Bake Sale Lemon Bars

Reviewed: Mar. 30, 2008
Not much lemon taste. The crust was enough to cover the bottom of the 9x13 dish, but next time I think I am going to double the topping and add more lemon to it. As is, it is more of a "sweet bar" not lemon bar. The consistency was great, but the crust could probably go for 15 min. at 350 rather than 20 at 375. It was burnt on the edges and was hard to get out of the pan.

Magic Peanut Butter Middles

Reviewed: Mar. 30, 2008
It was a pain in the butt to wrap the middles, but if you have the patience to do it, the taste is worth it! Chill the middles in the fridge for about 40 minutes before trying to roll into balls. Also, I ended up throwing away some of the middle mix because the recipe yielded too much.. next time I will use 1/2 cup peanut butter and 1/2 cup confectioners sugar instead of the 3/4 each.

Chocolate Covered Easter Eggs

Reviewed: Mar. 21, 2008
These tasted great and are SO versatile! I made one batch of plain, one coconut, and two peanut butter. I used Reese's peanut butter, and they seemed to be the favorite! I used chocolate almond bark instead of the chips, worked great! I made these by myself which took quite a while, but I think if you have kids, it would make a great little Easter project!! Great recipe, thank you!

Ranch Ham Roll-Ups

Reviewed: Mar. 15, 2008
These had such a great taste! Added a little cheddar cheese as suggested by other reviewers. I also used onion and chive cream cheese and left out the green onion in the original recipe. Just made it a little cheaper and easier. Next time I will probably add a little more cream cheese so that I can be more liberal with the spread. They weren't as "pretty" as some of the other's I have seen, but it was my first time making them and I take fault for that, the recipe was VERY tasty!

Irish Potato Candy

Reviewed: Mar. 15, 2008
This recipe yielded 40 potato candies, each was about 2 bites. Chilling in between steps is the key! Chill them for about 30 minutes after you mix in the coconut, then chill them another 30 minutes after shaping them, chill them about 20 minutes after rolling them in cinnamon. I used 1/2 tbsp of cocoa with every 1 tbsp cinnamon for the coating. After letting it set for about 20 minutes, I brushed the excess off with a basting brush.. I HIGHLY reccomend doing that, otherwise the coating is overwhelming. If you're not a cinnamon lover, I would suggest rolling them in just cocoa, I think I am going to try that next time. As is, the cinnamon taste is WAY to strong, for kids, I would definitely try the cocoa route.

Chicken Pasta I

Reviewed: Mar. 13, 2008
If you're looking for light and healthy, this is the way to go! I made several changes to the recipe to fit the tastes of my family. This is a great base recipe that leaves room for you to add your own personal taste! I used basil, oregano, garlic seasoned diced tomatoes. I used tricolor rotinni. After cooking the tomatoes, onion and mushrooms for a few minutes, I added the cooked chicken (which I cooked in a little bit of butter and the italian seasoning)and allowed it to absorb the juices of the tomatoe. Garlic is KEY. I can't tell you exactly how much garlic powder I used because I was tasting and adding.. I did however use quite a bit. I really liked this recipe because it gave me the opportunity to make changes to suit our tastes. Since its just be and my husband, we had leftovers for 2 days. When you heat the leftovers up, it tends to be a little dry. Try adding a small amount of hot sauce OR Italian dressing, it moistened it up and gave it a little kick!

The taste of the pudding is Excellent! Next time I am going to put less whipped topping on the top, maybe just leave it off all together.. it took away from the taste of the pudding

Cake Balls

Reviewed: Mar. 9, 2008
These tasted AWESOME! I had some trouble with the coating, but that was my fault, so I still give it 5 stars. I used the chocolate candy coating, it took me 16 ounces and it STILL didn't cover all of them! The coating was SUPER thick. Like I said, they tasted great, but the coating was more of a shell... Anyone have any suggestions on how to thin the coating? Email me at Courtney6831@yahoo.com subject: cake balls. Thanks so much!!!

Cheddar Baked Chicken

My mother inlaw and husband LOVED this recipie. The only reason that I didn't give it 5 stars was I expected it to be more flavorful with the array of ingredients. However, it was still an excellent dish!I will be making it again!

Chantal's New York Cheesecake

A MILLION starts for this recipe! You CAN NOT GO WRONG with this one! This was my FIRST attempt, EVER, at making cheesecake. This is a fool proof recipie. No lumps, no cracks, it was PERFECTION! I ended up with a 9 inch with a homemade crust and a 9 inch that was premade.. I sent one home with the inlaws. This is definitely a keeper!

Date Nut Pinwheel Cookies II

Reviewed: Nov. 30, 2007
Don't roll out each dough section more than 10x14, or you will run out of filling. By the third section I figured out what worked best. I also added fresh nutmeg to make it more Christmasy. I had to use the back of a spoon to smoth out the filling on the dough. It's best to roll it out fast and before it gets to warm to spread the filling.
