Apricot Chicken III

Mom's Zucchini Bread

I'm surprised this has such a good rating because no one follows the recipe! It calls for SO much sugar! I used 1/2 cup white and 1/2 cup brown and it was plenty sweet. I also only used 1/3 cup oil and added 2/3 cup applesauce. THEN it was perfect!!

Swedish Meatballs I

I made this for a friend who was visiting. His mom always used to make Swedish Meatballs with mashed potatoes, so I agreed to give it a shot. I used Italian bread crumbs instead of the cream of wheat and I didn't add any onion. I also doubled the recipe, because we were having several other people over. I don't think the recipe doubled well, the sauce was a little too runny and the meatballs took about 10 extra minutes to cook. Despite all that, we still really enjoyed these. They were very tasty and the sauce was yummy. Went well with both mashed potatoes and noodles!

Onion-Roasted Potatoes

Nanny's Spaghetti Sauce

Wow! One of the best spaghetti sauces I have ever tried! I did make a couple changes... I browned one pound of ground beef with the garlic and added a little dried minced onion, dried basil, and a bay leaf. Absolutely delicious!!!!!

This is one of my boyfriend's favorite chicken recipes. I usually add a little extra steak sauce and a dash or two of worcestershire sauce. I also leave some extra sauce on the side for him to use for dipping, too!

Summer Corn Salad

This was a great summer bbq corn salad. I did take everyone's advice and scaled back on the onion as I didn't want it overpowering the taste. Based on my guests reviews of the salad, that was a good decision to do. I also added a little bit more olive oil than what the recipe called for as well. Delicious, fresh, and crisp. Great if you are looking for a cold veggie salad to serve this summer. This will become a staple at my bbqs from now on!

Lesley's Valentine Brownies with Raspberry Couli

This is a very good couli; I added some sugar to make it a bit more sweet (I used it for a Vanilla Bavarian). To make it more presentable, I strained the hot berries in a sieve prior to adding the corn starch paste. This took out all the little raspberry seeds and made the sauce velvety smooth; just right for a very elegant dessert.

A super easy recipe with an incredibly beautiful result! Follow the recipe exactly and you'll have no problem recognizing the various cooking points of this sauce. I added a bit of fresh lemon juice to complement Steak Oscar - my clients' loved every drop of this luscious sauce!

Classic Peanut Butter Cookies

WOW!!!! I lowered the oven temp to 350, used bread flour instead of all purpose, added 1.5 t of vanilla... But really, those were the only changes. I baked them for about 15 minutes (lower oven temp), and made HUGE HUGE cookies. Literally, I made 24 cookies-- about 3 inches across. They are amazing!!
