About me:
I'm a stay at home mom to 2 young children ages 3 & 4. My husband works alot and travels alot so it makes when he comes home very special and I like to make yummy dinners when I can. I love trying new recipes, though I am a picky eater. So when I'm looking for new recipes to try it will never have any weird ingredients (what I consider weird) When I first became a stay at home mom 4 years ago, my cooking skills were very basic... and I was still getting used to having the whole 'run the household' thing.. so we did take out alot. Since then I've come a long way. I love cooking, baking, playing w/ my kids... everything that comes w/having the opportunity to stay home w/ my kids and help them grown & learn. As far as cleaning goes... we have someone else come do that! haha.

BLT Pasta Salad

I made this over Labor Day weekend and will make it again. I used red onion and added chopped celery and green pepper to give it some color. I also added chopped cucumber with the seeds removed. I used fresh tomatoes with the seeds removed too. I also added celery salt,dried basil and parsley. I followed another suggestion and used Zesty Italian dressing and a bit of mayo with the ranch dressing. This made it real creamy. It turned out wonderful and my husband even ate 2 big bowls. 2 days later it is still creamy, not dry at all, and makes a great lunch. Thanks for sharing your recipe.

Vegetable Swiss Chicken

This recipe had pretty good flavor. But the consistency wasn't that great. It was very soupy. Also the Swiss kind of clumped together after it cooled a bit. Might try this again.. but with some changes... less milk and maybe some noodles like the other reviewer suggested.

Artichoke & Spinach Dip Restaurant Style

I thought this was excellent. I'm sure it's just as good if you do as the recipes suggests... but in our case I did 3 garlic cloves instead of 4... I think next time I'll go w/ all 4. And I also used half a package of chopped spinach, and it was plenty. But that all depends on your preference.Thank you for sharing this recipe, will definitely be using it again!
