Mom's Zucchini Bread

Wow this is great! I took another reviewer's advice and substituted some brown sugar for some of the white sugar. I also added a grated apple. It was really fluffy and good!

Curried Coconut Chicken

I was not particularly crazy about this, but I won't blame it on the recipe. While cooking this the aroma reminded me of a Panang curry and so my taste buds were expecting something else. Totally not the fault of the recipe. My bf said it was pretty good therefore explaining my rating. He said he would eat it again if prepared, but I am not sure I want to play whodini with my taste buds again.

Incredibly Cheesy Turkey Meatloaf

Yum! I also took advice from some of the other reviews--I added a half onion, garlic powder, onion powder and paprika to the meat mix. Instead of folding in cheese, I used shredded mozzarella and made a layer of it in the middle and then put more meat mixture on the top. To finish it off I spread on a thin layer of BBQ sauce. This came out so delicious I will def make it again!

Grilled Rock Lobster Tails

This recipe was perfect! A simple basting marinade that does not over power the natural flavor of the seafood. I also used it for shrimp and thought it complimented the shrimp perfectly. Anytime I grill shrimp or lobster I will use this recipe. No need for strong flavors when you are cooking something as delicate as seafood.

Cream Cheese Frosting II

This is one of the best cream cheese frostings I have tasted. The characteristics I like the most are the fluffiness and the fact that it is not sickeningly sweet. I did add an additional teaspoon of vanilla, but other than that I prepared the recipe as written. This is perfect for the person who does not like super sweet frosting and loves cream cheese. The frosting is subtle enough to let the cake be the star but delicious enough to stand alone. Why mess with perfection? I will use this whenever I need a cream cheese frosting!

Best Carrot Cake Ever

I made this cake a day ahead of time because I believe cakes taste better the next day. It was wonderful! I will say that I added 1/4tsp of ginger in addition to the cinnamon and I squeezed a good portion of the juice out of the carrots prior to adding the brown sugar. Once the carrots rested for the hour there was just a little juice that accompanied the carrots and I wasn't afraid to add the entire content of the bowl to the cake. The texture was wonderful and I don't see why I would need to make any additional changes. This was a moist and flavorful cake that would satisfy any carrot cake craving.

Crab Quiche I

Overall I enjoyed this quiche! I believe simple flavors are best especially when you have an ingredient as delicate as crab. It is very easy to overpower crab with aromatics losing the essence of the crab itself. This recipe allows the flavor of the crab to shine through and is delicious. With that being said, I am from the DC/Maryland area and couldn't resist adding a few dashes of old bay. Not enough to over power it but just enough to get a hint of the flavor. I will say that I think that the cheese isn't necessary in this dish, and traditionally crab isn't paired with cheese. The next time I make this I will eliminate the cheese all together as I believe it actually detracted from the dish. I will make this again with said changes. Thanks for the recipe!

Cheesy Creamed Spinach

This was very good! It was creamy, cheesy and garlicky! What more could you want? I only made half a recipe since I did not want leftovers, and now I wish I had made the full amount. I did add a little nutmeg, which is customary in cream sauces and some fresh ground salt and pepper to taste. I will definitely make this again!

Butternut and Acorn Squash Soup

This is a nice, basic recipe for squash soup. It seemed a bit flat to me though, so I added a roasted clove of garlic, some allspice, a bit of chili powder, and a healthy splash of sauvignon blanc. I also took others' suggestions and cut the brown sugar way down. I let it simmer for quite a while and really liked it!

Buttery Corn Bread

This cornbread had a great flavor and texture! I truly appreciated the buttery flavor and as a result did not need to add any butter after it was baked! I accidentally added more milk than the recipe called for(I was enthralled by a television program and wasn't paying attention) and it still turned out perfectly! I opted to make this recipe over another because I didn't have any buttermilk on hand and refused a trip to the store for one ingredient! With that being said, I was very pleased with the outcome and will actually use this as my go to recipe from now on!

Spicy Baked Sweet Potato Fries

Well maybe I did something wrong but I really didn't like how these came out. The spices tasted nice (I did chili powder, garlic powder, a tiny bit of cinnamon, and salt) but they came out chewy. The insides were nice and soft but the outsides and especially the skins were tough and chewy.

World's Best Lasagna

This was a delicious lasagna! It is very similar to a recipe that I make and it is always refreshing to see a recipe that does not rely on the jarred sauces. The next time the only change I will make will be to substitute italian turkey sausage for the pork. It has a lighter flavor and has a less fat. Otherwwise this will be a nice change from my standard recipe that I will use when I am looking for something a little different. Try it you will not be disappointed!

Butternut, Apple and Yogurt Soup

Such a great recipe and it's so easy to make!! Just chop everything and throw them together and let them cook. Love it in a chilly fall day! I didn't have broth so I used water and added salt and pepper. It turned out right. So I assume salt and pepper should not be necessary if one uses the broth. Thanks for the recipe!

The flavor and texture of these biscuits is perfect! I did use butter instead of shortening but that was a personal preference. I was a little disappointed that I did not get the rise I was hoping for but I will blame that on my baking powder. I will definitely make these again in the future as they were quick and easy to prepare. They are perfect served with butter and jam.

Hummus III

I read the reviews and did as they stated: only adding 4TBL of Tahini and 2TBL of Lemon, which worked better to my tastes. Added a 1/2 tsp of cumin and I also kept the drained water to add back to the mix to give it a consistency I liked. However, it was entirely too salty. I suggest decreasing the salt by 1/4 to 1/2 tsp. Great starter recipe though. All the others on the website didn't have the ingredients (or the reviews) this one did.

Crispy Orange Beef

I thought the recipe was pretty good. I don't know if I have an aversion to strong citrus flavors, but I thought the orange flavor was a tad overpowering. I think perhaps to use orange juice instead of the concentrate may help tremendously. The only change I made was to add approx 1/2 tsp red pepper flakes for a hint of heat. Otherwise recipe as written is pretty good but could be great with a few changes.

Perfumed Coconut Cake

Okay..I loved everything about this cake! The icing on the other hand..was not so crazy about! It didn't seem to pair well with the cake and I wish I hadn't added it to the cake after all was said and done. It was too sweet and I wasn't crazy about the texture or taste. I would DEFINITELY make the cake again but I will look for another icing recipe to use in place of the one listed.

Triple Berry Crisp

I happen to not care for berries once they are cooked, so I didn't eat this myself. But everyone else who did, enjoyed it! Now I can only rate the recipe based on the preparation of the actual berries as I used the "crisp" recipe from Ina Garten which I happen to love. It could have been sweeter, but since I served it with Vanilla ice cream, they said it balanced the flavors nicely. Next time I will taste the berries first and adjust the sugar accordingly. I would definitely make this again for those who enjoyed it the first time around.
