Cherry Crunch

I made this after reading the reviews and made some fatal mistakes. I increased the crust ingredients to 1 1/2 cups oats, 1 1/2 cups flour and 3/4 cup butter. This made entirely TOO much crust. I baked the crust for 10 minutes before adding the filling (used blueberry) and the top crust; this didn't seem to make a difference in the end product. We also didn't like the blueberry flavor, maybe the original cherry or apple flavor would work better. Anyway, I won't be making this dish again.

Daria's Slow Cooker Beef Stroganoff

I made this recently and it went over quite well. I didn't have steak so I used ground beef, cooked and drained. B/c the meat was already cooked I only slow cooked the sauce/meat mixture for 2 hrs on high. Then I added 4 oz cream cheese along with the sour cream (8 oz light) and 8 oz par-cooked egg noodles and continued cooking for another 30 to 45 minutes. To the sauce I added another can of cream of mushroom soup, 2 extra cans of sliced mushrooms, used beef broth instead of wine, water and bouillon, increased the garlic to 2 cloves and the Worcestershire sauce to 1 Tbsp. The only complaint I had was that it needed more sour cream; maybe b/c I used light. I would use the full amount of light sour cream (16 oz) next time. Anyway, still pretty good and something I'll be making again I'm sure:)

Vegetable Beef Soup I

I made this recipe using pork b/c it's what I had. I used tomato-vegetable blend instead of just tomato juice. I added one can of stewed tomatoes cuttup and I cooked it in the slow cooker for 1 hour on high and then 4 hours on low. Next time I'll cook it for 6 hours total; the potatoes weren't quite cooked. Besides that problem this soup received a good grade from the family. I'll make it again next fall.

Broccoli Chicken Roli

Overall this dish received rave reviews, but not everyone liked it and I didn't follow the directions for the wreath just made little pocket sandwiches. It makes a lot of filling so I used 3 pkgs. of crescent roll dough. I omitted the onion and green pepper and simply increased the broccoli. Baked for 15 minutes at 400 degrees and they were done.

Lentil Chili

I was looking for a recipe for which I had all the ingredients in my cabinet and found this little gem. These are the changes I made: used ground beef and beef broth, used 2 T chili powder and 1/2 T cumin, added 1/8 tsp. red pepper, 1/2 tsp. liquid smoke, 1 tsp. oregano and omitted the onion (picky eaters). The dish didn't take very long and tasted great. This was a wonderful dish to make when I didn't want to go to the grocery store. I'll probably make this again, but it is more likely that I will stick with regular chili.

Tuna Broccoli Roll Up Casserole

I made five servings out of this dish but i changed the proportions of the filling and sauce to the tortillas. I used 5 large tortillas. I doubled both the sauce and filling ingredients. I used a 14.5 oz can, drained, of diced tomatoes. I spread about half of the remaining milk mixture on bottom of pan (after making the filling). I added 1/4 tsp. pepper to both the filling and the leftover milk mixture. I filled the tortillas, placed them in the pan, and spread the extra filling over the tortillas, then continued as written with the French-fried onions and tomatoes. This dish was OK not great. It seemed to be missing some flavoring, a little bland. Maybe I'll experiment with spices a little next time, if there is a next time. Anyway, a good recipe with room for improvement.

Tropical Fruit Slush

I made this recently and I followed the directions precisely. BTW make sure you completely cool the sugar water or it won't be semi-frozen (slushie) in 8 hours. Anyway, the taste was great melted or semi-frozen. Next time I'll drain the mandarin oranges first. I'll definitely be making this many times this summer, maybe with different kinds of fruit.

Vegetable Lo Mein Delight

I gave this only 4* b/c I made quite a few changes based on previous reviews. For one thing I doubled the recipe since I was cooking for 6, BIG mistake; this recipe makes tons:)I also made the following changes based on other reviews: 1) increased the sauce using following amts. 2 cans chicken broth, 6 T cornstarch, 1 cup soy sauce, & added 2 T oyster sauce; 2) used only 2 cups of chopped celery, 3) used 8 oz sliced fresh mushrooms, 4) used 3 cups chopped green bell peppers, 5) omitted the onion, 6) used 2 drained cans bean sprouts, 7) used 16 oz frozen cut broccoli for the snow peas, 8) cooked the vegetables in half sesame oil and half peanut oil, 9) added 1 T minced garlic and 2 tsp. grated fresh gingerroot to sauce mixture, 10) used spaghetti for angelhair b/c of picky eaters, and 11) added 10 oz matchstick carrots from produce section after I finished cooking the vegetables. Stirred all together and served with hard chow mein noodles and mini chicken egg rolls. Everyone loved it and the leftovers held up well.

