Scottish Shortbread I

So also had no eggs on hand and need to fufill a cookie craving so this is the recipe that sounded the best. I took from some other reviews and this is what I did. I halved the recipe as a test batch and it called for 1/4 cup confectioners sugar but I like them a little sweeter so I did a 1/3 cup instead. I creamed the margarine and sugar ( yes I used margarine in all my baking) for a long time as suggested and added a capful of almond extract. Instead of rolling them I made small balls that I flattened to about 1/2 in. thick. Looking back I could have made them flatter because my cooking time ended up being 24 minutes ( my oven is brand new and it seems like everything always takes longer to bake in a new oven). It may not help anyone else to bake them this way but I'll need a reference so I can make them perfect again next time because I'll definitely be making them again!

Cold Oven Popovers

very delicious! Only thing was that they stuck to the muffin liners and they were done at 25 minutes. Made a cinnamon sugar butter spread for them.

Brown Sugar Smokies

Very yummy. Added some spice like nutmeg, cinnamon, cloves, and a little ginger....just eyeballed it. Added extra walnuts and sprinkled a cinnamon/white sugar/brown sugar combination on top before baking for a little bit of a sweet crunchy crust.

you can leave out the light syrup and almond extract, the milk was enough for mine, the finace's family loved it!! i used it to decorate my cookies for christmas and they were devoured! it's a good thing i made everyone their own tin, no one wanted to share!

Fireman's Apple Pie

So I've just taken this pie out of the oven had had my first bites. I love it but I can't say I didn't change it a bit. Based on others reviews I added about a 1/4 cup more sugar and added a dash of nutmeg, dash of cloves, a tsp of vanilla and about a tsp of pumpkin pie spice and another 1/2 tsp of cinnamon. I chopped the apples and added about 6 oz of fresh raspberries. I think its a great success but would probably rather call it a cobbler that a pie since the crust is throughout. Seems like a great recipe thats interchangable with whatever fruits you want.

Rich Chocolate Truffle Pie

I used an almost identical recipe from Taste of Home's "Best of Country Pies." I didn't sift the sugar, since my recipe didn't call for that step. It called for three hours of refrigeration, but my pie got four. It turned out great. It had a very intense chocolate flavor.

Italian Tacos

i thought these were great so flavorful i added some italian seaosnings to give the hamburger a bit of flavor... word of caution... my boyfriend prefers soft taco shells. NEVER USE SOFT TACO SHELLS trying to appease him they just turned out bad. the soft taco shell ruined it.
