One Bowl Brownies

Reviewed: Jul. 4, 2008
Maybe it is because I have gotten into the habit of using unsalted butter, but these brownies needed SALT. I added about 1t the second time around, along with 1t of baking powder. The first time I made them they were good, don't get me wrong, but they needed some salt.

Kentucky Biscuits

Reviewed: May 30, 2008
I love this recipe- it is really the only biscuit recipe I use anymore. DO NOT KNEAD FOR TWO MINUTES- I actually knead them in the bowl until the dough holds together. Then I press into a square pan and cut with a knife into the desired size. These are really great, plain, simple biscuits-- great with anything... we're having them with sausage gravy tonight!

Soft Garlic Breadsticks

Reviewed: Mar. 14, 2008
I really like this recipe- I am having yeast problems, but that is not the recipes fault- The humidity in the air really affects this dough, so watch it! These come out beautifully- an entire batch disappears in a few minutes at my house. I added some minced garlic which punched up the flavor a bit, and added some extra parmesan as they were baking. Awesome!

Beef Stew VI

Reviewed: Mar. 8, 2008
this was a great starter for me. stuck almost to the recipe. i didn't have cubes so i used the granules instead. also ended up using more water as i added more veggies,( love those little devils). used olive oil for a little healthier stew. i also coated the meat in a flour and Montreal steak seasoning mixture before cooking.other wise was a great stew, and as it was raining and extremely windy last night a great warm meal for the night.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Mar. 4, 2008
Bread flour- use bread flour. It makes the cookie chewier. By the way, you can also re-heat these babies in the microwave and they taste like they just came out of the oven all over again- perfect for those of us who have "out of the oven" syndrome. :)

Chocolate Cupcakes

Delicious chocolate cupcakes with a light brownie taste going on. Not overly chewy, but chewy enough. I only used 1/2 cup of cocoa, and added 1 bag of instant vanilla pudding mix. Soooo good.

Fluffy Buttercream Frosting

Reviewed: Feb. 25, 2008
Initially, I thought the frosting was too thick, and I added more water. That was my mistake because it got too thin, and not so fluffy. If you are looking for something more creamy and light, this isn't it. If you like a thick sugar cookie icing, then this will be for you. Overall I gave it 4 stars because the sugar cookie icing effect was great with the brownie cupcake. Just the right mix.

Over the Top Nachos

Reviewed: Feb. 21, 2008
Nachos are quite possibly the most fun food ever- so I can't see how anything would get a bad rating. You can adjust everything according to taste because a recipe is more like a loose guideline than a strict set of rules. At any rate- the taco seasoning on the meat was awesome- I also used pickled jalapenos, cheese, black olives and warm low fat refried beans. I served with sour cream and salsa. My husband deemed them the best nachos he's ever had! Popping the chips into the oven for a couple of minutes before topping works wonders with soggy issues.

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

Reviewed: Feb. 21, 2008
This tasted pretty good-- the only thing is my sour cream seemed to have curdled or something in the liquid- that part was not so tasty. I know I did something wrong, so next time hopefully it will come out better! Maybe I'll add the sour cream at the very end- right before serving. My husband really liked it though!

Authentic, No Shortcuts, Louisiana Red Beans and Rice

Reviewed: Feb. 21, 2008
This is really a pretty good recipe. I adjusted the spices to suit my families taste, and made a couple of substitutions due to location and price. I subbed hot sausage (from Hillshire Farms) for the andouille sausage, and I used ham boullion instead of a ham hock. My only thing is that in the slow cooker the thing would not thicken- so I ended up pouring it into a pan and simmering for about 20 minutes to reduce the liquid. Next time I'll just use less liquid- probably more like 7-8 cups of water. Over all though it is a really tasty recipe that is pretty forgiving when it comes to adjusting here and there for your own taste.

Greek Butter Cookies

Reviewed: Feb. 20, 2008
Very good cookie- almost like a Sweedish Melting Moment or Heirloom Cookie. Definately needs more almond extract like other reviewers said. I dropped the oven temp because my oven cooks hot in the first place, but I went to 350 and still a 10 minute cook time- the cookies do not need to be browned to be cooked through. Over all though, a great cookie- you could really do anythign with them- frost, glaze, sugar sprinkles, etc.

Trinidad Stewed Chicken

Reviewed: Jan. 30, 2008
I have not made this exact recipe yet but...my husband makes this very similar. We don't add ketchup or butter, we use soy & sometimes Worcershire & use sweet onion sliced thin(all added in the beginning for marinade & cooking w/the lime cleaned chicken) For a true Trinidad flavor,I think, cilantro should be used(instead of parsley), but if you can find it chado beni (also known/pronounced bhandania) is like a "stronger" tasting/smelling herb.

Roasted New Red Potatoes

Reviewed: Jan. 27, 2008
Simple and delicious! I put foil on the cookie sheet to make clean-up easier, and it seems the potatoes came out a little overcooked. But they still tasted great. I also added some crushed garlic (which I could of actually added more). I'll definately make these again.

Best Lemonade Ever

Reviewed: Jan. 27, 2008
Love this recipe. It is VERY comparable to the Simply Lemonade we buy in stores, but not as expensive. If you don't mind taking the time to make this, I think it is worth the $4 you save at the store everytime. First time I made this I didn't have lemons, so I used bottled lemon juice and it came out so great. The real lemon is an added bonus if you like the pulpy taste.
