Several acclaimed white tablecloth restaurants grace the Birmingham dining scene, helping make the city a bona fide culinary destination in the South. Establishments like the famous Highlands Bar and Grill and the Hot and Hot Fish Club combine traditional Southern ingredients with sophisticated techniques and presentation, evident in dishes like stone ground baked grits cooked with thyme, and fried green tomatoes served with crawfish tails and remoulade. Barbecue and other casual specialties also abound. A true Birmingham institution, Pete’s Famous Hot Dogs, is renowned for the “All the Way” dog, which is smothered with sauerkraut, onions, mustard, and a special sauce.

Waffles I

This recipe was very good! I followed the suggestions of others by doubling the vanilla, doubling the sugar, adding 1/2 tsp cinnamon, and separating the eggs. I whisked the egg whites until light and fluffy and folded in last. I also used a hand mixer. The batter seemed thinner than a typical box mix, possibly b/c of the hand mixer. May work just as well using a whisk. The recipe will make at least 5 full size waffles and probably 6 if none of it ran over the sides (thin batter). The result was light and fluffy pancakes! They tasted very good and my friend said they were "the best waffles he ever had." I definitely think the cinnamon and vanilla are the key ingredients. I also noticed that the waffles are crispier if you don't spray the iron with cooking spray. If you like softer waffles, spray it every other waffle made. I also added chocolate chips to a few - Yum! Batter works great stored over night as well.

Creamy Au Gratin Potatoes

This is good recipe that I made a few minor changes to. The first change that I made was to dice the onions instead of cutting them into rings. The second change I made was to add diced Jalapenos. Before you judge let me explain. If you d-seed and d-membrane the Jalapenos, it cuts the heat factor way down and adds an awesome flavor. I got the idea from a dish that is served at a local steakhouse. Other than those two changes I made them according to the recipe. Highly recommended.

Mom's Zucchini Bread

This recipe is delicious! I tripled the recipe for family and friends (thanks to mom's over abundant garden). I cut the sugar to only 2 cups, and will probably use less next time. I subbed chopped pecans since that's what I had on hand.
