Very tasty. I followed other suggestions and added minced onion, Italian seasoning, dried basil, garlic powder, and a dash of paprika. We used quinoa elbow pasta. Very healthy and yummy.

Brown Sugar Chocolate Crackle Cookies

Reviewed: Jun. 21, 2009
I've made them twice. The first time they turned out great, tasted like cookies. The second time they were a little too soft, more like brownies in cookie shape. overall they are like brownies, smelled like brownies when baking. A little sweet.

Seven-Layer Gelatin Salad

Reviewed: Jun. 21, 2009
It was really pretty easy even took a lot of time. I used the four flavors called for, but sugar free type, light sour cream, and only 1/2 cup of sugar. For each layer, I waited about 45 min for it to set. It was very beautiful and tasted summery! A light dessert for summer! However, if not for people who like gelatin, they could be skeptical about eating it, even though they keep saying how pretty it is...

Easy and Delicious Chicken and Rice Casserole

Reviewed: Jun. 20, 2009
This is really good! I followed some of the other reviewers' suggestions, putting chicken in the bottom, mixed the rice with the liquid, didn't use soup mix, poured the whole thing on the chicken, sprinkled the top with a some herbs, and baked for 1.5 hours. It was soooooooo good!! Made it for a friend who just gave birth to her daughter. She loved it!!

Taco Soup III

Reviewed: Jun. 18, 2009
I love this soup! My roomie and I make this all the time. It makes a ton of food and we eat on it for several days. It's perfect for the winter. I always use corn, though, instead of hominy, and also add black beans. It's extremely easy to make and it's my all-time favorite easy meal. I think I will make it tonight, even though it's summertime!

Best Brownies

Reviewed: Jun. 18, 2009
These are yum!! I "stirred" my batter by hand (don't have a mixer). The batter was thick actually and better to mix by hand and prevent the overmix problem. I mixed all the dry ingredients together before putting them into the wet ones. Baked mine for 25 min. When it just came out of the oven, it felt cakey (couldn't wait for it to cool so I had a little bite). But after it cooled, it's really chewy. I made it as the recipe calls for (skipping the frosting part) because I was trying a new recipe. I'll make a bigger batch next time. This is a really good recipe, easy and quick, and most of all, DELICIOUS!! Worth keeping!!

Todd's Famous Blueberry Pancakes

Reviewed: Jun. 18, 2009
This is so good! Light and fluffy. I'm used to plainer food so this worked well for me. For those of you who prefer more flavor, you might need to add more sugar or have it with syrup. I didn't have any blueberry so I just made it as it is without the berries. I paired the pancakes with strawberry reserve and coffee. So yum!!! My first time making pancakes and this is so easy. Next time I'll probably add some cinnamon.

No-Bake Haystacks

Reviewed: Jun. 16, 2009
This is easy and yum. I didn't use peanuts because I don't like them. The reason I gave only three stars is because they don't hold together beautifully. My guess is that it lacks condensed milk to hold... like other similar recipes call for.

Chocolate Cherry Cake III

Reviewed: Jun. 8, 2009
This is one of the first recipes I learned to make as a teenager. It is so good, and I make it for every work/friend/church gathering I'm invited to! It always gets rave reviews. It is so easy! They only thing I do differently is add more chocolate chips in the icing. I add 1 whole bag, and it makes the icing almost like fudge. SO GOOD! I am a chocolate lover, and this cake never fails. It's best when it's cold and has been in the fridge for a day or two.

Guacamole

Reviewed: Jun. 8, 2009
This is a great recipe! It's fun to mix it up sometimes, too, and to add whatever's in your cabinet. I used seasoned salt and also some Mexican seasoning I had to give it a bit of a kick without being too spicy. Also, thanks to the reviewer who gave the tip about leaving the pit in the bowl! The pit, along with the lime juice, kept this fresh for the whole weekend. No more brown guacamole for me!

Roasted Sweet Potatoes & Onions

Reviewed: Jun. 8, 2009
Very tasty!! I substituted the amaretto with orange juice and didn't put almonds in (because I had none). I baked it uncovered for 50 min. It still came out soft... I was hoping it to be crispy. But anywho, this is really really good. I will make it again and again. Will try different baking time to see the best results. Thanks for the recipe!

Easy Chicken Enchiladas

Reviewed: Jun. 6, 2009
Yummy! This the is same recipe my mom uses, although she says she makes them a bit different each time! It's hard to find recipes that don't require a can of enchilada sauce. I do not like that at all! The sauce made from the soup, cheese, and sour cream is much better. I even added a bit of cream cheese. These make a lot of food. I had two pans and my friend nearly ate one whole pan by himself.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

Reviewed: Jun. 2, 2009
These were really good, hearty cookies. I used crunchy peanut butter and chocolate chips. They were very good, but not as sweet as some other choc chip cookie varities. They are a very interesting addition to classic standbys like choc chip, oatmeal, or pb cookies. I adore all forms of chocolate and cookies, though, and these were great! I took them to work and people ate them up very quickly. One coworker described them as scrumptious!

Barbequed Chicken with Citrus Yogurt Marinade

Reviewed: Jun. 1, 2009
I didn't carefully measure the lemon and orange zest, so maybe I just used too much. Or, maybe I let it marinate a bit too long - almost 48 hours because we unexpectedly couldn't cook it when we planned to. Whatever it was, my fiance said the chicken had a nice flavor but the outide and the marinade had too strong of a citrus flavor.

Chili-Roasted Kale

Reviewed: Jun. 1, 2009
Wow! This was so so good! I had no idea what to do with the kale in my green grocer box last week. I didn't want to make a soup or stew, which seem to be the most common recipes using kale. I was careful to very lightly but evenly coat the pieces in olive oil. It was so good, I'd buy kale at the store just to make it again!

Cherry Tomato Corn Salad

Reviewed: Jun. 1, 2009
I found this salad to be a tiny bit plain - as if it needed some salt or other flavoring. I had to give it 5 stars though because my fiance loved it so much! He asked me to make it again soon and to make it for the next family picnic. I did use fresh corn cut off the cob and sauteed breifly with salt, pepper, and a dash of garlic powder. A nice addition is some crumbled goat cheese. Feta would probably be good too.

Citrus Swordfish With Citrus Salsa

Reviewed: May 26, 2009
This was so good - summery but with lots of great bold flavors. I baked the fish instead of grilling because we sadly live in an apt with no patio. It does take a long time to chop up all the stuff for the salsa but the preparation is actually very easy and the result is impressive!