Maple Caramel Bread Pudding

I followed the directions as written for this recipe (for the most part) and it turned out great!! Used skim milk, increased the cinnamon to 1 tsp. and nutmeg to just under 1/2 tsp. (BTW don't increase the nutmeg unless you really like nutmeg) and that's all the changes I made. Very easy and fast to make. Probably be making again.

Hearty Ham Casserole

I made this tonight and it received mixed reviews. Most of the family said it was OK, but one person really liked it. Here's what I changed based on previous reviews: (1) used 3 cups frozen hash brown potatoes {cubes no shredded} pan-fried in a little olive oil with the chopped ham, (2) used 3 cups chopped ham, (3) added 1/2 tsp. salt at the end, (4) used 2 cups of skim milk, (5) used 1/4 tsp. pepper, (6) substituted 2/3 cup chopped green bell pepper for the onion, (7) added 1 Tbsp. minced garlic & 2 tsp. dried oregano & 2 tsp. dried basil & 2 tsp. dried parsley flakes to the saute with the green pepper, (8) used just over 8 ounces of Velveeta cheese and added it to the white sauce. It wasn't soupy like others have said. The sauce was nice and thick right out of the oven. I found the corn to be a little out of place, however. Also I cooked everything in the same skillet so it was easy clean up. Anyway, an easy way to use up that leftover Easter ham.

Rita's Sweet Holiday Baked Ham

I recently used this recipe for Easter. It was a little last minute because I'm used to buying hams that come with a glaze packet and this one I got as a gift so I didn't realize it didn't have one until the day before Easter. I found this recipe and saw that I had most of the ingredients on hand so I gave it a whirl. I didn't bother with the oven bag {b/c I didn't have one lol}. I didn't have any ginger ale so just used the pineapple juice from the can of slices. I also studded the ham with whole cloves for a little spice. Followed the recipe for the sauce otherwise. Baked @ 200 degrees for 6 hours and basted a little bit during. The results were amazing!!! Even those who normally don't like ham loved this one. The ham didn't absorb all the liquid despite what the recipe says, though. Next time I'll use cornstarch and make a proper thick sauce but this time we just used the leftover liquid as a kind of dipping sauce and it was delicious. Thanks Rita you saved the day and maybe made it a little better!

Pancake and Sausage Casserole

I was looking for a recipe (for dinner) that I could use some venison sausage I received as a gift and you wouldn't necessarily know it was venison. Found this and it sounded perfect. I read the previous reviews and made a few adjustments: doubled the sausage, cook the casserole in a shallow (1' deep) cookie sheet for 25 minutes. It came out perfect. However this recipe makes a ton and the 5 of us ate maybe 1/3 of it. Leftovers are good, though. When I make this again I'll halve the recipe and use a smaller cookie sheet. Served with Suppertime Egg Burritos {from this site} & lots of syrup. It tastes a lot like a McGriddle without the eggs. Thanks for this fabulous and easy recipe.

Suppertime Egg Burritos

My brother requested breakfast for dinner and so I got on the computer and found this recipe. I wasn't sure about it but gave it a try anyway. WOW! It turned out great and wasn't too hard to make. I did make a few changes (BTW I doubled the recipe): (1) used 6 eggs instead of 5, (2) used only 2 cups of egg substitute, (3) omitted the cream cheese & onion all together, (4) used 2/3 of an extra large green pepper, (5) used 8 oz sliced fresh mushrooms or about 3 cups, (6) added a generous amt of milk to the eggs {didn't measure}, (7) I made Pancake and Sausage Casserole to go with this and used the same skillet that I browned the sausage in {uncleaned} to cook the veggies. BTW I didn't serve this right away {we're all on different schedules and don't normally eat at the same time} and it held up well on the warming zone on my stove. Just warm the tortillas as needed and you're good to go:) Thanks for posting.

