Cranberry Orange Bread

Really good! Made muffins out of it instead of a loaf (portable!) Used 1/2 cup of orange juice, no zest, and used craisins instead of fresh cranberries. Watch the cooking time if you do muffins because the first time i made this they came out kinda dry. Will do again and may try an orange glaze next time.

Perfect Turkey

Followed this recipe for Thanksgiving this year, really good turkey. Got lots of compliments from the inlaws! I had a 20 lb turkey and I had never brined a turkey before. I started Wed. morning, washing the thing and rubbing it inside and out with kosher salt. Stuffed it with 3 stalks of celery cut up, 1 whole onion and 2 small Granny Smith apples chopped up. My mom had me worried about it being too salty so I dissolved 1 cup of kosher salt in water instead of 2, stuffed the turkey in an oven bag, poured the salt water over the turkey adding enough water to cover the bird, and put it in a cooler with a bag of ice (no room in the fridge). Let it stay all day Wed. and took it out about 9pm that night. Rinsed it REALLY good and let it drain uncovered in the fridge overnight. Put pats of butter underneath the skin and cooked it according to the directions (uncovered), breast side down to begin with and figured about 4 to 5 hours. Basted it with melted butter every hour and about 2 hours into it had to cover it with foil to keep the skin from becoming charcoal. Flipped it at about 3 hours (an experience!) and cooked it another hour uncovered breast side up. Skin was becoming a lovely brown color so I put the foil back on. It was completely done at 4 hours and was very moist and juicy. Will do it this way again next year! Thanks for the great recipe!

Cookies 'n' Creme Fudge

Wow! These were really really good. I used another reviewer's suggestion and used oreos with the red cream filling. It definitely works better to hand break the oreos into 4 pieces and discard the crumbs (I ate them - what can I say?) For those who did this and had a problem with the fudge turning orange the secret is to not stir too much. Just barely get the oreos mixed in there. There will be some bleed-thru, but it creates a nice marbled effect. Refrigerate them in an airtight container, because they will get a bit melty if left sitting out. They are even better the next day, if they last that long. Cut them into little squares because they are definitely very rich! If you are looking for a low fat, healthy dessert look elsewhere because this ain't it, but oh! So Good and so easy!! I'll be making these everytime I need to take a dessert somewhere

Spicy Peach-Glazed Pork Chops

I really enjoyed this recipe. I only gave it four stars because the sauce was way too thin. That is probably my fault though. I did decrease the amount of wine and it was still thin. But it had a super taste and the kids LOVED it. Even my mom who is super-picky about food loved it.

Green Grape Salad

We tried using Stevia instead of white sugar and it was great! We started with one packet and added just a little at a time until we reached the level of sweetness we wanted. My kids LOVE this recipe. We also used 1/2 green and 1/2 red grapes.

Sarah Contona's Sweet Potato Pie

Not too bad. I left off the marshmallows since I made it the night before our church lunch. Just before I served it I spread some sweetened sour cream on the top. The crust was not my favorite part and I will change that next time to a regular pie crust. Again, I made the filling in my food processor to get a smooth texture. I went to three stores to find light cream but no luck so I used half and half and it turned out really rich. My girls decided though that it was more like Sweet Potato Cheesecake than pie. Was it a hit at church? Well, about 100 people ate and my pie was the first desert gone and I shared the recipe with almost all of the ladies there. So yeah, it was good.

Southern Sweet Potato Pie

This was a pretty good recipe.I did make a few alterations as I went along to suit my family's tastes. I added a Tbsp of Vanilla right off the bat to get rid of the canned sweet potato taste. I slowly added sugar until I got to 1 cup and was happy with the sweetness after the corn syrup went in. I did not have the oily residue on the top that others had so I don't know about that. I also made the filling in my food processor which gave me a silky smooth texture and NO lumps from the canned sweet potatoes. My kids attacked it right out of the oven and it did not last one night. I would make it again and again.

Italian Herb Bread I

This was only the second time I have ever baked bread. I cut the recipe in half and it turned out fairly well. I had to let the bread rise a little longer than the recipe called for but that was the only change I made.

Tex-Mex Turkey Soup

Filipino Lumpia

These are delicious, a little time consuming, but WELL worth the effort and time. My husband and I made these for our neighborhood 8-8-08 (Olympics party) party and they were a huge hit !! Definitely recommend trying these.

Tiramisu Layer Cake

I made this twice and varied the recipes slightly each time. I too had trouble with the icing and getting it thick enough, but aside from that it was an easy recipe to follow. The only major change was adding Italian Strega spirits to the filling. DELICIOUS!!!

Chipotle Crusted Pork Tenderloin

AWESOME recipe!! I didn't have any chipotle so I used caynne pepper instead. It was hot and will cut down on the pepper a little next time but definitely a keeper!!! My son loved the meat but had to cut off the sides - he came back for more too! The meat came out soo tender and juicy! Can't wait to try it on chicken too!
