Vegetable Beef Soup

I've made this recipe twice now and the results were rather bland. The first time I made it I followed the recipe except for using beef broth instead of water. The comments were that it wasn't flavorful enough. The second time I changed things a bit: added minced garlic, Worcestershire sauce, chopped onions and dried minced onions when I cooked the meat. Omitted the onion soup mix (didn't have any). Added frozen sweet peas and green beans and some frozen hash brown potatoes. I also used an extra two cans of broth (no water). Doubled the amount of pepper. Used red wine instead of white and used 3/4 cup. Increased the cornstarch to 4 Tablespoons. The results were disappointing; just didn't have enough flavor. Sorry to say I won't be making this soup again.

New Year's Day Black-Eyed Peas

This turned out surprisingly well, especially with a few changes and additions. Soaked the beans overnight and drain. Used crumbled bacon (14 strips) instead of ham. Used 1/4 tsp. ground black pepper and omitted the salt due to using canned beef broth. Added 1/2 tsp. liquid smoke. Added 1/2 tsp. dried basil, few shakes of dried parsley and 1 bay leaf. I needed only 4 cups liquid (14.5 oz can beef broth and 1 1/2 cans of water instead of the ridiculous amount of water called for the recipe. Used minced garlic instead of powder. Used dried minced onions. Used Italian diced tomatoes and didn't puree them. Turned out AMAZING!!

Tuna Noodle Casserole II

I just made this last week and it went over pretty well. I took the advice of previous reviewers and used 2 cans of mushroom soup, halved the salt, used minced garlic and added 1 can of mushrooms, 2 cups each frozen peas and frozen corn. I used shredded Sharp cheddar instead of American and mixed it in with the rest of the ingredients. I didn't heat up the milk etc., just mixed it with the hot pasta. Used baked potato chips for lower fat. This recipe makes a TON, so plan accordingly. Leftovers hold up well too.

Beef and Parmesan Pasta

When this dish came up on the weekly menu, I had forgotten to buy the zucchini. I ended up using some frozen green beans I had on hand. I also added a bit of shredded Mozzarella cheese at the end. Instead of cooking the meat and pasta separately, I browned the meat and drained it, then added the broth, tomatoes and pasta and cooked it all together; it ended up taking longer this way. (Didn't drain the tomatoes.) Everybody liked it but probably won't make this pasta dish again. BTW there were no leftovers makes exactly 5 healthy servings.

Lentil Stew

This recipe makes a large pot of thick stew. If you don't like lentils don't try it. Keeps well. The sausage really adds a ton of flavor. I did omit the onion (picky eaters). I'll be making this soup again sometime this winter:) Thanks for posting.

After-Thanksgiving Turkey Soup

I made this recently using the carcass from my Thanksgiving turkey. I read previous reviews and added several vegetables: frozen broccoli cuts (16 oz), 4 cubed potatoes, and frozen sweet peas (20 oz). I omitted the onions (picky eaters), used skim milk in place of cream, didn't use the chicken bouillon granules, and added minced garlic. Anyway, great way to use up those turkey bones!!!

Bean Soup

I have made this soup a couple of times now and almost everyone always loves it. I only gave it 4* because I changed a few things: used 5 cups chicken broth and enough water to cover beans, used mixture of Great Northern, Pinto and Kidney beans (soaked overnight); omitted the salt and onions, used 2 cups each carrots and celery, added 1 can diced tomatoes, added 2 T. of minced garlic, 1 tsp. of liquid smoke and 2 bay leaves. I also just threw everything in the pot, brought it to a boil over medium heat, reduced the heat and simmered for 6 hours. Right before serving I stirred in about 1/2 cup instant potato flakes to thicken it up a bit. With these changes its a great soup. Also keeps well. Thanks for posting and to all the other reviewers for their suggestions.

Herb Roasted Pork

I made this dish as my New Year's Day meal and it turned out wonderfully!! Like previous reviews suggested, I used brown sugar and balsamic vinegar and tripled the sauce ingredients. I 4X the herb rub and used bottled minced garlic. I had a 4.5 lb. pork loin and it took around 2 hr 15 minutes to reach 170 degrees plus. I covered it with aluminum foiland place it on a rack so that it wasn't resting in its own juices. Next time I think I'll make a pan gravy with the mixture of the sauce and meat drippings using a little cold water and cornstarch. Even those picky non-meat lovers loved this dish. I'm looking forward to pork loins going on sale again:)

Grandmother's Punch

I have to say that my family really enjoyed this punch, even though I had to make a few changes. I couldn't find strawberry drink mix so used cherry, substituted Orange-Pineapple-Banana concentrate for the pineapple. I also ended up using to full 2-L bottles of ginger ale to stretch the juice mix. I used rainbow sherbet, omitted the oranges, and decreased the sugar to about 1 cup. The results were great. I'll be making this punch in various flavors for all of my future parties.

Sloppy Joes

I planned to make this ahead of time and then ran out of ketchup when it came time to make it. I had to substitute, of all things, Prego original spaghetti sauce. I also omitted the onions from the recipe. The results were surprising. A little sweet but still good. Even people who don't normally like sloppy joes enjoyed this. Next time I'll hopefully be able to follow the directions using ketchup but I'll probably decrease the amount of brown sugar. Otherwise a great and easy recipe. Thanks for posting.