Barbecue Beef Cups

This recipe is so simple! It's kind of like sloppy joe in a biscuit. The only changes I made to the recipe were these: (1) mix cheese into the beef not on top, (2) omit the onions b/c of picky eaters, (3) bake the biscuit dough by itself for 2 minutes then add the meat mixture then bake for 12 minutes. I would advise that you pick a BBQ sauce that you really like b/c that's what it will taste like. Thanks for posting this incredibly easy (and very few dishes used) recipe:)

Cherry Enchiladas

I've made this twice now and each it gets good reviews. I do make a few changes though: (1) double the pie filling, (2) add 1 tsp. of almond extract to the syrup, (3) add 1 tsp. almond extract to the pie filling, (4) refrigerate for only about 6 hours. It turns out great and its so easy to put together. i think it would be good with other pie filling/nut combinations. Thanks for posting.

Honey-Oat Pan Rolls

These were so easy to make. Even for me, a newbie when it comes to yeast breads/rolls. I read the previous reviews and so I made it easier on myself and simply proofed the yeast in the warm water for 10 minutes while I melted the butter and mixed that with the honey. Then after the ten minutes were up I added the honey-butter mixture to the yeast water and proceeded with the rest of the recipe. Very easy dough to work with (if a little sticky, next time I'll add a little more flour). BTW, I didn't have any whole wheat flour so I used AP flour for all of it. These little rolls also reheat well. I put them in my oven at 170 degrees on a cookie sheet covered with foil and let them hang out until all the different members of my family were ready to eat; they were warm, crunchy on the outside, and soft on the inside. I bet they'll freeze well too. Thanks for posting, I'm also looking for a new bread recipe to try out.

Sausage Broccoli Chowder

I made this recently and am giving it only 3* because I hated it but everyone else seemed to like it OK. I read the previous reviews and doubled the carrots and broccoli. I ended up using link Italian sausage that I peeled and crumbled in the skillet, so the pieces of sausage were of varying sizes (from rather large to small). I omitted the onion, used 7 oz dried tortellini, cooked for the pasta, added only 4 cups of skim milk. Because I used skim milk instead of cream and the family was anxious to eat dinner (ALREADY), I used a few Tbsp. of cornstarch and cold water to thicken the chowder. I didn't measure on the cheese just threw in a Three-cheese blend (Asiago, Romano, and Parmesan) of shredded cheeses by the handful (several). Anyway, the others liked it and I didn't. Make this recipe at your own risk. Wonder what I could do to fix it. Maybe use the right sausage? HAHAHA So, thanks for the chance to experiment; they don't always work out do they:)

Easy Cheesy Vegetable Soup

The first time I made this soup, I decided to add some meat (1.5 lbs of boneless sirloin steak, cut up). I cooked the meat in the soup pot and seasoned it with pepper, minced garlic, and Worcestershire sauce. I didn't drain the meat just followed the directions from the beginning. ****The second time I made this I left out the meat altogether. For the veggies, I used 6 instead of 4 potatoes, 16 oz frozen broccoli cuts, and two bags of the blend called for in the recipe. Added half of the frozen veggies with the potatoes and the other half with the canned soups and cheese. This allowed some of the vegetables to melt into the background, but you still have some cooked only slightly which gave some bulk to the soup. I must admit I loved this soup both ways I made it. I'll be making this again for sure:)!!!

Fettuccini Alfredo II

In the opinion of my family, "it tastes OK but I would not want to eat it again." First of all I tripled the recipe except for the pasta (I used 21 oz of dried cheese tortellini). I wanted plenty of sauce and we're a big family. The sauce didn't thicken as expected, until I added it to the cooked pasta and chicken (I cooked chicken early to add some protein to the dish). The problem with the taste IMHO was TOO MUCH GARLIC!!! Besides changing the pasta I followed the recipe as written and it took a great deal longer to cook than suggested in the directions. Sorry, but I'm still looking for a good low-fat Alfredo sauce:(
