About me:
I have been cooking since my mom gave me the Betty Crocker Boys and Girls cookbook when I was 7 and I used to read it cover to cover. My own young daughter is now enjoying the same book...quite dog-eared now! I love having her cook with me in the kitchen. I am happily married, entering my 29th year as an RN, and I work part-time at a local hospital. Oh... I love my dogs, my horse and..... my chickens (they bless me with plenty of fresh eggs every day)!!

Chicken Spaghetti

This was very good and easy to make. The only thing I did different was to use a red pepper (what was on hand) and saute the veggies in olive oil instead of butter. I mixed the bacon into the spaghetti mixture and did not use bread crumbs or add any butter on the top. We all enjoyed it with a crisp green salad. The leftovers are just as good!

Coconut Cream Cake I

This recipe is WONDERFUL...it's so similar to my mothers 'scratch' recipe. I frequently divide the prepared batter in half for two (2) 8x8 square cakes and everything works out beautifully. I encourage you to try this recipe.

Best Guacamole

Doesn't get any easier than this! I added some minced fresh garlic and had to use the juice of one small lime-no lemon on hand-and it was so good and fresh. Thanks!
