Stove Top Tamale Pie

When my kids have seconds & even THIRDS of something it's definetly a winner!! I made it almost exactly the same except I put it together in a casserole dish & baked it in the oven instead of the stove top. Wonderful!!

Conch Fritters

I lived in the US Virgin Islands for 6yrs. I would have to say after eating conch fritters for at least that long, that these are just as good, if not better.

Berry Trifle

I made this for my office pot luck and it was a huge hit! I couldn't find praline liqueur, so I used hazelnut syrup instead and it was delicious!

Broccoli Cheese Soup

This is the best broccoli and cheese soup recipe I have found yet! I added minced garlic (about 1 T) and about 2 t. of chives to give it a savory undertone. Very good!

Taco Soup II

Zucchini Mediterranean Style

I thought this was alright, but certainly not great. By itself it was way too bland. I even added a ton of extra garlic as well as crushed red pepper, but it was still bland. I served it with couscous as others suggested, and I don't think it worked well, because everything in the dish is a bit squishy, so the couscous becomes unnoticeable. I think rice would go much better--it's a bit more substantial. Unless chickpeas were substituted for the cannelini beans--then couscous might be ok with it. I served the leftovers the next day over brown rice (would also work well with whole grain macaroni) & topped off with some ground vegetarian "sausage" (Morningstar Farms brand--tastes just like the real thing!!).

Green Bean and Mushroom Medley

I wanted to try this recipe but forgot to buy the mushrooms! I cooked it anyways & added sliced almonds that I cooked in the butter with the onion........so yummy! I received raving reviews from the hubby on this one! It will be even better next time wiht the almonds, and, of course, the mushrooms!

Pork Chops and Scalloped Potatoes

We absolutely LOVED this recipe. There were no leftovers & even the little ones agreed that it was wonderful. I did follow the advice of some of the others. I wanted it done quicker than the recipe called for so I precooked the potatoes by boiling them for about 10 mintutes before placing them in the baking dish. I also used less salt, as suggested & added a little more pepper (my own touch). My favorite, which everyone tends to overlook is the power of paprika! I love paprika on poultry. It gives it great flavor so I used it generously. I only had to cook for about 30 min covered & 15 uncovered and it was scrumptuous! Thanks for the quick & easy recipe!
