Pesto Cream Sauce

I had some leftover store-bought pesto and needed something to do with it so I found this recipe. I did however make a few changes based on what I had: used tomato-basil fettuccine for the pasta, 1 can diced tomatoes for fresh, omitted the onion (picky eaters), used 16 oz fresh mushrooms (didn't count), only 3/4 cup of pesto, 6 T of butter instead of 1/2 cup, used bottled minced garlic for the sliced, added 1 tsp. onion powder and used 1/2 tsp. garlic salt for the salt. I also changed up the cooking instructions a bit: sauted the mushrooms in place of the onion the added the flour and cooked for 1 minute before adding the milk and stirring until smooth. I then followed the directions as listed. It turned out wonderful. The flavored pasta I used especially added to the dish, but regular linguine would probably be fine. Thanks for posting this recipe I enjoyed making it for my family!

Bacon Quiche

This was just ok. I did add an extra egg but I don't think that was necessary. I also added green onions and broccoli. The onions were great but the broccoli got too mushy. I will look for other quiche recipes.

Lemon Poppy Seed Bread

This went over well. Its not a favorite but still well liked. I made a few changes based on previous reviews. Increased the poppy seeds to almost a 1/4 cup. Used 1/2 lemon juice instead of lemon extract n the cake and decreased the milk to 1 cup. Decreased the oil to 1 cup and used half oil and half applesauce. Added 1 T lemon zest and 1/2 tsp. baking soda to cake batter. Baked in Bundt pan @ 325 degrees for 1 hour 15 minutes. Decreased sugar to 2 cups. Came out great and didn't stick to the pan at all. Probably make again the next time we're in the mood for lemon-poppyseed flavored something:)

Banana Split Bread

This has become my most liked quick bread/dessert bread. I used 4 bananas. Made 3-8x4" pans, used applesauce for shortening and pecans for walnuts. It went over amazingly well!! Next time I make it (and there will definitely be a next time) I'll use a little less chocolate chips, but otherwise its great. Thanks for the posting this unique and fabulous bread!!!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This went over really well. I made it last night and I tried to lower the fat too!! I used reduced fat cream cheese, skim milk, and less butter than called for (about 1/2). Subbed chicken for shrimp. Doubled the sauce ingredients (except butter), used skim milk (heated in micro) for boiling water, added 1 tsp. dried chives, 1/2 tsp. black pepper, 1 tsp. salt, 1 can drained diced Italian tomatoes, 1 cup Parmesan cheese at the end and added 2 cups frozen peas to cooking pasta in last 2 minutes to boost the veggies. Don't worry if the sauce looks a little thin; it thickens as it sits. Thanks for posting this dish; I'm sure I'll get requests to make this one again.

Simple BBQ Ribs

I always read the reviews of the recipe before making it and take the advice of the writers. So I made a few changes to this recipe but I think the original recipe would be equally good so I'm giving it 5*. Here's what I did. Added to the boiling water the following: 1 cup soy sauce, 1/4 cup Worcestershire sauce, 2 tsp. liquid smoke, omitted the salt b/c of the soy sauce, added 1 large onion cut up, added 2 large carrots cut up. Boiled for 45 minutes; then took off the heat and let sit, covered for 3 hours in the broth. Baked for the prescribed time (needed 1 hour 10 minutes) and they were fall-off-the-bone tender. Will be making again when this kind of ribs goes on sale.

Pepperoni Pizza Pita

I made these recently for my family and they were a big hit. I brushed the pita bread with "Garlic Butter" (from this site) stuck it in the preheated oven for a couple minutes to crisp it up then took it out spread it with "Exquisite Pizza Sauce" (from this site), cheese and desired toppings (I let everyone choose there own pizza-pita) and popped it bake in the oven until the cheese was melted. So easy and fun. I'll be keeping the fixings for these on hand from now on. Great idea, thanks for posting.

