Very disappointing considering I had so much remaining. I salvaged them by making a cheesy potato soup and including them as a thickener. Not all was lost! I will definitely make these again but will head the advice of other reviewers and cut the milk a bit.

Baked Pork Chops I

The chops turned out very moist and flavorfull but I think I ruined them by using the reduced sodium cream of mushroom. Hubby liked them but I wasn't a fan. Next time I will try them with the regular kind and rate the recipe.

A great place to start! Hubby thought it was a bit bland and I definitely agreed. Will try to liven it up next time with more spices. I used Bertolli sauce...maybe I will try a different sauce next time.

Cheese Onion Garlic Bread

Made this last night with the Slow Cooker Chicken Caccitore. It was great! I cut the servings to two but it needed more garlic and onion maybe onions. The mayo was a little much also...I will cut it back next time.

Hearty Tuna Casserole

I thought this was fantastic! Much better than the boring mushroom soup versions you see all the time. We love tuna so I more than doubled it and adjusted the mayo/sour cream to keep it moist, added a splash of milk and sauteed half of a large white onion and added it before baking. I think next time I will also bake the tomatoes in the casserole. I thought the zuchini was a strange ingredient but it added some great texture.

Angel Chicken Pasta

A great place to start! I followed the directions to the "T" and found that it was lacking so I doctored it up...fresh mushrooms, fresh broccoli, roasted red pepper, red pepper flakes, fresh garlic. It turned out great except the extra "doctoring" dried out the chicken a bit. Thanks for the great recipe!!!!

Banana Split Cake II

I took this to a cookout and people were fighting over who got to take home the leftovers! I didn't have confectioner's sugar but found that it wasn't necessary. Also, I was in a hurry and didn't use the butter in the crust. Several people compared it to the Dessert Rosa at Carrabba's. As far as ingredients were concerned I didn't skimp...extra creamy Coolwhip, Jello pudding and full-fat cream cheese. I am going to make reduced-fat/light batch...I will let you know how it turns out!

Stuffed Pepper Soup I

Ouch...I ended up putting over a cup of vinegar in the soup to counteract the sweetness and it was still too much and I hadn't even used the amount of sugar suggested. Big disappointment...maybe I will try again with little or no brown sugar.
