The Yellowhammer State is a Deep South state situated along the Gulf of Mexico between Mississippi and Georgia. It is sometimes called “the Heart of Dixie.” The stars of Southern cooking shine on Alabama. Ribs, sweet potato pie, fried chicken, fried green tomatoes, catfish, hush puppies, sweet tea, fried pies, pralines, oysters, shrimp, and chicken and dumplings are just a sampling of the down-home cooking you’ll find in the Heart of Dixie. The pecan is the official nut of Alabama. The blackberry is the official fruit, but the peach also receives recognition as the official “tree fruit.” Honey is a big product. Alabama ranks second in the nation in farmed catfish production. But the largemouth bass is the state’s official fresh-water fish.

Lemon Sugar Tea Cookies

The lemon taste is definitely lacking. Not only did I use 3 tsp. of lemon extract, a whole lemon zested, 1 TBL. of lemon juice, I still could barely taste the lemon! So I went to put in my lemon extract and it spilled! I thought it was a squeeze top but it wasn't. I ended up using 1/2 of the expensive 1 oz. bottle. I am not a huge lemon fan and I really thought I'd have to double the recipe to make up for all the lemon poured in. Well, I kept tasting the batter and it was fine. To sum it up, yes try the recipe, definitely add more lemon, and taste the batter often! I also put in yellow food dye for a better yellow color. I drizzled yellow icing on them too to make them more inticing.

The Best Banana Bread

ok, it is in the oven now. My changes were 1/2 white and 1/2 brown sugar, 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1 tsp vanilla, sprinkle of salt. Instead of walnuts I put in a cup of chocolate chips. Can't wait to taste it, just wanted to write down my ingredients.

Creamy Au Gratin Potatoes

This is good recipe that I made a few minor changes to. The first change that I made was to dice the onions instead of cutting them into rings. The second change I made was to add diced Jalapenos. Before you judge let me explain. If you d-seed and d-membrane the Jalapenos, it cuts the heat factor way down and adds an awesome flavor. I got the idea from a dish that is served at a local steakhouse. Other than those two changes I made them according to the recipe. Highly recommended.