Exquisite Pizza Sauce

Great sauce!!! I did, however, make quite a few changes based on previous reviews; here's what I did. (BTW tripled the recipe) used brown sugar for honey and used 1/4 cup, for the anchovy paste (which I didn't have) I used Worcestershire sauce in the same amount, omitted the onion powder and added 1/4 cup dried minced onion cooked in a skillet with a can of drained (with liquid reserved) diced tomatoes in 1 T olive oil until soft, for herbs I used 2 tsp. each of oregano and crushed roasemary and basil (didn't have the marjoram), for the peppers I used 2 pinches of each. I also made the sauce the day before using a refrigerated until ready to use. It turned out great; nice and thick. Not runny at all. I'll be using for all my homemade pizzas from now on.

This was good but I wouldn't make it again. For the cheeses I used packaged shredded Mexican-blend cheese that included both Monterey Jack and Cheddar cheeses. I also wanted to minimize the mayo taste so split the mayo amount with sour cream. (Still too mayo-y) I also soaked the fish in whole milk and lemon juice for several hours and it really helped cut back on the fishy taste, but my picky eaters still complained; still in the hunt for the fish recipe for non-fish lovers. HA-HA!! BTW used Pollock b/c it's what the store had that day.

Divine Spaghetti Sauce

This sauce was a disappointment. The bell peppers were overpowering and there was too much bay flavor. Also, it gave several people who ate it gas. I'm still on the look out for THE spaghetti sauce. BTW except for using the crock pot and reducing some of the flavorings (not the bay) I followed the recipe.

Chap Chee Noodles

I found the cellophane noodles at Big Lots and so I needed a recipe that called for them and found this little gem (I like to experiment with different ingredients and styles of cooking). It literally took (including chopping) 30 minutes to put together {after letting the meat marinade all day}. I scaled the recipe to work for 1 lb. of steak, but used only about 7 oz of noodles. After soaking the noodles in warm water for 5 minutes I drained them and rinsed in cold water then cut them up really well with my kitchen shears. After reading the reviews I made the following changes: subbed a packaged coleslaw mix (16 oz) for the Napa cabbage and spinach, omitted the salt, subbed canned sliced mushrooms for bamboo shoots (it's what my store had), added 16 oz frozen thawed broccoli cuts and about 1 cup frozen thawed green beans, and b/c some of the comments were that this dish turned out a little bland I added 2 T oyster sauce and 1 tsp. chili sauce with garlic (BTW I decreased the pepper to 1/2 tsp. for the sauce, don't forget that I scaled the recipe for 1 lb. of meat). Turned out great; served with crunchy chow mein noodles and egg rolls. The flavor was both sweet and slightly spicy. I could only give 4* b/c my sister isn't fond at all of anything even remotely spicy; I give it 6*!!! Hopefully I'll be able to find these noodles again b/c I would definitely make this again then:)

Honey Roasted Red Potatoes

I'm rating this 5* even though I changed it up quite a bit b/c we loved it so much. Here's what I did: 5 lbs. red potatoes cut up pretty small, 1 cup and 2 T peanut oil (for the butter), 3/4 cup honey, 1 rounded T dry mustard 1 tsp. salt, 1/2 tsp. black pepper, added 1/4 tsp. chili powder, 1/8 tsp. crushed red pepper flakes, 1/2 tsp. garlic powder, 1 tsp. crushed dried rosemary. Mix all together and drizzle over potatoes in greased pan; then, sprinkle with several handfuls of cooked real bacon bits. Baked for 40 minutes covered and then for 25 minutes uncovered @ 375 degrees. Next time I think I'll use less oil as the final result was a little greasy; but, the potatoes were perfectly cooked in this amount of time and this was the right amt of heat and sweet and spices. I'll be making my version again soon. Thanks for the inspiration and the reviews which helped create this incredible dish.

Cranberry Pork Chops

This chops turned out AMAZING!!! I seasoned them individually before putting them in the crock-pot w/salt, freshly ground black pepper and garlic powder. Otherwise I followed the recipe. They were falling off the bone and had incredible flavor. They didn't really taste like cranberry sauce; they just tasted good! BTW I used apple juice and only cooked for about 6 hours (my slow cooker tends to cook a little faster). They also were great as leftovers two days later. Will DEFINITELY be making this easy and delicious pork chop dinner again, maybe with rice for the extra sauce... Anyway, thanks BUNCHES for posting.

