African Sweet Potato and Peanut Soup

My husband and I enjoyed this, though my daughter didn't care for it. The soup is rich and exotic, very filling. I doubled the amount of peanut butter and left out the cilantro because I don't like it. Garnished with a wedge of lime instead. I also used canned tomatoes, Rotel...since I didn't have fresh. Great stuff!

Sausage Stuffed Jalapenos

These are a knockout! The whole family scarfed them up during half-time. I used half jalapenos and half banana peppers because that is what the garden gave me! I used hot Italian sausage and I am glad I did, otherwise the banana pepper ones wouldn't have had enough heat. What worked for me was placing the filled peppers on parchment paper on a cookie sheet. 400* for about 15-20 min. Perfection and minimal cleanup. The only thing that would have made any improvement would have been a win by those poor Redskins. Give this recipe a try, you won't be disapointed!

Lit'l Smokies® Mummy Dogs

Oh, these mini-mummies are so good! They were quick and easy to make. I used the 'seamless' crescent roll dough and cut it into strips while my daughter wrapped the lit'l smokies. Wanted to snap a picture but as soon as they hit the table on Halloween night, they were scarfed up by kids and grown-ups alike. LOVE this recipe!

Mushroom Cube Steaks

The only way I have ever prepared cube steaks is 'Chicken Fried'. Wanted something different tonight and gave this recipe a try. HUGE hit with the family, excellent flavor. The only things I did different were to add some chopped green pepper (garden cleanup) with the onions and to deglaze the pan with a bit of red wine after browning the steaks. The steaks came out SO tender..this recipe is a keeper!

Pumpkin Cake III

What a perfect Halloween dessert! I used applesauce to replace half the oil and it was so moist and delicious. The only other thing I did was to add some nutmeg and a pinch of ginger...tasted just like pumpkin pie in a cake form. Frosted with cream cheese frosting...oh and baked it in a bundt pan. Beautiful presentation, thanks!

I have been making these bars for years and they are always a hit! So moist....just delish! I do cut back on the sugar by a generous 1/3 cup and replace half of the oil with unsweetened applesauce. The frosting is so sweet that you don't miss the sugar in the bars.

Applesauce Bars

Delicious! Only change I made was to use an 11x7 baking dish and it was perfect. The recipe doesn't specify, so I used unsweetened applesauce and that was fine. Still plenty sweet. I also added about 1/3 cup cream cheese to the frosting. Half the pan was scarfed up by daughter and friend within a half hour after arriving home from school. This is so easy and can be whipped up in the blink of an eye! Thanks Debbi for this great recipe.

Banana Crumb Muffins

My, oh my....these are exquisite!! I made almost exactly as directed but I only used 1/2 cup of sugar as others have recommended. I also mixed in some chopped pecans because we like a little crunch in our muffins. These came out so tender and moist, just perfect. I was able to fill a full dozen muffin cups and they were all nicely rounded. Very quick and easy but oh so scrumptious!!

Potato Chips

Who would have thought to even TRY making potato chips in the microwave?? I was looking for a recipe to use up the last of my smaller potatoes from the garden and came across this. The menu was meatball subs, fruit salad and this was just perfect to go with!!! The chips came out great and took only 4 to 4 1/2 minutes per batch. I used olive oil and just drizzled some into a pie plate and shook the potato slices in that, and then laid out in a circular pattern on parchment paper as others suggested. No overlapping! I used a mandoline (sp?) and sliced very thin. The occasional thicker slices didn't come out as light and crispy, they were heavier and harder...like the Cape Cod kettle chips...actually hurt my teeth a little! Thanks for sharing this recipe, we loved it!

Travis's Turkey Burgers with a Bite

When my hubby came home from work and I told him I was making turkey burgers I could tell he was skeptical. These turned out great, very juicy and flavorful...I did add an egg to the mix with 2 lbs. turkey. They were a hit with the family, thanks jenllong!

Chicken Spaghetti

This was very good and easy to make. The only thing I did different was to use a red pepper (what was on hand) and saute the veggies in olive oil instead of butter. I mixed the bacon into the spaghetti mixture and did not use bread crumbs or add any butter on the top. We all enjoyed it with a crisp green salad. The leftovers are just as good!

Coconut Cream Cake I

This recipe is WONDERFUL...it's so similar to my mothers 'scratch' recipe. I frequently divide the prepared batter in half for two (2) 8x8 square cakes and everything works out beautifully. I encourage you to try this recipe.

Slow Cooker Swiss Steak

I made this exactly as directed except I used the basil, oregano seasoned tomatoes. We all enjoyed this, and it made the house smell so good! The only thing is that the sauce was very thin, next time I will thicken it up. I served it with mashed potatoes, spooning the sauce and vegetables over.

This is SO delicious, a big hit with the family. I made it exactly as directed with the addition of 6 slices cooked and crumbled bacon. The only other thing I did was to leave the potatoes somewhat chunky because we like our mashed potatoes that way. These are great reheated too.

Oatmeal Cranberry White Chocolate Chunk Cookies

These are good, not too sweet and I like that. Great with a cup of coffee in the morning so we called them "breakfast cookies". Interesting note, this is the exact recipe that is on the back of the Craisins package. I agree that it needs vanilla, and I added chopped walnuts as well. Rounded teaspoons is too small for these cookies, rounded tablespoons worked much better.

Sugar Cookie Icing

So easy and it tastes as good as it looks. This dries to a beautiful glossy finish and is fool-proof! Used this on Valentine cookies and again on shamrock cookies yesterday. The shamrocks went to a bake sale today and many comments were made about the gorgeous icing. Just make the recipe as directed and then it doesn't seem to matter how much more confectioner's sugar or milk you add to get the consistency you like, it still turns out lovely. I used 1/2 tsp. vanilla instead of the almond extract. Thanks for posting the perfect cookie icing!

Chinese Noodle Pancakes with Asparagus

I would give this five stars but I thought the sauce lacked a bit of flavor. During the last step I stirred in a couple of tablespoons of black bean garlic sauce...just what it needed! These were fun to make too. I served a broccoli slaw Asian style along with the pancakes.
