Cranberry Sauce

This is very similar to the recipe I have used for a long time. Instead of orange juice I use water pretty much follow the directions given. I prefer a softer version of cranberry sauce and by cooking less time[8-10 mins] I have a softer sauce. Less pectin is released and for my tastes, this is just perfect! Love it on leftover turkey [open-faced] sandwiches. Once I made fresh cranberry sauce, I decided it definitely has a much better taste and we prefer that.

Crunchy Apple Bread

I omitted the raisins and used 2 medium Red Delicious apples. I baked it in a mini muffin tin (yielded about 4 dozen muffins) at 325 for 15-20 minutes. I also topped it with a simple crumb topping (2 tablespoons butter, 1/2 cup brown sugar, 1/2 cup flour) before baking to give it a little something extra. While these weren't the most moist muffins ever, they are definitely good and worth the ingredients used.

Mandarin Pork Roast

I didn't even add the mandarin oranges and the orange juice. I'm obviously just not a fan of orangey meat!!!! Didn't enjoy this at all.

Mango Papaya Salsa

The salsa was delicious, the only substitution I made was cayenne for the chilli paste. I thought the macadamia crust was a little overwhelming but my husband loved it. I might add few breadcrumbs to the crust next time.

Mushroom Salisbury Steak

Monkey Peanut Butter Bars

Great taste - just expected the 'base' to be brownie-like consistancy. The 'base' was crumply so I will try adding another egg to help 'hold things together' next time around. Husband and the firefighters LOVED them.

Sour Cream Enchiladas

The easiest and best recipe for enchiladas! The onions were a little crispy and I didn't like it at first. After the second helping, I decided I loved the texture of the onions. I will cook this again without ANY deviations from the original recipe. Awesome!

Sausage Potato Bake

I used two cans of cream of mushroom and opted not to use the vegetable soup. I also added 8 oz. of sour cream. It was very creamy and very good flavor with using the spicy venison sausage. I think I'll try the italian sausage next time and use the vegetable soup.

Broiled Tilapia Parmesan

We LOVED this!! I have tried a dozen tilapia recipes from this site but this one blew them all away. My husband says he gives it a 4 since he's not a big mayonaise lover though he admits it didn't taste like mayo at all.

Basic Sourdough Bread

Very good. Quite moist, very soft bread. Mine turned out a little crusty and my starter is still young so not very flavorful but this is a good easy recipe I can continue using as my starter gets better! Thanks!

Spicy Red Snapper

This was a GREAT recipe! I served it with spaghetti noddles and added mushrooms. I used cajun style canned tomatos and added a pinch of the red pepper. The sauce was a little too runny for me; I will thicken the sauce with corn starch next time.

Gingered Pork Chops in Orange Juice

Good flavor until I used the orange juice. It was very strong on the orange juice side. I would suggest not using as much orange juice as the recipe calls for. Seriously - a dab will do ya!