Biggest Bestest Burger

Not sure I should review this recipe b/c I changed it so much but it turned out so well that I thought I share my ideas with everyone. Used 4 lbs. meat (and made 9 burgers), 1 1/4 tsp. black pepper, for the onions I used 2 tsp. onion powder [might use more next time] , 1/2 tsp. salt, omitted the basil and bread crumbs, used 6 T of Parmesan cheese, used 3/4 cup Bulls-eye Sweet and Tangy BBQ sauce, added 4 eggs [beaten], added 3 T Worcestershire sauce, added 2 T liquid smoke flavoring b/c I cooked them indoors on a griddle. Stuck the formed patties in the freezer for 15 minutes to try and firm them up. They still fell apart a little on the griddle. Next time I'll DEFINITELY make them smaller. But the taste was outstanding. I'll be making my version of these burgers again!!!

Lighter Fettuccini Alfredo

This was amazing. I scaled the recipe for 12 servings but only used 16 oz fettuccine b/c I added 16 oz frozen (thawed) broccoli cuts, 2 cups frozen peas, and 1 pound cooked shrimp. I increased the garlic to 2 tsp. and added 3/4 tsp. black pepper. The directions were a little unclear so here's what I did. Cut up the margarine and Neufchatel cheese and place in large saucepan with skim milk and minced garlic on medium heat stirring occasionally until butter melted, then stirred more often until the Neufchatel was a smooth creamy consistency. Next I added the onion salt, garlic powder, black pepper, and Parmesan cheese and whisked until smooth and melted turning the heat down to low. Once the sauce was finished I added the cooked shrimp and let heat through (about 2 minutes). Removed from heat and added cooked fettuccine with vegetables (which I cooked together by adding the broccoli for the last 4 minutes and the peas for the last 2 minutes to the pasta water). I'm glad I doubled the sauce recipe b/c it thickened up even more after it sat (on the warming zone on my stove) for a little why. Served with Parmesan Herb Bread (from the site). Will DEFINITELY be making this again; even though the shrimp was GREAT I might try chicken next time. Thanks for posting this low fat tasty alternative to this great dish.

Apple Spice Snack Cake

This dessert received mixed reviews from my family. Almost everyone raved about it but one person felt it had a weird aftertaste. It was also rather crumbly in texture for cake. Here are the changes that I made after reading previous reviews: substituted 2 Tbsp. apple butter and 1 Tbsp. applesauce for the vegetable oil and topped with store bought whipped cream cheese frosting. Next time (and there will be a next time) I'll add another egg (or use egg substitute and XX of it to cut out the fat even more) to keep it from being so crumbly. Lemon Pie I

Before I made this, I read the reviews and made a few changes(that's why I gave the recipe only 4 stars). I increased the lemon juice to 2/3 of a cup, added 1 1/2 tsp. lemon extract, added a few drops of yellow food coloring, sometimes make the crust from scratch in a 9" springform pan, and sometimes top the pie with a layer of whipped topping and a sprinkling of the leftover crust mixture. It's always well liked by the family. I have made this many times and will continue to do so!! Thanks for posting and for the helpful reviews:)

Barbeque Chicken

I changed this up a bit, but still thought I would review to give some advice to other cooks. I used boneless chicken breasts instead and so cooked it differently: baked at 350 degrees for 20 minutes, then added cooked sauce and baked for additional 25 minutes. For the sauce I made a few additions: Add 1 pinch red pepper, 1/2 tsp. garlic powder, used 1 tsp. salt, used 2 Tbsp. of apple cider vinegar, used 1/4 cup water, used 1 Tbsp. lemon juice, and used 1 Tbsp cornstarch mixed with 1 Tbsp. water to thicken the sauce after simmering for 15 minutes. everyone loved the sauce and the chicken turned out nice and moist. I'll probably be making this dish again with my changes.

Peppery Cheese Bread

I doubled this recipe to make two loaves. I also used cubed (small) extra sharp Cheddar cheese (16 oz) instead of shredded. I mixed the cheese and pepper with the flour to make mixing easier; next time I will mix in the pepper with the main ingredients before adding the flour and cheese. I'll also make three 8x4 loaves instead of two. I dusted the pans with Parmesan cheese on all sides as well as sprinkled Parmesan on the top of the loaves. Allowed 2 hours for the rise. One note: the middle may not be done even if the crust looks done. However, I'll be making this bread again and be prepared it goes fast:)
