Whoopie Pies

I followed the cake mix direction but used apple sauce instead of oil. I made the filling according to the recipe except used butter. Cooked the flour mixture on medium. Beat the final cream with mixer for about 5 minutes for it to be fluffy. Very good, very delicious. People loved them!

Strawberry Cheesecake Quesadillas

I admit I completely changed this recipe but I'm giving it a 5 because it was a great imitation of a similar crepe recipe I have and now I can cut out making the crepes! Instead of putting the jam and cheese in the quesadilla, I took the cream cheese (softened) and added some sugar and vanilla. I mixed it all up. Then I smeared some of the mixture on one half of the tortilla to about 1/4 or 1/2 an ince from the edge. Then I sealed the edges. Warmed the tortilla on both sides in a hot skillet. I removed the tortilla and then spooned strawberry preserves on top. Eat it with a spoon or fork. It was delicious!

Colleen's Slow Cooker Jambalaya

Marvelous! I took the advice of others and left out the cayenne pepper altogether. Good thing I did. Then I used 1 teaspoon of Cajun seasoning and 1 teaspoon of Old Bay. It was just right! I also decided to brown the chicken and sausage before adding it to the pot. This was so good I think I'll make it for my next party.

Almost No Fat Banana Bread

This is fantastic!!! I followed the recipe except that I used pumpkin puree because I didn't have any banana on hand but really wanted to make a quick bread LOL.. This is really quick to assemble, took me less than 10 min, pretty much the time the oven was preheating. The bread came out amazingly well, pretty and tasty. A keeper! I will try banana next time when I have bananas.

One Bowl Chocolate Cake III

I made cupcakes instead of a cake and baked the cupcakes for about 15-20 minutes. It turned out really good! I followed other reviewers and added more cocoa powder. I also substitute one cup of fresh brew coffee for one cup of water to add more flavor (personal preference). If you like dark chocolate, this is a way to go!

Perfect Cheesecake Everytime

I assumed it good because mine turned a little under-cooked. It made it and baked exactly as directed in the recipe. I don't know where went wrong. But the outer parts of the cake were delicious. I will definitely try it again and hope it goes well next time.

Smashed Cauliflower

Key Lime Cake III

This looked and tasted like Fruit Loops. I made it this past weekend for a friend's party. I rushed to prepare something else to take. It was very moist, though. But thats only b/c of ALL the oil. I would not recommend this cake.

French Bread

Mine turned out very dense. Once cooled, it became crumbly. The taste is okay, not crispy. Instead of spraying water on oven wall, I put boiling water in a jelly roll pan under the bread when it was baking. I was hoping it would add some moist. I probably did but did not work perfectly well. Will try again since it's a really easy way to make French bread. I will try reduce the amount of flour used and spread water on oven wall next time.

i made these for a party (the night before so they would be plenty cool, in accordance to all other reviews on how bad they are warm), and they were quite a hit. i cut them into smallish squares for easier eatablility. i only had big marshmallows, so cut them in half and layered them like that... next time i'll get mini marshmallows b/c it came out a little too chocolatey (but it's not like anyone will complain about too much chocolate!).

Morning Glory Muffins I

Going on others' reviews, I used 1c apple sauce instead of the apple butter/oil, and 1c/ea of w.wheat/ap flour, also a mix of brown sugar and honey to sweeten it (I was worried it wouldn't be sweet enough b/c I used less than a cup total, but boy those raisins go a LONG way in adding a natural sugar punch these babies!). I also used 1 XL egg instead of the egg+whites. I used my stick-blender to grate/puree the carrots, which left a few bigger chunks that were a welcome crunch in the muffin. I used a giant 6-muffin tin and baked them for 10mins longer. I'm going to freeze a mess as a MOIST, healthy/cheap replacement for my on-the-go poptart breakfasts!! Super filling as well! *edit* the 2nd time I made these, I forgot to add any sugar at all, and I didn't miss it! They still came out absolutely yummy thanks to the power of chopped apple and raisin-sweetness.

Zesty Tilapia with Mushrooms

Spanish Rice II

I was skeptical of this recipe at first, but it turned out very well. After living in Mexico and falling in love with the food, it is very difficult to impress me. But this is a keeper, not quite as good as "real" spanish rice, but close enough.
