Crunchy Apple Bread

I omitted the raisins and used 2 medium Red Delicious apples. I baked it in a mini muffin tin (yielded about 4 dozen muffins) at 325 for 15-20 minutes. I also topped it with a simple crumb topping (2 tablespoons butter, 1/2 cup brown sugar, 1/2 cup flour) before baking to give it a little something extra. While these weren't the most moist muffins ever, they are definitely good and worth the ingredients used.

Mango Papaya Salsa

The salsa was delicious, the only substitution I made was cayenne for the chilli paste. I thought the macadamia crust was a little overwhelming but my husband loved it. I might add few breadcrumbs to the crust next time.

Chocolate Chip Muffins

These aren't as sweet as I thought they should be. I did change it up a bit -- I did 1c whole wheat flour and 1 c white flour, so that could have been the difference. I have to say though that these are beautiful muffins and I will be making them again. I think I'll add a little more sugar next time though.