Quick Apple Pie Bread

My family had gotten tired of my Banana Bread IV (from this site) so I made this... I've been asked to make this over and over. With the nuts (I used pecans) and raisins and small bits of apples throughout the bread its a great dessert bread or as toast for breakfast. Thanks for posting!!!

Peanut Butter Bars VI

This recipe was sooooo easy! Measure the ingredients, bring the sugar and syrup to a boil, stir in the liquid ingredients and then the cereal. The results were outstanding. I used Honey Bunches of Oats instead of Cornflakes, though. I'm sure I'll make this again but maybe vary the cereal for extra fun:o)

Quick and Easy Cheese Bread

This bread turned out great, not crumbly at all. I increased the cheese by a 1/2 cup and increased the milk by 1/4 cup. I decreased the sugar to 1 T and added 1 tsp. garlic powder and 1/8 tsp. black pepper (I think I'll use more of that next time). So easy to make and the bread was moist of fluffy; cooked exactly in the time prescribed. I'll be making this again and again!!

Hearty Meatball Soup II

I tried this last night and I made a few changes: left out the pasta, used 24 oz of already cooked meatballs, added 2 stalks of celery (chopped), added 3 cups chopped potatoes, added 1 T dried parsley, 2 bay leaves and 1/2 tsp. of black pepper, added 1 can (8 oz) of tomato sauce, used a 20 oz pkg. of mixed vegetables and omitted the can of green beans, and also added 1 extra cup of water. I served this with "Quick and Easy Cheese Bread" from this site. Everyone (except me) enjoyed the soup. Don't know right now if I'll be making this dish again though.

Easy Peach Cobbler

I made this recipe using canned peaches, omitting the water and sugar and using some of the drained syrup from the cans. I creamed together the softened cream cheese, softened butter, and cake mix using a hand mixer. The topping turned out great and the filling wasn't too sweet or watery. It went together super fast and easy. I'll be using the recipe again, maybe with other types of fruit. BTW I used reduced fat cream cheese with no appreciable difference in taste.

Cheery Cherry Compote

This recipe turned out great. I used 1 can of mandarin oranges, drained for the fresh oranges and raspberries for the blackberries. I also used unsweetened whole strawberries for the sweetened sliced. Because of this I added 4 pkts. of Splenda. I also used sugar-free gelatin. One tip I have is this: make sure the water is actually boiling, then mix with gelatin and then POUR over frozen strawberries so that it is easier to thaw them. Delicious recipe and you could easily change the flavors using different canned and fresh fruits. Will be making this again. BTW this recipe makes a lot!!!

Florida Key Lime Pie

I love Key Lime Pie and I was looking for an easy no bake recipe and this is it!!! Although the filling seems to be enough for two pies. I increased the juice to 1 full cup and used 2 tsp. of zest. For the topping I mixed frozen whipped topping (8 ounces) with 1 brick of cream cheese, 1/4 cup white sugar (was out of powdered sugar), and 1 tsp. lime zest. This also made enough for two pies. So, after pouring the filling into the crust and spreading the topping on, just pop it in the freezer for a couple of hours to firm up. Delicious; make sure you cut small pieces because this is definitely fattening. Oh well still good if not good-for-you!!!!

Spicy Orange Beef

My sister took one bite of this dish and had to spit it out. All you can taste is orange. However, I did have to leave out the onions and red pepper flakes because of picky eaters. I'm actually the only one who liked the dish. I guess that means the Leftovers are all mine. LOL

Cherry Angel Trifle

I made this last night and it received mixed reviews. That's why I gave only 4*. I made a few changes to the original recipe. I added a layer of prepared (but not refrigerated) vanilla sugar free fat-free pudding (mixed with 1/4 tsp. almond extract and 3 packets of Splenda brand sweetener) between the cherry syrup and the pie filling (to which I also added 1/4 tsp. almond extract). I bet this would be good with either fresh lightly sweetened fruit or somed toasted chopped nuts. Other kinds of fruit pie filling and gelatin combos would probably work well. Anyway thanks a lot for the inspiration and the recipe.

Creamy Blueberry Pie

I just made this the other day. (I'm testing recipes for Thanksgiving; my sister requested blueberry pie.) This has just made the menu!!!! I used 24 oz partially thawed, undrained (oops) frozen blueberries. The second I spooned the egg/sour cream mixture over the berries they finished melting and I ended up having to scoop some out and not use all of the filling (no biggee). I also didn't use all of the topping, this recipe makes a lot. I followed the advice of previous reviewers made the following changes: used 3/4 cup white sugar, 2/3 cup reduced-fat sour cream, 1 tsp. vanilla, and 1/4 tsp. ground cinnamon in the filling; in the topping I used half white and half brown sugars (for total of 1/2 cup), and added 1 tsp. cinnamon. The results were wonderful (allowing for the non-draining mistake). I did have to cook longer than called for (about 20 minutes more). The pie holds together well when cut (after cooling a couple of hours, of course). Not too sweet, not sour creamy at all... Beware this goes fast so you might want to bake up 2 of them!!!!!
