Summer Corn Salad

This was a great summer bbq corn salad. I did take everyone's advice and scaled back on the onion as I didn't want it overpowering the taste. Based on my guests reviews of the salad, that was a good decision to do. I also added a little bit more olive oil than what the recipe called for as well. Delicious, fresh, and crisp. Great if you are looking for a cold veggie salad to serve this summer. This will become a staple at my bbqs from now on!

Lesley's Valentine Brownies with Raspberry Couli

This is a very good couli; I added some sugar to make it a bit more sweet (I used it for a Vanilla Bavarian). To make it more presentable, I strained the hot berries in a sieve prior to adding the corn starch paste. This took out all the little raspberry seeds and made the sauce velvety smooth; just right for a very elegant dessert.

Matthew's Bearnaise Sauce

A super easy recipe with an incredibly beautiful result! Follow the recipe exactly and you'll have no problem recognizing the various cooking points of this sauce. I added a bit of fresh lemon juice to complement Steak Oscar - my clients' loved every drop of this luscious sauce!

Classic Peanut Butter Cookies

WOW!!!! I lowered the oven temp to 350, used bread flour instead of all purpose, added 1.5 t of vanilla... But really, those were the only changes. I baked them for about 15 minutes (lower oven temp), and made HUGE HUGE cookies. Literally, I made 24 cookies-- about 3 inches across. They are amazing!!

Breaded Brussels Sprouts

I love this recipe! I am a huge fan of brussel sprouts and this was a delicious twist. I ran out of time so I didn't get to broil them for more than a couple minutes, but they were still amazing!

Jay's Jerk Chicken

Very tasty and not too spicy! We only had half a white onion left and no green onions, but we don't really like onions anyway and it still tasted amazing. Not only was it fun to mix up, it was really easy! We will definitely be making this one again!

Baked Pork Chops I

LOVED it!! We had 1/2 inch thick chops, so I took the advice of a review to bake them 20/20 mins and they were tender and juicy. I also added sauteed mushrooms on top. Someone else suggested the sauce wasn't enough, but it was perfect for us!

The best applesauce I have ever had. Period. And my family loved it! I used a couple different kinds of apples (not sure which they were, I'm not too good with apples) and I'm going to make it again with some other varieties, just to see if it changes the flavor. Best applesauce ever!...and good for those of us on a budget!

Asparagus Parmesan

Absolutely amazing! I haven't had asparagus in a long, long time, because last time I had it I thought it was terrible. I've been daring recently and decided to try some new veggie recipes in an attempt to lose some college weight. This was amazing! The "veggie" flavor wasn't too strong for me and I ate way more than I thought I would. My family loved it too! We will definitely try this one again!

Zucchini in Sour Cream Sauce

This was excellent! I have never had zucchini before I ate this (I actually cooked two zucchini recipes in one night, just to try it) and I found out I really like it! Unfortunately I seriously overcooked this recipe and the zucchini was more than a little mushy. Despite that, the flavor was amazing and I will definitely cook it again, I will just try to be a little less busy next time!

Parmesan Zucchini Spears

These were delicious! I have never had zucchini before and, in an attempt to start eating healthier, I am trying some new veggies. Instead of lemon peel, I just threw in a dash of lemon juice. We also put these on the grill for a few minutes, until they had some nice grill marks. The light "green" flavor and "grill" taste were a great combination!

Favorite Barbecue Chicken

This recipe tasted pretty good. We grilled them and instead of taking them back to the skillet, we just basted them several times while on the grill. I'm just afraid the recipe reminded us too much of Arby's sauce. We are going to try it again.

Adrienne's Cucumber Salad

I love this recipe! I have been making a recipe almost identical to it for several years now. Instead of white vinegar, I used apple cider vinegar. I think it has more flavor and is sweeter. I have never added dill to this recipe before and next time I will add about half the amount. I love dill, but it was definitely overpowering.

No Bake Bumpy Peanut Butter Nuggets

I love these! They were delicious! My dad, who is diabetic, also loves them as a late night snack! I used honey instead of the apple juice, as was suggested by several people, which adds a ton of sweet flavor. I also didn't have any wheat germ and I didn't really want to buy some when this was the only recipe that I have that calls for it, so I used super chunky peanut butter instead. I think it worked really well, it tasted wonderful and the nuggets held together really well.

Spiced Balsamic Vinaigrette
